You can change your farmer after a save has started: visit the Shrine of Illusions in the Wizard’s Tower basement and offer 500g. The usual way to unlock the basement is to reach at least four hearts of friendship with the Wizard.
How to change your farmer’s appearance

Use the available character settings to make your changes, then confirm them.
The Shrine can change your farmer’s appearance, name, favorite thing, and gender. You do not need to start a new save to use it. The Shrine’s listed fee is 500g; the game reference does not specify a platform-specific control sequence.
What the Shrine changes—and what it does not
The Shrine is for your farmer’s character settings, including appearance. It is not a clothing closet: changing your outfit is handled through tailoring rather than by freely adjusting clothing at the Shrine.
Change clothing through tailoring

Use the Witch’s Hut route if it is available
If you have access to the Witch’s Hut, its red portal provides another way to reach the Wizard’s basement. The Hut route depends on having unlocked that location; the available reference does not establish every quest or platform prerequisite, so the four-heart Wizard route is the clearest standard path for players who have not reached the Hut.

The Shrine’s documented history notes that version 1.5 added the options to change gender, name, and favorite thing. Version 1.6 removed pet-appearance changes from the Shrine. These are distinct from editing your own farmer.
