For a standard round, square, or rectangular cake pan, use parchment on the base and nonstick pan spray on the sides. This creates a physical barrier between batter and metal instead of relying on the pan’s finish alone. For a Bundt or other detailed shaped pan, thoroughly coat every groove and the center tube with nonstick spray or melted shortening immediately before adding the batter.
The right preparation depends on the pan’s shape, the condition of its surface, and the recipe’s instructions. The methods below explain how to cover difficult areas, when flour helps or hurts, how to release the baked cake, and how to prevent spray residue from damaging future results.
The principle: create a complete barrier
Cake batter contains water, sugar, proteins, and starches that can bond to a hot pan as the cake sets. A nonstick coating reduces that bonding but does not make the pan permanently release-proof. Parchment, spray, shortening, and flour work by keeping batter from touching the pan directly. PJ Hamel of King Arthur Baking describes the goal as creating a barrier between batter and pan before the batter is added.

Coverage matters more than using a large amount of fat. A thin, even coating that reaches corners, seams, grooves, and the center tube is more dependable than a thick layer that leaves a dry patch. Excess grease can also run to the bottom of a shaped pan, leaving the upper sides unprotected.

Choose a preparation method by pan shape
| Pan or situation | Barrier to use | Important detail |
|---|---|---|
| Round, square, or rectangular flat-bottom pan | Parchment on the base plus nonstick pan spray on the sides | Cut parchment to the base; coat the side walls and corners. |
| Flat pan when spray is unavailable | Softened butter or shortening followed by flour | Distribute a thin film into corners, then tap out excess flour. |
| Bundt or intricate shaped pan | Nonstick vegetable-oil spray or melted shortening | Brush into every recess and the center tube; grease immediately before filling. |
| Shaped pan whose instructions specify a product | The release coating named by the manufacturer or recipe | Wilton’s shaped-cake guidance lists shortening and flour, vegetable-oil spray, flour-based spray, or its Cake Release as alternatives. |
| Previously sprayed nonstick pan | Fresh preparation is still required | Wash warm, while the pan is still warm, so residue does not become tacky. |
Preparing round, square, and rectangular pans
1. Cut parchment for the base
- Set the clean, dry pan on parchment paper and trace its outline, or measure the base directly.
- Cut a round liner for a round pan. For a square or rectangular pan, cut a sheet that fits the base without large folds.
- Check the fit before adding grease. A liner that curls up the sides can create ridges in the cake and make the side coating uneven.
Pre-cut parchment rounds are convenient for round pans. A flat sheet works just as well when it is cut to the shape of a square or rectangular base.
2. Coat the side walls
Spray the exposed sides with nonstick pan spray, including the corners where the base meets the walls. Hold the pan over a sink or tray to contain overspray, and rotate the pan so the film is continuous rather than concentrated in one spot. The parchment protects the bottom; the spray protects the sides that remain in contact with batter.
3. Add an optional second layer
Some bakers spray the pan before laying in the parchment and then spray the parchment’s upper surface as well. This can help the liner stay in place and adds another barrier, but it is not required for the standard parchment-plus-side-spray method. If you use this option, keep both films thin so excess oil does not pool beneath the cake.
4. Use butter and flour when appropriate
A traditional alternative is a thin coat of softened butter followed by flour. Spread the butter over the entire interior, working into corners and any shallow crevices. Add enough flour to dust the film, then tilt and rotate the pan until the flour covers the butter. Tap out loose flour. Wilton presents this method alongside parchment and nonstick spray for general cake pans.

Butter-and-flour preparation is adaptable, but it leaves a visible flour coating on the outside of some cakes. That appearance may be undesirable for cakes where the sides are meant to remain dark or glossy. For those cakes, parchment and spray may be cleaner.
Preparing Bundt and other intricate shaped pans
Inspect the pan and confirm its capacity
Look closely at the pan before greasing. Scratches, worn nonstick areas, and baked-on residue can create weak points where batter catches. Use a pan in good condition and follow the recipe’s capacity guidance. A substantially larger pan can leave a delicate cake with less support from the surrounding metal, making both sticking and breakage more likely during release.
Choose a coating that reaches recesses
For a Bundt pan, King Arthur Baking recommends nonstick vegetable-oil spray or melted shortening applied thoroughly. A pastry brush is useful for elaborate designs because it can push the coating into narrow grooves that an aerosol mist may miss. Brush the center tube as carefully as the outer wall; it is easy to overlook and difficult to repair after batter is poured.
Flour is not a universal requirement for shaped pans. Wilton’s shaped-cake directions use solid vegetable shortening and flour and also list vegetable-oil spray, flour-based spray, or Cake Release as alternatives. King Arthur Baking cautions that flour can leave a dry coating or release less satisfactorily in some nonstick Bundt pans. Follow the instructions supplied with your pan and recipe rather than assuming that every Bundt needs the same finish.

Grease immediately before filling
Apply the coating just before you pour in the batter. If a Bundt pan sits after spraying, liquid can run down the walls and collect at the bottom, leaving upper grooves thinly coated. Once the coating is complete, add the batter promptly and spread it according to the recipe.
Work methodically around the design
- Spray or brush the outer wall from the rim toward the base.
- Rotate the pan and inspect every ridge, fold, and pointed detail under good light.
- Coat the center tube from top to bottom.
- Touch up any visibly dry patch without creating a puddle.
- Fill the pan soon after the final inspection.
Intricate designs need more attention than flat pans because a small uncoated recess can hold a fragment of cake and tear the surrounding crumb when the cake is inverted.
Why a nonstick pan still needs preparation
“Nonstick” describes the pan’s surface, not a guarantee that every cake will lift cleanly. During baking, sugars and proteins can adhere where batter contacts the coating, especially in a detailed shape or a worn area. King Arthur Baking’s cake guidance therefore recommends preparing nonstick pans rather than skipping the release step.
Preparation also protects you from variation between pans. Two pans sold as nonstick may have different finishes, ages, or cleaning histories. A fresh barrier makes the result less dependent on those differences and on how much sugar or moisture the particular batter contains.

Timing and pre-bake checks
Prepare only after the batter and oven plan are ready
Have the parchment cut and the coating available before you begin greasing. For ordinary pans, this prevents the sprayed surface from collecting dust while you finish other tasks. For Bundt pans, it lets you grease at the last practical moment and fill without delay.
Check the liner and coating as a final inspection
- The parchment should lie flat on the base, with no large folds.
- Side walls and corners should show a continuous, thin film.
- Shaped pans should have visible coverage in grooves and on the center tube.
- No area should contain a heavy pool of oil or loose flour.
- The pan should match the recipe’s stated capacity and shape.
These checks address different failure modes: a missing barrier causes direct sticking, while excess liquid or flour can create uneven browning and a fragile surface.
Releasing the cake after baking
Use the cooling and unmolding sequence specified by your recipe, because cakes vary in structure. A delicate hot cake can break under its own weight; a completely cold cake may cling more firmly to a film that has set against the pan.

- Inspect the visible edge. If a section is attached, loosen it gently with a thin spatula rather than pulling the cake upward.
- Place the serving plate or cooling rack over the pan, hold both securely, and invert in one controlled motion when the recipe calls for unmolding.
- If the cake resists, stop and check for an attached edge or groove. Repeated force can split the crumb and leave part of the cake in the pan.
- Lift the pan slowly and inspect the surface before moving the cake again.
Parchment on a flat pan normally remains attached to the cake’s base after inversion; peel it away only after the cake is supported on the rack or plate.

Cleaning sprayed nonstick bakeware
Wash a sprayed nonstick pan in warm, soapy water soon after removing the cake, while the pan is still warm. King Arthur Baking notes that spray residue can become tacky as it cools and then build up over repeated uses.
- Use a soft sponge or cloth and mild dish soap.
- Do not attack baked-on spray with aggressive scrubbing that can damage the finish.
- Rinse away all soap and dry the pan before storage.
- Pay special attention to grooves and the center tube, where residue can hide.
A clean surface is part of release preparation for the next bake: old sticky residue can create an uneven surface even when the new coating is applied correctly.
Common failure modes and fixes
| What happened | Likely reason | Next-bake correction |
|---|---|---|
| The cake is attached to the flat base. | The base had no parchment or had an uncovered patch. | Fit parchment to the base and verify it lies flat before adding batter. |
| Only the sides or corners stuck. | Spray or butter missed the wall-to-base junction. | Rotate the pan while coating and deliberately cover every corner. |
| A Bundt cake tore along a groove. | A recess or center-tube section was dry, or the coating ran downward before filling. | Use a brush for recesses and grease immediately before pouring. |
| Flour left a dry, pale coating on a shaped cake. | The chosen pan finish did not release well with flour. | Follow the pan’s directions; consider nonstick spray or melted shortening where specified. |
| Spray feels gummy on the pan. | Residue cooled and accumulated after previous bakes. | Wash with warm soapy water while the pan is still warm and avoid abrasive scrubbing. |
| A cake prepared with spray and confectioners’ sugar stuck badly. | In King Arthur Baking’s 2022 trial, cornstarch in the sugar combined with batter liquid and became gluey. | Do not use this combination as a default release method; choose parchment, spray, or the coating specified for the pan. |
A tested caution about confectioners’ sugar
King Arthur Baking compared a dozen pan-preparation methods in 2022 using Chef Zeb’s Hot Milk Cake in a 6-inch round pan. In that test, pan spray dusted with confectioners’ sugar produced severe sticking. The article attributes the result to cornstarch in the sugar mixing with liquid from the batter and forming a glue-like layer.

This is a useful warning, not a quantified failure rate for every cake. The test involved one cake formula, one pan size, and a specific set of preparations; it does not establish that every recipe will behave identically. It does show why a method that sounds like an extra barrier can backfire when its ingredients react with batter moisture.
How to decide quickly before each bake
- Identify the pan: flat-bottom or shaped.
- For a flat pan, cut parchment for the base and spray the sides.
- For a shaped pan, choose spray or shortening, then inspect every recess and the tube.
- Check the recipe and pan instructions for a required release product or flour step.
- Grease a Bundt pan immediately before filling.
- Confirm the pan is clean, undamaged, and the correct capacity.
- After unmolding, clean spray residue while the pan is still warm.
This sequence keeps the release decision tied to the pan rather than to a one-size-fits-all coating. Flat pans benefit from a reliable removable liner, while shaped pans demand complete coverage of a three-dimensional surface.
What the available guidance establishes
King Arthur Baking’s preferred general method is parchment on the bottom with pan spray on the sides, and Wilton’s general bakeware guidance supports parchment, nonstick spray, or butter-and-flour preparation. The Bundt-specific guidance differs because grooves and the center tube make coverage the controlling issue. No source cited here provides a universal success percentage or a controlled comparison across every pan material, cake recipe, and oven, so preparation should be treated as risk reduction rather than an absolute guarantee.
