Keep raw potatoes unwashed in a cool, dry, dark place with airflow. For a small amount you expect to use soon, put them in a breathable brown paper bag inside a dark cupboard. Avoid light, damp or airtight storage, ripening fruit, and—if cooking quality matters—the refrigerator: very cold temperatures can make potatoes sweeter and darker when cooked.
Choose a storage place that fits how many potatoes you have

Set up potatoes for everyday storage
- Do not wash them before putting them away. Leave soil on until you are ready to prepare them; excess moisture can encourage spoilage. University of Missouri Extension
- Choose a dark, dry, ventilated spot. A paper bag can help block light while allowing airflow. Do not store potatoes beside ripening fruit: ethylene from the fruit can promote sprouting. Iowa State University Extension
- Check them periodically. Remove potatoes that are deteriorating so you can use or discard them before they affect the rest.
Understand temperature tradeoffs
There is no single ideal temperature for every potato and purpose. For a household supply, the practical aim is a cool location that is not refrigerator-cold. Penn State recommends 40–46°F for cured potatoes, while University of Maine’s household guidance says 45°F is best. Below roughly 38–40°F, cold sweetening becomes a concern; warmer storage tends to bring more sprouting and shriveling. Use these ranges as context, not as a requirement to chill a small store-bought bag.
Potatoes kept in a refrigerator may sprout less, but the cold can turn starch into sugar, which can make them taste sweeter and darken during cooking. Purdue Extension’s guidance is direct: “Do not store potatoes in the refrigerator or anywhere that exposes them to light.” If refrigeration is your only option, be aware of the cooking-quality tradeoff, especially for frying.
For homegrown potatoes, cure them before long-term storage
Curing is a separate process for a freshly harvested crop, not a step needed for an ordinary purchased bag. Penn State Extension recommends curing homegrown potatoes for two to three weeks at 50–60°F and 85–90% humidity in a ventilated area. After curing, its longer-term conditions are 40–46°F and about 90% humidity. Handle damaged potatoes separately and use or discard them promptly rather than storing them with sound potatoes.

How long potatoes may keep
Storage time depends on variety, maturity, condition at harvest, and the consistency of the storage environment. University of Missouri Extension estimates up to two months for potatoes kept cool, dry, dark, and ventilated. Penn State says properly cured, mature, late-season, thick-skinned potatoes can remain in good condition for seven to eight months under suitable conditions. Those figures describe different circumstances; neither is a guarantee for every household potato. Young potatoes generally should be used sooner than thick-skinned storage potatoes.
