Short answer: YouTube does not provide a universal, always-available switch that restores the old desktop layout. What “old layout” can mean

How to tell whether a visible control really worked

A filter works by matching page requests or cosmetic selectors. The design is different everywhere
When the same account shows the change across browsers and sessions, local cleanup is unlikely to provide a supported rollback.
