Reduce smoke-taint risk by managing avoidable exposure before a planned burn, documenting wildfire exposure, sampling grapes representatively, and separating suspect fruit from clean lots. Laboratory results are useful, but a grape test alone cannot reliably predict how a finished wine will taste; combine analysis with a small-lot fermentation and sensory assessment before committing an entire harvest.

What smoke taint is and why vineyard conditions matter

Smoke taint is the smoky, burnt, bacon-like, medicinal or ash character that can develop in grapes and wine after exposure to wildfire or prescribed-fire smoke. Smoke contains volatile phenols, including guaiacol and 4-methylguaiacol. Grapes can take up these compounds and convert some into bound forms. Free compounds can affect aroma and flavor directly, while bound forms may be released later during fermentation, storage or tasting.

Risk depends on more than whether a fire is nearby. Oregon State University (OSU) Extension identifies smoke duration, concentration, proximity, fuel source, smoke composition and the growth stage of the vines as important variables. Wind and atmospheric stability can carry smoke beyond the area immediately adjacent to a fire, so distance alone is not a reliable safety rule.

OSU warns that as little as one hour of dense smoke exposure near or after veraison can negatively affect a crop. This is a conditional risk observation, not a universal threshold: a short exposure in one vineyard may produce a different result from a longer or less concentrated exposure in another.

Assess exposure risk by timing, density and duration

Risk factor What to document Why it changes decisions
Timing Vine growth stage, especially whether exposure occurred near or after veraison Berries become susceptible to smoke-derived compounds as they develop; the same smoke event can have different consequences at another stage.
Duration Start and end time of visible or dense smoke over each block A brief, dispersed event is not equivalent to prolonged dense smoke.
Concentration Whether smoke was dense, light, intermittent or settled overnight Stagnant conditions can extend contact time and increase concern.
Proximity and wind Fire location, prevailing wind direction and changes during the event Air movement can transport smoke well beyond the fire perimeter.
Fuel and composition Forest, grassland, brush or mixed fuels, when known Different fuels produce different mixtures of smoke compounds.

Keep these observations with block maps, spray and irrigation records, weather data and harvest notes. They provide context for laboratory results and help explain why two varieties or blocks may not respond alike.

Reduce exposure before a planned burn

Growers have the most control when a prescribed burn is being scheduled. OSU’s prescribed-burn guidance treats vineyards as smoke-sensitive resources and recommends coordinating with fire planners rather than relying on a fixed distance from the burn.

  1. Share vineyard maps and sensitive dates. Give burn planners the locations of producing blocks and identify periods when grapes are near or after veraison.
  2. Select a dispersal window. Plan for weather that carries smoke away from vineyards. Avoid forecasts indicating stagnant air or overnight settling over the vines.
  3. Minimize the time smoke remains over the canopy. A burn that produces a short, well-dispersed plume presents a different exposure scenario from one that smolders under an inversion.
  4. Prefer spring windows when feasible. OSU lists spring burning as a way to avoid exposing ripening fruit later in the season.
  5. Delay a necessary fall burn until after harvest when practical. This does not remove every environmental constraint, but it can prevent direct exposure of marketable grapes.
  6. Confirm the plan shortly before ignition. Wind and stability can change; reassess the forecast and cancel or postpone if smoke is likely to settle toward the vineyard.

These measures apply to planned burns. Wildfire smoke cannot usually be scheduled around vineyard operations, so the response shifts to tracking the event, protecting lot identity and preparing a defensible sampling plan. Ordinary canopy or irrigation practices cannot guarantee that wildfire smoke will be kept out of berries.

Prepare a response plan for wildfire smoke

Assign one person to maintain an exposure log for each block. Record the date, approximate start and stop times, visible density, wind direction, nearby fire activity and whether smoke lingered overnight. Photographing haze over the blocks and saving local weather observations can help establish differences between locations.

Map blocks separately when varieties, elevations or exposure differ. Do not combine fruit from a heavily exposed block with fruit from a block that remained clear simply to simplify harvest logistics. Lot separation preserves the option to make different processing decisions and gives the laboratory a meaningful sample.

  • Mark blocks believed to have received the heaviest smoke.
  • List varieties separately; varieties can produce different analytical and sensory results under similar conditions.
  • Set a decision date for sampling, harvest and winery capacity.
  • Ask prospective laboratories about current turnaround, sample preparation and chain-of-custody requirements.
  • Check crop-insurance rules before collecting if a claim may be involved.

Sample suspected grapes representatively

Sampling errors can make a useful test misleading. OSU advises prioritizing blocks with the greatest apparent exposure, collecting clusters throughout each block and combining them into a representative sample. Keep varieties and materially different blocks separate.

  1. Call the laboratory before picking. Confirm the required amount of fruit, container type, shipping temperature, labeling and preparation method. Requirements can differ among laboratories.
  2. Define the sampling area. Use a block map and note rows, edges, low spots and any area with visibly different smoke conditions.
  3. Collect across the block. Take clusters from multiple rows and positions rather than selecting only the most damaged-looking fruit or only fruit near a road or edge.
  4. Keep samples identifiable. Label variety, block, date, collector and exposure notes. Never pool different varieties into one laboratory sample.
  5. Ship promptly under the laboratory’s instructions. Delays or incorrect storage can compromise the sample and may invalidate an insurance protocol.

For crop-insurance claims, the policy or adjuster may specify collection methods, approved laboratories or documentation. Follow those requirements even if they differ from a winery’s usual quality-control procedure.

Use grape analysis and microfermentation together

Laboratory testing can measure smoke markers, but grape-only analysis does not reliably predict the sensory properties of finished wine in every situation. OSU recommends pairing laboratory analysis with a micro- or nano-fermentation of exposed grapes and evaluating the resulting wine.

Assessment What it tells you Limitation
Grape laboratory analysis Measured concentrations of selected smoke-related compounds in the submitted fruit Does not fully model fermentation, extraction, bound compounds or individual sensory sensitivity.
Small-lot fermentation How the particular grapes express aroma and flavor after a controlled winemaking process Results depend on the mini-lot protocol and tasting panel; a small batch is not identical to commercial-scale production.
Combined evidence Analytical context plus an observed wine character for the specific block and variety Still requires a production decision; no method guarantees an absence of smoke character.

Use appropriate controls when tasting microferments, such as a comparable sample from an unexposed block when available. Sensory assessment is subjective, and people differ in their ability to detect smoky notes. Treat a panel result as decision support rather than an infallible pass-or-fail judgment.

OSU identifies the OSU Smoke Testing Service, ETS Laboratories, IEH Laboratories and Consulting Group, and Supra R&D as testing options. Availability and turnaround can change during severe wildfire seasons, so confirm current services, prices, sample requirements and timing directly with the laboratory.

Interpret marker results in context

There is no universal smoke-taint pass/fail number for grapes or wine. OSU reports that the USDA Risk Management Agency has not established specific thresholds for determining smoke damage, other than requiring results that support elevated guaiacol and 4-methylguaiacol for relevant determinations.

Guaiacol, 4-methylguaiacol and other smoke markers can occur naturally. A positive measurement does not automatically establish a sensory defect, especially without a baseline for the same variety, vineyard or wine style. Compare results with appropriate historical or unexposed samples when possible, and ask the laboratory how its method and reporting limits should be interpreted.

Use the result for a defined decision: whether to harvest a block separately, run a microferment, negotiate with a buyer, document an insurance claim or alter a production plan. Do not publish or apply one marker value as a universal cutoff for every region and vintage.

Harvest and winery choices that limit extraction

Once fruit is suspected of exposure, processing choices can reduce the transfer or expression of smoke-derived compounds. They cannot promise complete remediation, so keep suspect lots identifiable from vineyard through bottling.

Choice How to apply it Trade-off or qualification
Separate suspect lots Harvest, transport and ferment exposed blocks apart from clean fruit. Requires additional tanks, labor and record-keeping, but preserves flexibility.
Exclude leaves and non-grape material Sort carefully and keep foliage and other debris out of the fermenter. Sorting adds labor; it does not remove compounds already inside berries.
Reduce skin contact Shorten maceration and consider rosé or white-style processing for affected red grapes. Lower extraction can change color, tannin and style, and does not guarantee a neutral wine.
Keep fruit cool Use rapid, temperature-controlled handling from harvest to crush. Cooling requires equipment and scheduling; follow normal fruit-quality and sanitation controls.
Hand harvest where appropriate Use selective picking to remove damaged clusters and non-grape material. Labor cost and speed may limit feasibility on large blocks.
Separate press fractions Keep early, free-run and harder-pressed fractions distinct for later evaluation. Creates more lots to test and manage but can prevent the most extractive fraction from defining the blend.

Washing berries is not an effective solution for compounds that have entered the skins and pulp. Avoid blending a suspect lot into a larger clean lot before its sensory and analytical behavior is understood.

Evaluate suspect fruit with a controlled small lot

A microfermentation should represent the intended commercial process closely enough to inform a decision. Use fruit from the identified block, document the variety and exposure history, and keep the lot separate. Compare the wine’s aroma and flavor with a control when one is available. Record descriptors such as smoky, burnt, bacon-like, medicinal or ash-like, along with panel agreement and intensity.

Do not infer that a favorable grape result makes a commercial batch risk-free, or that one sensitive taster’s objection proves every bottle will be unacceptable. Use the combined laboratory, fermentation and sensory evidence to choose among separate production, lower-skin-contact processing, delayed harvest where agronomically sound, or non-wine disposition.

Options for wine that is already made

For wine showing smoke character, OSU notes that reverse osmosis and spinning-cone treatments may reduce concentrations of free smoke compounds. Bound compounds can change over time, and smoky characteristics may reappear. Any treatment should therefore begin with a small lot rather than the entire tank.

  1. Remove a representative trial volume and document its original sensory profile.
  2. Test the proposed treatment on that volume under the provider’s operating specifications.
  3. Evaluate aroma, palate, balance, color and other quality attributes after treatment.
  4. Hold treated and untreated controls long enough to observe whether smoke character returns.
  5. Scale up only if the sensory and commercial result justifies the cost and wine-quality changes.

Why preventive coatings are not yet dependable

OSU has reported field research on spray-on coatings made from plant-based fibers and chitosan, intended to reduce smoke uptake. Some measured markers fell slightly under particular exposure conditions, but results varied. Natural variation in smoke intensity and grape response, along with inconsistent coverage, made firm conclusions difficult. Researchers called for more work on coverage and more consistent exposure conditions.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Do not treat a commercial coating or an improvised spray as established protection. A coating would need reliable coverage, documented field performance, compatibility with vineyard regulations and no unacceptable effects on fruit or wine before it could be considered a dependable preventive tool.

Common mistakes and better decisions

  • Using distance as the only risk measure: track smoke movement and density because atmospheric conditions can carry smoke beyond nearby areas.
  • Testing one convenient cluster: sample throughout the block so the result represents the lot you may actually process.
  • Pooling varieties: keep varieties separate because responses can differ under the same event.
  • Relying on one marker number: interpret guaiacol and 4-methylguaiacol with baselines, method details and sensory evidence.
  • Making a full commercial batch before tasting: use a micro- or nano-fermentation first.
  • Mixing exposed and clean fruit: preserve lot separation until evidence supports a blend.
  • Assuming washing solves the problem: internalized compounds are not removed by rinsing the berry surface.
  • Promising that treatment eliminates smoke: extraction controls and post-wine treatments can reduce expression, while bound compounds and later sensory changes remain possible.

A practical decision sequence

  1. Document when, where and how densely smoke affected each block.
  2. Rank blocks by likely exposure and keep varieties separate.
  3. Confirm laboratory and insurance sampling rules before collecting.
  4. Submit representative grape samples and arrange a small-lot fermentation.
  5. Interpret laboratory markers alongside controls and sensory results.
  6. Harvest and process suspect fruit separately, using lower-extraction choices where appropriate.
  7. For finished wine, trial any reverse-osmosis or spinning-cone treatment on a small lot and monitor for return of smoke character.
