Short answer: Cassava cyanide can be measured in a laboratory with methods such as a picrate-paper assay, but the available evidence does not establish a universal, validated home test that can certify a serving as safe. A published cassava-flour method gives a semiquantitative color result; its more accurate version measures the reacted paper with a spectrophotometer. Testing is not a substitute for using an official preparation method for the particular cassava product.
Cassava contains cyanogenic glycosides, including linamarin. When the root is cut, grated or otherwise disrupted, the enzyme linamarase can help release hydrogen cyanide (HCN). Concentrations vary between varieties, farms, seasons, roots and processed foods, so a result from one sample cannot automatically be applied to another.
What a “cyanide test” for cassava actually measures
People use “cyanide test” to describe several related measurements. A laboratory may report free hydrogen cyanide, total cyanide after chemical treatment, or cyanogenic potential—the amount of cyanide that could be released from cyanogenic glycosides under the method’s conditions. Those are not interchangeable numbers.

The plant’s own enzyme system becomes active when tissue is damaged, which is why grating, pounding and soaking change the hazard. FAO notes that cyanogenic content is affected by cassava variety as well as environmental and cultural conditions. Flour, fresh roots, chips and other products can therefore have different concentrations even when they came from the same region.

Any meaningful result must identify the sample matrix, the measurand, the preparation procedure, the units and the method’s uncertainty. A number without those details cannot tell you whether a meal is safe. The sources reviewed for this article do not establish one test protocol or one pass/fail value that works for fresh roots, flour and every processed cassava food.
Can you test cassava for cyanide at home?
No validated, universal consumer test is established by the cited evidence. A strip that changes color, a bitter taste, or the absence of symptoms is not a reliable safety clearance. Commercially sold “cyanide” papers or generic kits may be intended for water, industrial materials or another sample type; unless the manufacturer and an accredited food laboratory validate the kit for the exact cassava product and report a relevant decision limit, its result is not enough to approve food for eating.
The often-described picrate procedure is an analytical method, not a kitchen experiment. It uses prepared reagents, controlled sample mass and volume, a defined reaction period, and either a calibrated color card or an instrument. Picrate compounds and cyanide-containing vapors also present handling hazards. Do not mix reagents, heat samples or open reaction vessels in a home kitchen.

How the published picrate-paper method works
Egan, Yeoh and Bradbury described a 1998 semiquantitative method for cassava flour. In outline, a measured flour portion is placed in a small vial with water, linamarase and pH 8 phosphate buffer. Picrate paper is suspended in the capped vial overnight. Released HCN reacts with the paper, changing its color from yellow toward brown.
The analyst compares the shade with a standard color card covering 0 to 800 milligrams of HCN equivalents per kilogram of flour. That range describes the calibration materials used by the method; it is not a safe/unsafe boundary. Lighting, paper preparation, reaction time and visual judgment can all affect a color comparison, which is why the result is considered semiquantitative.
For greater precision, the study elutes the reacted paper in water and measures absorbance at 510 nanometres with a spectrophotometer. Instrument readings reduce subjectivity, but they do not remove the need for validated sampling, calibration, quality controls and a method appropriate to the product. A spectrophotometer reading from an improvised setup is not equivalent to a validated laboratory result.
Picrate versus acid hydrolysis
Haque and Bradbury’s 2002 comparison examined picrate-kit and acid-hydrolysis approaches in cyanogenic plants and foods, including cassava. In that reported comparison, the picrate approach was more accurate and reproducible. The acid-hydrolysis approach was described as more difficult and less accurate and reproducible.

This finding applies to the procedures and materials evaluated in that study. It is not a blanket ranking of every modern laboratory method, nor does it prove that any retail picrate kit is suitable for food testing. When requesting analysis, ask the laboratory which standard or validated method it uses and whether its performance has been established for your sample type.
What to provide when sending a sample to a laboratory
Good sampling is as important as the chemical measurement. Cyanogenic content can be uneven within a batch, and moisture changes the apparent concentration in flour or dried products. Use the laboratory’s written sampling instructions rather than improvising.
- Describe the product. State whether it is a whole root, peeled or unpeeled pieces, fresh mash, flour, gari, chips, cooked food or another product. Include variety or cultivar if known.
- Record provenance and timing. Note the supplier or farm, harvest or purchase date, storage conditions and any soaking, fermentation, drying or cooking already performed.
- Ask about sample size and container. The laboratory should specify how much material it needs, how to seal it and whether it must be chilled or frozen. Do not add preservatives unless instructed.
- Define the measurand. Request the laboratory to state whether it reports free cyanide, total cyanide or cyanogenic potential, and whether results are expressed as HCN equivalents.
- Request quality information. Ask for the method reference, detection and quantification limits, measurement uncertainty, replicate or duplicate policy and any quality-control results supplied with the report.
- Get the applicable decision rule. A laboratory can measure a concentration, but an official authority or product standard determines how that concentration should be interpreted for a particular food and jurisdiction.
Comparing the main testing approaches
| Approach | Material supported in the cited evidence | Reported measurement | Result type | Important limitation |
|---|---|---|---|---|
| Picrate paper with visual card | Cassava flour | Cyanogenic potential expressed as HCN equivalents | Semiquantitative color estimate | Requires controlled reagents and a calibration card; the 0–800 mg/kg range is not a safety limit. |
| Picrate paper with spectrophotometer | Cassava flour in the described method | Absorbance at 510 nm converted through calibration | More accurate instrument measurement | Needs validated calibration, sample preparation and quality controls; an improvised meter is not sufficient. |
| Acid hydrolysis | Cyanogenic plants and foods in the 2002 comparison | Hydrolyzed cyanide result according to that procedure | Analytical result | The cited comparison found it more difficult and less accurate and reproducible than picrate for the materials studied. |
| Unvalidated home strip or color test | Not established for cassava food in the cited evidence | Unclear; may target another matrix or cyanide form | Not interpretable as a food-safety clearance | No universal validation or threshold is established. |
How to read a cassava cyanide report
Start with the sample description. “Cassava flour” is not equivalent to “fresh root,” and a result on a cooked portion may reflect processing that does not represent the uncooked batch. Check whether the laboratory reports concentration on a wet-weight or dry-weight basis; changing the basis can materially change the numerical value.

Next, identify the measurand and units. A value in milligrams of HCN equivalents per kilogram is not automatically comparable with a value reported as free cyanide or in another unit. The report should state whether the result is above the method’s limit of quantification and include uncertainty or a confidence statement where available.

Finally, locate the decision standard. The Codex catalogue includes a dedicated code of practice for reducing HCN in cassava and cassava products, but the existence of that code does not create one worldwide consumer cutoff. National rules, product category and intended use can affect the applicable limit. If the report does not name the standard used for its conclusion, ask the laboratory or the relevant food-safety authority before making a disposal or release decision.

Processing can reduce cyanogens through combinations of peeling, size reduction, soaking, fermentation, drying and heating. The effective sequence depends on the product and process. FAO’s technical discussion warns that simply boiling pieces of fresh root is not always reliable and that short soaking can be ineffective in the circumstances described there.
Do not infer that one cooking time, one water volume or one kitchen appliance guarantees safety for every variety and product. Follow an official preparation procedure supplied for the cassava food you have, particularly when the food is prepared for children, pregnant people or anyone with a medical condition. Do not taste raw or inadequately processed cassava to judge whether treatment worked.

Testing and preparation answer different questions. A laboratory test estimates cyanogenic content in the submitted sample; preparation is the control that should make the intended serving suitable for eating. A favorable test result does not correct unsafe handling, and safe processing instructions do not turn an unvalidated home test into a measurement.

Health warning: what to do if poisoning is suspected
WHO lists cassava among important foods containing cyanogenic glycosides. Possible acute cyanide-intoxication signs include rapid respiration, lowered blood pressure, dizziness, headache, abdominal pain or other abdominal symptoms, vomiting, diarrhea, confusion, cyanosis, twitching and convulsions. Severe poisoning can be fatal.
Symptoms are not a test result and should never be used to decide that food is safe. If someone becomes ill after eating cassava, stop serving the food, keep the remaining food and packaging for responders if safe to do so, and seek urgent local medical or poison-control assistance. Do not induce vomiting or attempt a chemical “antidote” at home. Tell clinicians what was eaten, when, how it was processed and how much may have been consumed.
Putting toxicology numbers in context
JECFA’s 2011 evaluation lists an acute reference dose of 0.09 mg per kilogram of body weight and a provisional maximum tolerable daily intake of 20 micrograms per kilogram of body weight per day, both expressed as cyanide equivalents. These are health-based toxicological guidance values for exposure assessment, not a pass/fail cutoff for a home sample or a single serving.
Applying such values requires the cyanide concentration, serving size, body weight, frequency of consumption and assumptions about absorption and uncertainty. A laboratory or public-health professional should perform that assessment when an exposure decision is needed. Multiplying a color-card reading by a guessed serving size is not a substitute for risk assessment.
Quick Recap
A practical decision guide
- You are preparing ordinary cassava for a meal: use the official preparation instructions for that product and region. Do not rely on taste, smell or a generic strip.
- You suspect a batch problem: stop using the batch and contact the local food-safety authority or a qualified food laboratory. Preserve representative samples as instructed.
- You operate a commercial or community processing site: establish a documented sampling plan, validated analytical method, acceptance standard and corrective-action procedure with food-safety professionals.
- You are doing academic or technical work: use the published picrate method only within an appropriately equipped laboratory, with trained personnel, validated reagents and waste controls.
- Someone has symptoms after eating cassava: treat it as a potential poisoning emergency and contact local emergency or poison-control services immediately.
