Yes, a tomato can ripen after you pick it—but only if it has reached the mature-green stage. A full-sized, firm tomato with developed seeds and gel can usually finish changing color indoors. A small, underdeveloped green tomato may stay hard, turn poorly colored, or rot instead of developing normal flavor.
Ripening is driven by natural ethylene, a plant hormone. Keep mature green tomatoes at room temperature, out of direct sun, and inspect them often. A ripe tomato placed nearby can speed the process. Temperature, harvest maturity, and handling matter far more than light.
What happens when a tomato ripens?
Ripening is a coordinated change in color, firmness, aroma, texture, and flavor. As a tomato progresses from green to ripe, chlorophyll breaks down, red or orange pigments become visible, the flesh softens, and aroma compounds develop. Ethylene, a naturally occurring plant hormone, helps trigger and coordinate these changes.

The UC Davis Postharvest Research and Extension Center identifies tomatoes as sensitive to external ethylene: exposing a sufficiently mature green fruit to ethylene can initiate ripening. Ripening fruit also releases ethylene, so one ripe tomato can influence nearby mature green tomatoes.

Ethylene alone cannot make an immature tomato behave like a mature one. The fruit must first complete enough internal development while attached to the plant. That is why two tomatoes picked on the same day can have very different results indoors.
Harvest maturity determines whether off-vine ripening works
Mature green versus immature green
A mature green tomato is full-sized for its variety and firm, but its skin is still mostly green. Commercial definitions also consider internal development: the seeds should be fully developed and the surrounding gel should have formed. Home gardeners usually cannot inspect those internal standards without cutting the fruit, so size, firmness, and the fruit’s position in its normal development are practical clues.
An immature green tomato is noticeably undersized, very hard, or harvested soon after fruit set. Picking it early does not reliably create a normal ripe tomato. It may remain green, become pale or yellowish rather than richly colored, lose quality, or decay before ripening.

1Scan for outdated or missing drivers - takes under a minute2Clear out junk files and repair common Windows errors3Fix the driver behind crashes, sound loss and screen glitchesUse the breaker stage when possible
The breaker stage is when the first visible color change appears, often as a faint blush at the blossom end. Fruit at this stage has already begun ripening and is generally dependable off the vine. The University of Florida IFAS explains that tomatoes harvested at breaker or later do not need commercial ethylene treatment because ripening has started.
Pick mature green or breaker-stage tomatoes when frost, heavy rain, pests, cracking, or other conditions make leaving them outdoors risky. Do not pick every small green fruit simply because the season is ending; maturity is the deciding factor.

On-vine and off-vine ripening compared
| Factor | Ripening on the plant | Ripening after harvest |
|---|---|---|
| Maturity | The attached fruit continues developing while the plant supplies water and nutrients. | The fruit must already be sufficiently mature for dependable ripening. |
| Ethylene | The fruit naturally produces ethylene as ripening begins. | The fruit continues producing ethylene; a nearby ripe tomato can add more to the surrounding air. |
| Temperature | Outdoor temperatures can swing widely, affecting color and texture. | Room-temperature conditions are easier to control, while commercial facilities use managed temperature and humidity. |
| Exposure | Fruit remains exposed to weather, insects, birds, and plant disease. | You can sort, inspect, and remove damaged fruit, but bruising or decay can spread in storage. |
These differences do not justify a universal claim that every vine-ripened tomato tastes better than every indoor-ripened tomato. Cultivar, growing conditions, harvest maturity, and storage handling all affect flavor, and the cited extension guidance does not establish a controlled, universal taste advantage for either method.
How to ripen picked tomatoes at home
- Sort by maturity. Separate full-sized, firm green tomatoes and fruit showing a blush from small, damaged, cracked, or diseased fruit. Do not store decaying fruit with healthy tomatoes.
- Choose a moderate location. Put the tomatoes in a clean, dry area at ordinary room temperature, away from direct sunlight. A shallow box, tray, or paper bag prevents heavy fruit from being crushed.
- Arrange them with minimal contact. Keep fruit from touching when possible, or place a layer of paper between them. This limits pressure bruising and makes inspection easier.
- Use a ripe tomato to accelerate the process. Place one ripe tomato near mature green fruit in a loosely closed paper bag or box. The ripe fruit releases ethylene. Do not seal wet fruit in an airtight container, because trapped moisture encourages decay.
- Inspect frequently. Check every day or two. Remove any tomato with leaking juice, fuzzy mold, a spreading soft spot, or a sour odor. A single decaying fruit can contaminate nearby fruit.
- Sort by color as ripening progresses. Move fully colored tomatoes away from green ones if you want to slow the remaining fruit. Keeping ripe and green fruit together generally speeds the change in the green fruit.
- Use or preserve fruit at the desired stage. Ripening speed varies with cultivar, maturity, and temperature. Nebraska Extension estimates about two weeks for mature green tomatoes at 65–70°F, but that is an approximate extension time, not a guarantee.
Temperature, humidity, and air circulation
Temperature controls the rate and quality of ripening. Household guidance is straightforward: use a comfortable room-temperature location and avoid heat sources, cold rooms, and direct sun.

| Condition | What the published guidance says | How to apply it at home |
|---|---|---|
| About 65–70°F (18–21°C) | UC Davis lists this as a standard commercial ripening range. | A useful target for a cool-to-moderate indoor room; it is not a requirement to measure temperature precisely. |
| About 68°F (20°C) | UC Davis identifies 20°C as optimal for sensory and nutritive quality in postharvest handling. | Normal room temperature near this value is favorable when available. |
| Above 77°F (25°C) | UC Davis warns that ripening above this level can produce yellower, softer fruit with less red color. | Move fruit away from radiators, hot appliances, greenhouses that overheat, and sunny windows. |
| 55–77°F (approximately 13–25°C) | Florida IFAS describes this as a broad range in which tomatoes can ripen, with best red color around 68–72°F. | Expect slower or less intense color at the cooler end and faster softening or more orange color at the warmer end. |
| 90–95% relative humidity with air circulation | NC State Extension gives these as managed ripening conditions. | Do not try to reproduce commercial humidity precisely. Keep household fruit dry on the surface and provide ventilation. |
High heat can accelerate softening without producing the deepest red color. Excessive cold slows color and flavor development and can cause chilling injury. The severity depends on the tomato’s ripeness, the temperature reached, and how long it remains there. Florida IFAS and NC State both warn that sufficiently cold exposure can lead to poor color and flavor; they do not support saying that every brief period of refrigeration permanently ruins every tomato.
Does light make tomatoes ripen?
No. Cornell Cooperative Extension states that light conditions have very little to do with ripening and that tomatoes do not require light to ripen. Color development is controlled mainly by maturity, ethylene, and temperature.
Direct sun can still be harmful after harvest because it heats the fruit. A tomato sitting on a sunny windowsill may become warmer than the surrounding room, increasing the risk of yellowish color, soft texture, and uneven ripening. Use shade or indirect room light instead.

How ethylene changes the speed
To speed ripening
Place a ripe tomato with mature green tomatoes in a paper bag or ventilated box. The ripe tomato continuously releases ethylene, raising exposure around the green fruit. Check the container often so condensation or one spoiled tomato does not create a decay problem.
To slow ripening
Separate ripe tomatoes from green ones and sort the container regularly. Removing ripe fruit reduces the local ethylene level and prevents the soft fruit from pressing against firmer fruit. This is a simple way to stagger harvest use without buying an ethylene kit.
Why commercial treatment is different
Packers may harvest at mature-green or breaker stages and use controlled ethylene rooms to obtain more uniform ripening. Those facilities manage concentration, temperature, humidity, and airflow. Household gardeners do not need to purchase ethylene or recreate a commercial room; ordinary ripe fruit and sensible room-temperature storage are sufficient for the home method.
Why tomatoes fail to ripen indoors
The fruit was picked too early
This is the most important failure mode. If a tomato was not full-sized or had not developed its seeds and gel, it may never develop normal red color and flavor after picking. Pick later in the season at mature green or breaker stage whenever conditions allow.
The location is too hot
Fruit kept above roughly 77°F can soften quickly while developing a yellower or more orange color. Move it to a cooler room away from appliances and strong sunlight.

The location is too cold
Cold slows ripening and may cause chilling injury, especially when exposure is prolonged. Move green tomatoes to a moderate indoor location rather than leaving them in a cold garage or refrigerator.
Fruit is damaged or diseased
Bruises, cracks, leaks, and fungal growth interrupt normal ripening and spread to neighboring fruit. Discard affected tomatoes and clean the storage container before reusing it.
Ripening is simply uneven
Cultivar, fruit size, maturity, and room conditions vary. One tomato may color in a few days while another takes close to the two-week estimate given by Nebraska Extension. Uneven timing is not evidence that ethylene is absent or that light is required.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone.Late-season storage and inspection
Iowa State University Extension’s green-tomato guidance recommends wrapping fruit for storage and inspecting it. Wrapping can reduce contact and protect individual tomatoes, but it does not remove the need for regular checks. Keep only sound fruit, avoid packing it under pressure, and remove any tomato that begins to decay.
