How do vertical farms compare with greenhouse and field-grown produce? There is no universal winner. A fair comparison uses the same crop, geography, season, electricity supply and life-cycle boundary, then reports impacts per kilogram of saleable produce and per square metre of growing area. Vertical farms can greatly reduce land demand, but artificial lighting and climate control may create a large electricity and emissions burden. Greenhouses range from naturally lit, low-energy structures to highly controlled facilities, while field production often avoids lighting energy but may require more land, irrigation, fertilizer or pesticides in a particular setting.
The figures below are evidence for specific lettuce systems, not a ranking of every crop or farm. Treat them as a method for making a comparison, not as a universal scorecard.
Start with a like-for-like comparison
“Vertical farm,” “greenhouse” and “field-grown” describe production environments, not single technologies. A vertical farm may grow plants hydroponically on stacked shelves under LEDs, with pumps, fans, heating, cooling and dehumidification. A greenhouse may rely almost entirely on sunlight or add supplemental lighting and active climate control. A field operation may use rain-fed or irrigated soil, plastic mulch, machinery, fertilizer and pesticides. Comparing labels without specifying those details can reverse the result.
Define the comparison before collecting numbers:
- Crop and product: compare the same variety and maturity, such as one kilogram of saleable lettuce heads, not harvested mass from one system against packaged product from another.
- Geography and season: sunlight, temperature, water availability, heating demand and transport distance are location-specific.
- Functional unit: use kilograms of marketable produce for consumer-facing impacts, and kilograms per square metre per year when land productivity matters.
- System boundary: state whether the result includes farm construction, growing media, fertilizer, pesticides, electricity generation, packaging, refrigeration, transport, storage, retail waste and disposal.
- Impact categories: keep climate emissions, energy, water, land, nutrient pollution and chemical use separate. A system can perform well in one category and poorly in another.
Direct water withdrawal is not the same measure as life-cycle water impact. Similarly, electricity used at a farm is not the same as the upstream environmental impact of generating that electricity. Write down these definitions beside every number.

Energy and greenhouse-gas emissions
Why indoor lighting matters
In a fully controlled hydroponic farm, LEDs replace sunlight. Lighting runs for a scheduled photoperiod and produces heat that the facility must remove or redistribute. Pumps, air movement, heating, cooling, humidity control, water treatment and building services add to the load. A 2025 peer-reviewed life-cycle assessment of controlled-environment hydroponic lettuce identifies artificial lighting as the primary energy driver. Its authors conclude: “To match conventional agriculture, energy consumption and greenhouse gas emissions of controlled environment hydroponic agriculture must be substantially reduced.” The assessment identifies low-carbon electricity and greater use of natural light as ways to lower impacts.
What the UK 2026 scenarios found
The UK assessment reports 17.25 kWh/kg lettuce for its vertical-farm scenarios. It reports 0.932–0.935 kg CO2e/kg in production-stage emissions for those scenarios, compared with 0.531 kg CO2e/kg for its UK field lettuce baseline. These are production-stage values in a UK model; they are not retail, transport or global averages.

The same work estimates 93% lower land demand for vertical farming versus field lettuce in its UK scenarios. If spared land is repurposed for activities that store carbon or avoid other agricultural expansion, a broader land-use analysis could change the net result. That benefit must be modeled rather than assumed.
Why electricity mix can reverse a conclusion
Two farms with identical LED hardware can have different emissions if one uses a low-carbon grid and the other uses more fossil generation. A separate sourcing analysis of lettuce found that, in its Swedish-grid scenario, vertical farming had lower greenhouse-gas emissions but higher life-cycle water-use and land-use impacts than conventional sourcing in some categories. That is not a contradiction with the UK figures: the studies use different system boundaries, electricity assumptions, supply chains and locations.
Report both electricity consumption and the emissions factor or grid scenario used. “Local” production is not automatically lower-carbon when electricity and infrastructure dominate the footprint.

Land productivity, water and yield
The Yuma lettuce comparison
Barbosa et al. (2015) compared theoretical hydroponic greenhouse production with local conventional production data in Yuma, Arizona. The hydroponic scenario produced 41 ± 6.1 kg/m²/year, used 20 ± 3.8 L/kg of water and required 90,000 ± 11,000 kJ/kg of energy. The conventional field scenario produced 3.9 ± 0.21 kg/m²/year, used 250 ± 25 L/kg of water and required 1,100 ± 75 kJ/kg of energy.
On those inputs, hydroponics delivered 11 ± 1.7 times higher yield per area and 82 ± 11 times higher energy demand. The water comparison favors hydroponics in that study, while the energy comparison strongly favors the field scenario. Because the hydroponic values were theoretical and the field values came from local conventional data, the figures should not be presented as current averages for every greenhouse, vertical farm or field.
Why “water use” needs a definition
Indoor recirculating systems can reduce direct irrigation withdrawals by capturing and reusing nutrient solution. A field analysis may count irrigation applied to soil, while a life-cycle assessment can also count water consumed in electricity generation, fertilizer manufacture, construction or upstream supply chains. State which water metric is being used and keep direct withdrawals separate from life-cycle water impact.

Land sparing is not the same as lower total impact
Stacking allows several crop layers above the same floor area, so output per square metre of building footprint can be high. The building, racks, lighting, HVAC equipment, pumps and replacement components still have embodied impacts. If the comparison counts only occupied floor area, it may omit the materials and energy used to create the facility. If it counts avoided land conversion, it must describe what happens to that spared land.
How greenhouses fit between indoor and field systems
Greenhouse performance spans a wide range. A passive or low-energy greenhouse that uses sunlight, natural ventilation and limited heating is not equivalent to a sealed structure with artificial lighting, active cooling, heating and carbon-dioxide control. Ask for:

The 2025 controlled-environment lettuce life-cycle assessment reports that open-field and low-energy greenhouse systems have higher impacts in several non-climate categories because of fertilizer, pesticides, land and irrigation water. Fully controlled hydroponics carries a high energy and climate burden. The appropriate conclusion is a category-by-category tradeoff, not that one production environment wins overall.

What field production can do well—and where it can struggle
Field production receives sunlight without LED electricity and generally requires less specialized building equipment. That advantage can be offset by lower yields per area, irrigation demand, fertilizer losses, pesticide use, weather-related crop losses or long-distance transport when the crop is out of season. The balance depends on crop, climate, management and the boundary of the analysis.
Do not infer a field result from lettuce to wheat, tomatoes, strawberries or tree fruit. Staple crops and fruiting crops have different plant architecture, harvest cycles, storage needs and energy requirements. A field system can be land-efficient for one crop and land-intensive for another, while a vertical system may be technically unsuitable for crops that need large canopies or pollination.
A step-by-step method for comparing two or three systems
- Set the question. Decide whether the decision concerns climate emissions, water scarcity, land availability, year-round supply, resilience or cost. A single “sustainability” score hides tradeoffs.
- Choose the product unit. Use one kilogram of saleable produce, including the same trimming and packaging standard. Add kilograms per square metre per year when land productivity is relevant.
- Match the crop and harvest stage. Use the same variety, maturity, edible portion and quality specification. Do not compare harvested mass from one system with retail-ready mass from another.
- Match geography and season. Record latitude, climate, growing months, heating degree days, sunlight and water conditions. If one system supplies winter produce and another supplies summer produce, state that difference.
- Describe each production system. For vertical farms, record stack height, LED efficacy, photoperiod, HVAC and nutrient recycling. For greenhouses, record glazing, sunlight share, heating, cooling and supplemental lighting. For fields, record irrigation, fertilizer, pesticides, machinery and yield.
- Collect energy data. Separate lighting, heating, cooling, pumps, fans, water treatment and packing. Report kWh per kilogram and identify the electricity or fuel mix.
- Collect water data. Distinguish water withdrawn, water consumed, discharge and life-cycle water impact. Note whether rainwater, condensate or nutrient solution is reused.
- Set the life-cycle boundary. Include or exclude construction, equipment replacement, packaging, storage, transport, retail refrigeration, waste and electricity generation consistently across systems.
- Report land in two ways. Give physical land or floor area per kilogram and annual yield per square metre. Explain whether the result includes roads, service space, buildings and land-use change.
- Test sensitivity. Recalculate with a different grid mix, yield, facility lifetime, heating source or transport distance. Identify which assumptions change the ranking.
- Present a tradeoff table. Show climate emissions, energy, water, land, nutrient pollution and chemical use separately, with the source and conditions attached to each value.
How to read a comparison without overclaiming
When vertical farming is likely to look better
- Land near the market is scarce or expensive, and stacked production substantially increases output per building footprint.
- The electricity supply is demonstrably low-carbon, and the facility uses efficient lighting, heat recovery and careful climate control.
- Water withdrawals or nutrient discharge are tightly managed, and the comparison values local water scarcity rather than volume alone.
- The alternative would require substantial protected cultivation, long storage or transport, and those stages are included consistently.
When a greenhouse may be preferable
- Sunlight can provide most of the crop’s light, with modest heating and cooling demand.
- The structure and equipment have long service lives and high utilization.
- Recirculation reduces irrigation withdrawals without shifting large burdens to electricity or materials.
- The crop and climate allow high yields without year-round artificial lighting.
When field production may be preferable
- The climate supports the crop in its normal season with adequate rainfall or efficient irrigation.
- Yields are strong and fertilizer and pesticide losses are controlled.
- The field avoids energy-intensive lighting, heating and cooling, and transport or storage distances remain reasonable.
- Land-use impacts are acceptable for the region and the analysis counts them transparently.
Common comparison mistakes
- Calling lower direct water use “lower environmental impact.” Upstream electricity, fertilizer and infrastructure can add water impacts.
- Calling every greenhouse a vertical farm. A sunlit greenhouse and a sealed multi-layer LED facility have different energy systems.
- Using one lettuce study as a universal ranking. The published figures are crop-, location- and model-specific.
- Ignoring electricity generation. Farm-meter electricity and life-cycle emissions are different measures.
- Comparing yield per floor area with yield per land area without explanation. State whether racks, service corridors and building footprint are included.
- Counting only production. Packaging, storage, transport, waste and construction can change a result when included for one system but not another.
- Assuming local means lower-carbon. A nearby indoor farm on a carbon-intensive grid may have higher emissions than a distant field supply chain.
- Inferring taste, nutrition or food safety. The cited studies do not establish a general quality ranking.
- Assigning a single winner. A system can have lower land demand and higher climate emissions, or lower fertilizer impacts and higher electricity use.
Quality, availability and price: what the evidence does not establish
Environmental studies do not automatically answer whether one system tastes better, contains more nutrients, is safer or costs less at retail. Those outcomes require matched crop-specific measurements and a defined market. Availability and seasonality may matter to a buyer, but they should be reported only when the comparison has direct data on production schedules, storage and distribution. Do not turn a land or energy result into an unsupported claim about quality.

Vertical farming’s clearest advantage is land productivity: stacked production can sharply reduce land demand, as the UK 2026 scenarios estimated at 93% lower than their field comparison. Its central liability is energy, especially artificial lighting and climate control; those scenarios reported 17.25 kWh/kg lettuce and 0.932–0.935 kg CO2e/kg in production-stage emissions, versus 0.531 kg CO2e/kg for the modeled UK field baseline. The Yuma study illustrates the same tension: hydroponics produced 11 ± 1.7 times more per area and used 20 ± 3.8 L/kg of water, but required 82 ± 11 times more energy than its field comparison.
Use the same crop, place, season, electricity mix, functional unit and life-cycle boundary for every option. Then show where each system performs better and which assumptions drive the result. That approach is more accurate—and more useful—than declaring vertical, greenhouse or field production the universal winner.
