The reliable way to reheat both foods is to use gentle heat and manage moisture. For mac and cheese, add a small splash of milk or water, cover the dish, and stir as it warms. For pizza, heat the slice in a covered skillet with a little water added away from the crust, then uncover it briefly so the base crisps. Whatever appliance you use, judge food safety by temperature rather than by a fixed number of minutes: reheated leftovers should reach 165°F (74°C) in several spots.

The texture techniques below are practical cooking methods, while the temperature, storage, and handling guidance comes from the USDA Food Safety and Inspection Service and the U.S. Food and Drug Administration.

Start with the safety check

Reheating is complete when the center of the food reaches 165°F (74°C), the target given for ordinary leftovers by both USDA and FDA guidance. That is a temperature target, not a promise that a particular microwave setting or oven time will be safe. Portion size, container shape, starting temperature, appliance power, and how densely the food is packed all change the heating time.

Use an instant-read food thermometer in the thickest or coolest-looking parts. In a microwave, check more than one spot because cold areas can remain even when the surface is steaming. Stirring and rotating help, but they do not replace the temperature check. USDA’s safe-reheating guidance lists the stovetop, oven, and microwave as suitable methods.

  • Cover food during reheating when practical. A microwave-safe lid or vented wrap traps steam and limits moisture loss.
  • Add liquid only as needed. A little milk or water can loosen mac-and-cheese sauce; too much makes it thin or watery.
  • Allow a short standing period after heating, especially in a microwave, then check the temperature again if the center was cool.
  • Never use a slow cooker, steam table, or chafing dish to reheat leftovers, according to the USDA answer.

For an oven, USDA says to set the temperature no lower than 325°F. Cover casseroles to retain moisture, and uncover foods near the end only when you deliberately want a drier or crisper surface.

Set up the portion before turning on the heat

Move leftovers into a container suited to the appliance. Use microwave-safe glass or ceramic for microwave heating, and an oven-safe dish for an oven. Spread a serving into a relatively even layer rather than leaving a tall, compact mound; a thinner, more even portion is easier to stir and check. If you are reheating a large amount, divide it among shallow containers so the food warms more consistently and cools more quickly after serving.

Keep the cover loose or vented in the microwave. You want steam to stay in the food, but pressure must be able to escape. For oven reheating, use a lid or foil that is rated for the appliance. A thermometer should go into the thickest part without touching the container, and several readings are useful when the food is dense or the portion is deep.

How to reheat mac and cheese

Mac and cheese dries because the pasta continues absorbing sauce while the dish cools, and aggressive heat can drive off moisture or scorch the bottom before the center is hot. Gentle heat, a covered container, and frequent stirring address all three problems.

Microwave: fastest for one serving

  1. Put one serving in a microwave-safe bowl. Spread it into an even layer rather than leaving a tall mound.
  2. Add a small splash of milk or water and stir. Start with just enough to loosen the surface; you can add more after heating.
  3. Cover with a microwave-safe lid or vented microwave wrap. Venting prevents pressure buildup while still holding steam.
  4. Heat at moderate power in short intervals. After each interval, stir from the outside toward the center and rotate the bowl if your microwave does not rotate it automatically.
  5. Continue until the center reaches 165°F (74°C). Check several locations because microwaves can leave cold spots.
  6. Let the bowl stand briefly, stir once more, and adjust with another teaspoon or two of liquid only if the sauce still looks tight.

Short intervals are more controllable than one long blast. The outside heats first, so stirring redistributes warmer sauce and cooler pasta. Covering, rotating, adding liquid when needed, and allowing standing time are the moisture-control steps described in USDA’s microwave-oven guidance.

If the bowl is deep, pause to scrape the bottom and sides as well as the center. A shallow layer may need less intervention, while a tightly packed serving can hide a cool core. Do not judge readiness by bubbling or by a hot rim: those signs show that some areas are hot, not that every part has reached 165°F.

Stovetop: best control over sauce consistency

  1. Place the mac and cheese in a heavy saucepan or nonstick skillet.
  2. Stir in a small splash of milk or water before turning on the heat. If the sauce is very thick, add liquid gradually rather than flooding the pan.
  3. Set the burner to low. Stir frequently, scraping the bottom and corners so the sauce does not sit against a hot spot.
  4. As the pasta warms, evaluate the consistency. Add another small splash only when the sauce remains dry or clumps around the noodles.
  5. Heat until the thickest portion reaches 165°F (74°C), then remove the pan from the burner.
  6. Let it sit for a minute and stir. Residual heat will finish evening out the texture without requiring a hotter burner.

High heat is the main stovetop failure mode: the bottom can brown or burn while the center is still cold. Low heat takes longer but lets you change the liquid level in small increments and stop as soon as the food is hot.

Stirring is especially important when reheating more than a single serving. Move food from the edges into the middle, then scrape the base so no layer stays against the hottest metal. If the sauce becomes loose, leave the pan uncovered briefly over low heat while stirring; do not compensate with a sudden high flame.

Oven: practical for a casserole or several portions

  1. Heat the oven to at least 325°F, the minimum reheating setting specified by USDA.
  2. Transfer the mac and cheese to an oven-safe dish if it is not already in one. Stir in a modest amount of milk or water.
  3. Cover the dish tightly with an oven-safe lid or foil to retain moisture.
  4. Heat until the center reaches the safety target. A deep casserole will take longer than a shallow dish, so use the thermometer rather than a preset time.
  5. Stir before serving. If you want a browned top, uncover only after the center is hot and leave it in long enough to color the surface.

The oven is less convenient for a single bowl but heats larger quantities more evenly than repeated microwave cycles. Keeping the dish covered is the important texture decision; an uncovered casserole loses moisture throughout the reheating period.

For a casserole that has been portioned into several dishes, check the coolest-looking or deepest portion first, then confirm another area. If the top browns before the middle is hot, replace the cover and continue heating. Browning is a texture choice and is never a substitute for the 165°F check.

Reheating frozen mac and cheese

USDA says frozen leftovers may be reheated without thawing in an appropriate appliance. Expect the process to take longer, use a cover to limit moisture loss, and verify that the center reaches 165°F (74°C). For a frozen block, use lower heat and pause to stir as soon as the edges soften; otherwise the outside can overcook while the middle remains frozen.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

In a microwave, use a container that allows the block to be turned or broken apart safely as it softens. In an oven, keep the dish covered while the center catches up. Whichever method you choose, take readings in more than one place because a frozen center can remain well below the surface temperature.

How to reheat pizza

Pizza has two separate texture goals: the toppings and cheese should become hot, while the crust should not turn either rubbery or soggy. A covered skillet addresses those goals by using a short burst of steam followed by uncovered dry heat. The sequence below comes from a reader discussion, so treat it as a practical option rather than a tested universal formula.

Covered skillet: crisp bottom, warmed toppings

  1. Place one or a few slices in a dry skillet, with the crust flat against the pan.
  2. Set the pan over medium-low heat. The goal is to warm the base gradually instead of scorching it before the cheese softens.
  3. Add a small splash of water to the pan away from the crust. Do not pour water onto the slice; the water is there to create steam.
  4. Cover the skillet briefly. Steam warms the toppings and cheese while the pan continues heating the underside.
  5. Remove the lid once the toppings are hot, then continue uncovered until the bottom reaches the crispness you want.
  6. Use a thermometer in a thick topping area if you need to verify the 165°F (74°C) leftover-reheating target.

Water amount, lid time, pan material, burner strength, and slice thickness all affect the result. Too much water or too long under the lid can soften the crust; too little steam can leave the cheese cool while the base browns. Because the source is anecdotal reader advice, there is no official pizza-specific time or temperature to substitute for watching the slice and checking its internal temperature.

Keep the water in an open part of the pan, not under the crust. If the slice is already thin or the pan is very hot, use less steam and uncover sooner. If the cheese is slow to soften, lower the burner and cover again briefly rather than increasing the heat sharply.

Oven: useful for several slices

  1. Set the oven to at least 325°F, following USDA’s minimum reheating setting.
  2. Arrange slices in a single layer on a tray or oven-safe pan.
  3. For softer crust and better moisture retention, cover the tray. For a crisper base, leave the pizza uncovered or remove the cover near the end.
  4. Heat until the thickest topping area reaches 165°F (74°C), then serve.

The oven makes sense when you are reheating multiple slices at once. Covering gives a softer result; uncovering late gives the surface a chance to dry and crisp. The choice is a texture preference, not a different safety standard.

A crowded tray heats less predictably than a single layer, so leave space between slices when possible. Check a slice from the center of the tray as well as one near an edge, since location and thickness can produce different temperatures.

Microwave: fastest, but the crust is the compromise

A microwave can heat a slice quickly, but direct microwave heating tends to leave the crust soft. If speed matters more than crispness, cover the slice with a microwave-safe cover, heat in short intervals, rotate it, and check multiple spots for the safety target. A short rest after heating helps the temperature even out. The covered-skillet method is the better choice when a firm base matters.

Do not stack slices in the microwave. A single layer is easier to rotate and inspect, and it reduces the chance that the center of the stack remains cool. If the topping is hot but the interior is not, let the slice stand, then continue with another short interval instead of using one long blast.

Choose a method by the result you want

Method Best use Texture and moisture trade-off Key control
Covered microwave with a little liquid One serving of mac and cheese or the fastest possible meal Steam and added liquid reduce drying, but uneven heating and soft texture remain possible Use short intervals, stir, rotate, rest, and check several spots
Low stovetop heat Mac and cheese when you want to adjust the sauce Easy to add liquid gradually; high heat can scorch the bottom Keep the burner low and stir often
Covered skillet with a splash of water One or a few pizza slices Steam warms toppings and an uncovered finish crisps the base; excess water can cause sogginess Put water away from the crust and shorten the covered phase if the base softens
Conventional oven Several servings of mac and cheese or multiple pizza slices Consistent for larger amounts; covering retains moisture, while uncovering encourages crisping Use an oven setting of at least 325°F and check the center

There is no single best appliance for every portion. Choose based on quantity and the texture you value: the microwave minimizes waiting, the stovetop gives the most control over sauce, the skillet balances a crisp pizza base with warm toppings, and the oven handles several portions at once. In every case, the food thermometer is the common safety check.

Storage determines whether reheating is safe

Good reheating cannot make mishandled food safe. Refrigerate leftovers promptly. FDA guidance says perishable food should not remain at room temperature for more than two hours, or more than one hour when the ambient temperature is 90°F or higher. Divide a large amount into shallow containers so it cools more quickly, and keep the containers covered in the refrigerator.

USDA lists refrigerated pizza leftovers as keeping for three to four days in its take-out food guidance. That window applies to properly refrigerated leftovers; it does not extend food that sat out beyond the room-temperature limits. If you will not eat the food within that period, freeze it in a well-sealed container and label it with the date.

When storing a casserole, divide it before chilling rather than leaving a deep, hot mass in one large container. Smaller portions are easier to cool, store, and reheat evenly. Keep pizza slices covered in the refrigerator, and discard food whose storage history is unknown instead of trying to rescue it with extra heating.

Troubleshooting common texture problems

Mac and cheese is dry or clumped

Add a small amount of milk or water, cover the dish, and return it to low heat. Stir after each short interval. Adding all the liquid at once can make the sauce runny, while trying to fix dryness with higher heat usually makes the pasta tougher and the bottom stick.

Mac and cheese is watery

Remove the cover and let excess steam escape while stirring over low heat. Stop adding liquid; the sauce will thicken slightly as it cools. Do not raise the burner sharply, because the bottom can scorch before the water evaporates evenly.

Mac and cheese is hot at the edges but cool inside

Stir from the outside toward the center, flatten the portion, and continue with short covered intervals. Check several spots with the thermometer. A deep container or dense block needs redistribution, not simply a hotter setting.

Pizza topping is hot but the crust is soft

Move the slice to an uncovered skillet and warm it briefly over medium-low heat. The dry, uncovered finish lets the base crisp. Next time, shorten the covered steaming step or use less water.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Pizza crust is crisp but the cheese is still cool

Lower the heat and cover the pan for a shorter interval so steam can warm the topping without continuing to brown the base. A thick or heavily topped slice may need more time; check the topping temperature rather than relying on color.

The microwave produced cold spots

Stir mac and cheese from the edges inward, rotate the container, and continue in short intervals. For pizza, reposition the slice between intervals. Let the food stand briefly and check multiple areas with the thermometer before eating.

The bottom is scorching

Lower the stovetop or skillet heat and stir or reposition the food more often. On pizza, use the covered steam phase to warm toppings before finishing uncovered. A darkened base is a sign that the pan is heating faster than the food, not a reason to increase the burner.

A simple decision guide

  • One bowl of mac and cheese: Use the covered microwave method when speed matters, or low stovetop heat when sauce texture matters most.
  • A large mac-and-cheese casserole: Use a covered oven dish at 325°F or higher, then uncover only for optional browning.
  • One pizza slice and a crisp base: Use the covered-skillet steam step followed by an uncovered finish.
  • Several pizza slices: Use the oven, covering for a softer crust and uncovering near the end for more crispness.
  • Frozen leftovers: Reheat without thawing if convenient, allow extra time, and confirm the center reaches the safety target.

Keep an instant-read thermometer available if you regularly reheat leftovers. It turns variable appliance times into a clear safety decision, while the cover, liquid, stirring, and uncovering choices let you tune moisture and crispness to the food in front of you.

How do I keep mac and cheese from drying out in the microwave?

Add a small splash of milk or water, cover the bowl with a vented microwave-safe lid or wrap, heat in short intervals, and stir between intervals. Let it stand briefly, then check the center and adjust the liquid only if needed.

Is stovetop or microwave reheating better for mac and cheese?

The microwave is fastest for one serving. Low stovetop heat gives finer control over sauce consistency because you can stir continuously and add liquid gradually. Both methods require thorough heating to 165°F.

What is the best way to reheat pizza with a crisp crust?

Use a skillet over medium-low heat. Add a small splash of water away from the crust, cover briefly to create steam, then uncover and continue heating until the base crisps. This is practical reader advice rather than an official pizza-specific formula, so watch the slice and verify temperature.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Can I reheat frozen mac and cheese without thawing it?

Yes. USDA says frozen leftovers may be reheated without thawing in an appropriate appliance. Allow more time, keep the food covered, stir as the edges soften, and confirm the center reaches 165°F.

How long can leftover pizza stay in the refrigerator?

USDA lists three to four days for refrigerated pizza leftovers when they were handled and chilled properly. Food left at room temperature for more than two hours, or more than one hour when the temperature is 90°F or higher, should not be saved for reheating.

Why does my reheated pizza have hot cheese but a cold middle?

Microwaves and dense toppings can heat unevenly. Use short intervals, rotate or reposition the slice, allow a brief standing period, and check several areas with a thermometer rather than relying on the cheese surface.

Can I reheat leftovers in a slow cooker or chafing dish?

No. The cited USDA guidance says not to use a slow cooker, steam table, or chafing dish to reheat leftovers. Use the stovetop, oven, or microwave instead, and verify 165°F.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The Bottom Line

For creamy mac and cheese, use gentle covered heat, a small splash of milk or water, and frequent stirring. For pizza, steam the toppings briefly in a covered skillet, then uncover to crisp the base. Refrigerate leftovers within the FDA time limits, use an oven set to at least 325°F when reheating in an oven, and confirm every portion reaches 165°F (74°C) with a thermometer.
