The most reliable way to tell whether fish is cooked is to check its internal temperature with a food thermometer. Fish is done at 145°F (63°C). Without a thermometer, use the official visual and texture check: the flesh should no longer be translucent and should separate easily with a fork.

Use a thermometer for the clearest answer

A thermometer gives you a measurable result instead of asking you to judge appearance. Insert a food thermometer into the thickest part of the fish, taking care that the probe is in the flesh rather than touching a pan, grill grate, or bone. Wait for the reading to stabilize, then compare it with the published safe minimum for fish.

FoodSafety.gov lists the same minimum temperature for fish whether it is a whole fish or a fillet. Its examples include salmon, tuna, tilapia, pollock, bass, cod, catfish, and trout. The chart is general guidance; it does not provide a different safety temperature for each species, thickness, cooking method, or preferred texture.

The official chart, Cook to a Safe Minimum Internal Temperature, was last reviewed November 21, 2024. It recommends using a food thermometer to check that food has reached a safe minimum internal temperature. Read the guidance at FoodSafety.gov’s safe minimum internal-temperature chart.

How to take the reading

  1. Remove the fish from direct heat only long enough to take the measurement, if necessary.
  2. Place the probe in the thickest section of the portion. For an uneven fillet, check the deepest area rather than the thin edge.
  3. Keep the sensing tip surrounded by fish. Do not let it rest against cookware or a bone, because that can give a misleading result.
  4. Check more than one thick area when pieces differ in size. Use the lowest reading as the conservative check for the batch.
  5. Return the fish to the heat if the reading has not reached the safe minimum, then measure again.

An instant-read food thermometer is useful for this job because it lets you check each portion without relying on a fixed cooking time. No specific brand or model is required; the important feature is a readable internal-temperature measurement.

How to tell fish is done without a thermometer

FoodSafety.gov gives a specific fallback when you cannot measure the temperature: the flesh should be no longer translucent and should separate easily with a fork. Both parts of that check matter. Look at the center of the thickest section, not only the surface, and test the flesh gently with a fork.

What “no longer translucent” means

Raw or undercooked fish can allow light to pass through its flesh, especially in the middle of a thick fillet. As it cooks, the flesh becomes opaque. Open the thickest point carefully and look at the interior; a center that still appears glassy or see-through has not met the chart’s visual description.

What “separates easily with a fork” means

Press a fork lightly into the thickest part and draw it across the grain of the flesh. Cooked fish should split into flakes or sections without force. If it resists, stretches, or remains cohesive and rubbery, it does not yet match the official texture cue.

Why the visual check is a fallback

The visual and fork tests are practical alternatives when a thermometer is unavailable, but they are less precise than a measured temperature. Lighting, fish thickness, cooking method, and the natural appearance of different species can make visual judgment difficult. Do not treat surface color alone as a more reliable test: the official guidance specifies opacity and easy separation, not a particular color for every fish.

Fish types covered by the guidance

The FoodSafety.gov entry applies broadly to fish sold as a whole fish or as a fillet. The chart names salmon, tuna, tilapia, pollock, bass, cod, catfish, and trout as examples. Those examples illustrate the scope of the entry; they are not separate species-by-species temperature rules.

Fish form or example How the official chart treats it What you should check
Whole fish Covered by the general fish entry Measure the thickest flesh, or use the opacity-and-fork test
Fillet Covered by the general fish entry Measure the thickest section, or inspect and flake the center
Salmon, tuna, tilapia, pollock, bass, cod, catfish, or trout Listed as examples under the fish entry Use the same published fish check rather than a species-specific number

The chart does not establish separate targets for thin versus thick pieces, pan-frying versus baking, or a particular doneness preference. Avoid converting the safety guidance into a universal cooking-time rule: the source supplies no fish cooking times, and time changes with the piece and cooking setup.

A practical checking routine for common cooking setups

The cooking appliance changes how quickly a piece heats, but it does not change how you verify doneness. Use the same sequence whether the fish is in a pan, oven, grill, or another setup.

  1. Choose the thickest point. Identify the area most likely to remain undercooked; thin edges can look done first.
  2. Measure or inspect the center. Take a thermometer reading, or open the thickest point and check that it is no longer translucent.
  3. Check the texture. If you are using the no-thermometer method, test whether the flesh separates easily with a fork.
  4. Check again after more cooking. If the measurement or visual test does not meet the official description, continue cooking and repeat the check.
  5. Check separate pieces separately. A thin portion can be ready before a thick portion, so do not assume one reading represents every piece.

Common mistakes and how to avoid them

Judging only the outside

A browned, seared, or opaque surface does not show what is happening in the center. Make the check at the thickest section, where heat takes longest to reach.

Using color as the only rule

Fish species do not all look identical when cooked. The official fallback is not “a certain color”; it is flesh that is no longer translucent and separates easily with a fork. If you can measure temperature, use that objective check instead of guessing from color.

Checking the thinnest part

The thin edge can satisfy the visual test while the center remains translucent. Put the probe, or make the fork test, in the deepest section of the portion.

Relying on a fixed number of minutes

There is no single cooking time in the cited guidance. Thickness, starting temperature, pan or oven behavior, and the arrangement of pieces all affect how quickly fish cooks. A timer can tell you when to check, but it cannot replace the internal-temperature or visual test.

Safety doneness versus preferred texture

The 145°F (63°C) figure is food-safety guidance from the U.S. government chart, not a promise about a particular culinary texture. Some cooks may prefer a different texture, but the cited source does not validate lower temperatures, species-specific alternatives, or a time-and-temperature substitute for fish. If safety is the priority, follow the chart’s fish threshold or its complete visual-and-fork fallback.

Do not infer a separate target from a fish’s name, color, or cooking method. The evidence supports one general fish entry for whole fish and fillets, with the thermometer check preferred and the two-part visual test as the alternative.

Quick decision checklist

  • Have you identified the thickest section of the fish?
  • Can you use a food thermometer to measure the center?
  • If no thermometer is available, is the center no longer translucent?
  • Does the flesh separate easily with a fork?
  • Are you checking each substantially different piece rather than relying on one thin portion?
  • Are you avoiding a fixed cooking-time or surface-color rule?

What to do when the checks disagree

The outside looks done but the center is translucent

Continue cooking and recheck the center. The center is the relevant area for the thermometer reading and for the visual fallback.

The fish flakes but you are uncertain about the temperature

If a thermometer is available, measure the thickest section. The measurable check is clearer than relying on appearance alone.

The reading varies across the portion

Move the probe to the deepest part and avoid contact with cookware or bone. For pieces of different thicknesses, check each piece and use the lowest reading when deciding whether the batch has reached the safe minimum.

The short answer

Check fish with a food thermometer and cook it to 145°F (63°C). If you cannot measure the temperature, use both official visual cues: the flesh should no longer be translucent and should separate easily with a fork. Those checks apply to whole fish and fillets, including the common examples listed by FoodSafety.gov.
