Keep Guinness sealed, cool and away from repeated temperature swings until you are ready to serve it. Refrigerate ordinary Guinness Draught cans for at least 24 hours, chill Guinness bottles to 8°C for at least 24 hours, and refrigerate NitroSurge cans at 4–5°C for at least 24 hours. Open and pour immediately into a clean, large glass using the package-specific method; Guinness does not publish a validated storage period for an opened can or bottle.
Why Guinness cans and bottles need different handling
Guinness Draught is designed to develop its characteristic nitrogenated surge and creamy head when served correctly. A can contains a plastic widget holding trapped nitrogen. Guinness Canada explains that opening the can releases pressure and forces nitrogen through the beer, creating the visible surge and head. The widget is part of the package system, not a removable accessory.
That is why storage advice focuses on keeping the package sealed and getting the temperature right before opening. A resealable lid cannot recreate the pressure release from the widget after the can has been opened, and refrigeration cannot restore the original nitrogen release once it has already happened.

At-a-glance storage and serving requirements
| Package | Chilling requirement | Serving equipment | Pouring method |
|---|---|---|---|
| Guinness Draught can | Refrigerate for at least 24 hours before serving | Clean, large glass | Pour the entire can in one smooth action |
| Guinness bottle | Refrigerate at 8°C for at least 24 hours | Clean, large glass | Pour slowly in one continuous pour; keep the bottle from touching the glass |
| Guinness NitroSurge can | Refrigerate at 4–5°C for at least 24 hours | Clean, large glass and the compatible Guinness NitroSurge device | Open the cold can and use the dedicated device according to its instructions |
The ordinary Draught-can guidance specifies the minimum chilling time but does not give a universal serving temperature in the cited home-serving instructions. Follow the temperature printed on your package if it differs from general advice.
How to store sealed Guinness before serving
Keep every package sealed
Leave cans and bottles unopened until you have the glassware, temperature and serving device (if required) ready. The can widget and the package’s internal pressure are needed for the intended nitrogenated pour. Opening a container early and attempting to store it again changes the conditions Guinness designed for serving.
Use a cool, stable location
Store sealed packages away from direct sunlight, radiators, hot cars, ovens and other heat sources. Avoid moving them repeatedly between warm and cold locations. A refrigerator or beverage cooler is the most predictable place to complete the final chill, while a cool cupboard can be used for sealed stock before that step.

Prevent rough handling
Keep cans and bottles upright where practical and avoid shaking, dropping or rolling them immediately before opening. This gives the contents time to settle and makes a controlled pour easier. Do not freeze Guinness: expansion can damage a container, and a partly frozen beer will not pour as intended.
How to chill ordinary Guinness Draught cans
- Check the package. Confirm that the can is sealed, undamaged and within the freshness period stated by Guinness. Find the production date printed on the base.
- Refrigerate for at least 24 hours. Place the can in a refrigerator or beverage cooler long enough to reach a stable cold condition. Do not rely on a brief freezer session as a substitute.
- Prepare the glass first. Use a clean, large glass with enough capacity for the full can and its head. Residue, grease or detergent film can interfere with the pour and head formation.
- Open only when ready to pour. Have the glass on a stable surface before opening. Keep the can intact until this point so the widget and pressure system work together.
- Pour in one smooth action. Guinness US instructs home users to pour the contents of the can into a large glass in one smooth action. Do not stop halfway to save part of the can for later.
- Serve immediately. The original nitrogen release occurs at opening. Drinking promptly gives you the best chance of retaining the intended texture and head.
If a can has been chilled for less than the recommended 24 hours, it may not present as intended even though it feels cold on the outside. Return unopened cans to the refrigerator and allow the full time rather than repeatedly opening test cans.
How to chill and pour Guinness bottles
- Refrigerate at 8°C for at least 24 hours. This is the bottle guidance published by Guinness US. Use a refrigerator that can hold a reasonably steady temperature rather than a warm shelf or rapidly changing storage area.
- Set out a clean, large glass. The glass should accommodate the bottle’s contents and head without forcing an overflow.
- Open when the glass is ready. Keep the bottle cold until the moment of serving. Avoid warming it on a counter while preparing other items.
- Pour slowly in one continuous pour. Guinness instructs users to pour in one go and not let the bottle touch the glass. Hold the bottle just above the rim so the mouth does not contact the glassware.
- Serve the complete pour. Do not plan to reseal an opened bottle for the next day; no validated post-opening storage period is published.
The bottle procedure is deliberately different from the can procedure. Do not use a can widget, NitroSurge device or improvised attachment with a bottle.
How NitroSurge storage differs
NitroSurge cans are made for the dedicated Guinness NitroSurge device. The device is exclusive to specially designed NitroSurge cans, and the manual says to use only the correct cans and no other products.

Temperature and time
Refrigerate NitroSurge cans at 4–5°C for at least 24 hours. This is a stricter, device-specific instruction than the ordinary Draught-can guidance. Do not assume that a can chilled at a different temperature is ready simply because it has been in the refrigerator overnight.
Device and can compatibility
Use the compatible NitroSurge device with a NitroSurge can. Do not substitute an ordinary Draught can, another beer can or a generic aeration tool. The product page describes the device as designed for specially made NitroSurge cans, and the manual explicitly prohibits using other cans or products.
Serving sequence
- Chill the unopened NitroSurge can at 4–5°C for at least 24 hours.
- Set up the compatible device and a clean, large glass before opening.
- Open the cold can and attach or operate the device exactly as its instructions specify.
- Pour and serve without leaving the opened can standing. The device does not create a validated way to preserve an opened can overnight.
Freshness, production dates and how long sealed cans keep
Guinness Canada says the production date printed on the base of a can guarantees quality for up to 10 months after that date. Treat the 10-month figure as the stated freshness period for the canned liquid, not as a promise that every package will taste identical under every storage condition. Keep the can sealed and follow its labeling while it remains in storage.

The cited Guinness guidance does not establish a corresponding validated period for an opened can or bottle. Once opened, immediate serving is the quality-preserving practice.
What “flat” means and what storage can—and cannot—fix
Flat before opening
If an unopened can produces little surge or head, first check whether it received the full 24-hour chill and whether it is the correct product for the serving method. For NitroSurge, verify both the 4–5°C target and the dedicated device. Also check the production date and package condition.
Flat after opening
An opened container has already released its designed nitrogen and pressure. A stopper, plastic wrap or ordinary resealable cap may limit spills, but no official source cited here validates one as a way to retain the original head overnight. Do not promise yourself the same result the next day; pour only the amount you intend to serve.
Recommended Free Tools
Flat because of the glass or pour
A dirty, greasy or detergent-coated glass can affect how the beer presents. An interrupted pour can also change the head compared with the recommended continuous pour. Start with a clean, large glass and follow the package-specific method before assuming the beer itself is defective.

Troubleshooting checklist
- The can is cold but has not been refrigerated for 24 hours: Keep it sealed and complete the full chilling period.
- A NitroSurge can was chilled like an ordinary can: Move it to 4–5°C for at least 24 hours and use only the compatible NitroSurge device and can.
- The bottle was served straight from a warm shelf: Chill it at 8°C for at least 24 hours before opening another bottle.
- The pour was stopped and restarted: The published methods call for one smooth can pour or one continuous bottle pour. Use a fresh package for the next attempt rather than trying to re-create the first pour.
- The bottle touched the glass: Keep the bottle mouth above the rim on the next pour, as Guinness instructs.
- The package is past the stated canned freshness period: Guinness’s 10-month quality statement is measured from the printed production date. Choose a can within that period when possible.
- The package is damaged or has been exposed to severe heat: Do not rely on chilling to reverse unknown storage damage; use an intact package stored under controlled conditions.
Planning Guinness for a gathering
Count backward from serving time. For ordinary Draught cans and bottles, put the sealed packages into the refrigerator at least 24 hours in advance. For NitroSurge, ensure the refrigerator can hold 4–5°C and begin the 24-hour chill at least a day before the event.
Have enough clean, large glasses ready before opening the first package. If you are serving both ordinary cans and NitroSurge cans, keep them identified and use the dedicated device only for the NitroSurge product. Open packages in small batches so each one can be poured and served immediately rather than waiting on a table.
Keep remaining sealed stock refrigerated or in a cool, stable location away from heat. Do not open every package at once merely to save time; the official guidance does not provide an opened-package holding window.

Quick Recap
Common storage mistakes to avoid
- Using the freezer as a shortcut: Rapid chilling is not the published method and risks freezing or damaging the package.
- Assuming all Guinness products share one temperature: Ordinary Draught cans, bottles and NitroSurge cans have different instructions.
- Using the wrong device: NitroSurge equipment is for compatible NitroSurge cans only.
- Opening cans before the glasses are ready: The widget’s nitrogen release occurs at opening, so delay opening until you can pour.
- Saving half a can with a generic cap: No validated official time window shows that an opened Guinness will retain its original head overnight.
- Ignoring the can’s base date: The stated canned freshness period is tied to the printed production date.
- Overgeneralizing a handling specification: The 5–25°C GS1 range applies to one listed can SKU and should not replace package labeling or product-specific serving instructions.
A simple decision guide
- Identify the package. Is it an ordinary Draught can, a bottle or a NitroSurge can?
- Apply the matching chill rule. Ordinary can: at least 24 hours; bottle: 8°C for at least 24 hours; NitroSurge: 4–5°C for at least 24 hours.
- Gather the required equipment. Every format needs a clean, large glass; NitroSurge additionally needs its compatible device.
- Check the date and condition. For cans, read the production date on the base and use Guinness’s up-to-10-month quality guidance.
- Open only at serving time. Pour in the prescribed continuous motion and serve the full opened package.
