Choose a food-handling gripper around the product and sanitation task, not around the robot brand or a generic payload number. First establish whether the tool touches unpackaged food, how wet, oily, porous, textured, fragile, and variable the product is, what force and cycle time the line needs, and how the complete end effector will be cleaned. Then compare vacuum, food-flow, soft compliant, and parallel-jaw designs with representative products and the intended wash cycle. Hygiene documentation and cleanability are gates for direct contact; no single gripper principle wins every food application.

Start with the food-contact and cleaning boundary

Draw the boundary of everything that can touch the product: cups or fingers, jaws, fasteners, fittings, tubing, seals, lubricants, sensors, and any quick-change plate. A declaration for one silicone finger or suction cup does not make the robot flange, pneumatic circuit, or assembled cell suitable for food contact. Ask the supplier for the exact declaration, regulation scope, temperature limits, food categories, and revision date for each contact component and for the assembled configuration you intend to buy.

For direct-contact equipment, hygienic design is a selection gate. The DLG Expert report (January 2019) says food grippers must meet food-industry hygienic requirements, be comprehensively cleanable and disinfectable, and match the food’s physical and mechanical properties without destroying or visibly marking it. Hygienic construction avoids crevices and other places where soil can collect.

Characterize the product and the robot motion

Build a product envelope from real production variation rather than a nominal sample. Measure or document:

  • Length, width, height, diameter, and allowable dimensional tolerance.
  • Mass and center of gravity, including the heaviest permitted piece.
  • Surface texture, porosity, oil or water film, temperature, and icing or condensation.
  • Stiffness, tear strength, crush sensitivity, and the marks customers will reject.
  • Shape variation, orientation, nesting, and the locations where a grasp is possible.
  • Required orientation at release, placement accuracy, and whether one pick contains multiple pieces.
  • Robot acceleration, jerk, approach direction, grip time, dwell time, and release time.

DLG identifies gripping time and distance, the gripping-force curve, number of objects, external shape, mass, surface properties, strength, robot positioning and acceleration, connections, and environmental conditions as general gripper requirements. These variables interact: a grip that holds during a slow vertical lift may slip when the same robot uses a high-acceleration horizontal move.

How the main gripper principles differ

Principle Best fit to investigate Checks and trade-offs
Conventional vacuum cup A product has a reasonably smooth, nonporous sealing area and the cup can provide the required load at line speed. Porous, highly textured, wet, or residue-prone surfaces can leak. DLG warns that a conventional cup may draw in product residue or moisture. Verify seal stability, vacuum generation, release behavior, cup material, tubing cleanliness, and washability.
Food-flow gripper Dry porous or structured foods need high airflow with little surface pressure. Air consumption, noise, filtration, energy, placement control, and sanitation need review. An application statement for dry foods does not establish suitability for wet, fatty, or every unpackaged product.
Vacuum-driven soft fingers A delicate, light, irregular item benefits from a compliant wrap or pinch instead of a flat seal. Confirm gripping capacity, vacuum response, detectable-material requirements, food-contact documentation, fitting configuration, and washdown compatibility.
Soft compliant mechanical grasp Fragile, irregular, or mixed-size products need distributed contact and adaptive conformity. “Soft” describes compliance, not universal food suitability. Check the exact elastomer, pressure range, payload, cleaning chemicals, and contact declaration for the model and food.
Parallel-jaw or other mechanical grasp The item tolerates controlled side contact and repeatable restraint or orientation is important. Control force to prevent crushing and marks. Jaws can limit reach, obstruct access, or create soil traps unless hygienically designed. Require cleanable geometry and food-compatible contact parts; no universal food-grade status should be assumed.

Vacuum cups

A cup is often the simplest design when the product offers a reliable sealing patch. Size the cup and vacuum reserve for the worst permitted surface, not the smoothest sample. Test acceleration, lateral forces, and release timing; a cup that lifts a cookie may drag it during placement or fail when flour enters the seal.

For direct food contact, inspect the cup lip, internal vacuum path, filter, ejector, and tubing. Residue or moisture drawn into the circuit can contaminate equipment and reduce performance. Include a defined cleaning and inspection method for filters and silencers, and verify that the vacuum generator can be isolated or protected during washdown.

Food-flow grippers

A flow gripper creates a high-volume airflow field rather than relying on a tight cup seal. Schmalz describes its SFG for dry foods with high leakage, including waffles and cookies with structured surfaces. That makes it a candidate when a textured or porous bakery surface defeats an ordinary cup, but it does not extend the claim to wet, oily, or all unpackaged foods.

Flow systems trade sealing hardware for utilities. Specify blower or ejector capacity, air quality, filtration, noise limits, and the effect of airflow on crumbs and lightweight products. Confirm that the contact element and surrounding housing can be inspected and disinfected, and that the air path will not spread allergens or loose particles around the cell.

Vacuum-based soft fingers

Soft fingers use controlled vacuum to bend or contract compliant elements around an item. The distributed contact can protect fragile shapes and tolerate moderate dimensional variation where a flat cup would either leak or concentrate force.

Ask how the fingers fail when vacuum is lost, how quickly they release, and whether the silicone contains a detectable additive required by the plant’s foreign-material program. A sealed design can keep product out of the actuator, but seals, fittings, and mounting hardware still need a washdown review. Confirm the permitted food category rather than treating a material statement as approval for every food.

Soft compliant mechanical grippers

Mechanically driven soft tools can pinch, wrap, or cradle products without a rigid jaw edge. They are useful for fragile baked goods, produce, and other irregular items when the process needs repeatable motion rather than a vacuum seal. Interchangeable fingers or tools can reduce changeover time, but every tool variant creates another contact surface and cleaning instruction to validate.

Evaluate compression recovery, fatigue, swelling, and cracking after exposure to the plant’s chemicals and temperatures. A soft urethane or silicone that performs well on a dry product may absorb oil, retain allergen residue, or lose friction after repeated sanitation.

Parallel-jaw and other mechanical grippers

Parallel jaws remain practical when a product has a robust sidewall, a known pick location, and a need for positive orientation. They can hold without vacuum utilities and can be tuned for a defined stroke and force. The disadvantages are concentrated contact pressure, potential surface marks, limited access around the part, and crevices around pins or jaw covers.

Use compliant pads or shaped fingers only when their material, attachment, and cleanability are documented. Set a force limit, monitor jaw position or motor current, and test the full tolerance range. DLG supports hygienically designed mechanical grippers but does not establish a universal food-safe parallel-jaw product.

A practical selection workflow

  1. Classify the contact. Mark each operation as direct contact with unpackaged food, contact through packaging, or no contact. For direct contact, obtain declarations for every wetted or product-facing component and define the applicable jurisdiction and food category.
  2. Write the sanitation specification. List water, temperature, pressure, detergents, sanitizers, exposure time, disassembly tools, inspection points, and required drying. Reject designs with inaccessible cavities or undocumented elastomers before performance trials.
  3. Define the product envelope. Include minimum and maximum dimensions, mass, texture, moisture, oil, temperature, fragility, allowable marks, and all expected variants. Photograph and retain samples that represent the worst case.
  4. Define motion and throughput. Specify pick rate, grip and release time, robot acceleration, approach angle, placement tolerance, number of pieces per pick, and the consequences of a dropped or misoriented product.
  5. Choose two or three principles to test. Use the comparison table to eliminate obvious mismatches, but keep an alternative when the evidence is uncertain—for example, a flow gripper alongside a cup for a porous bakery product.
  6. Check integration requirements. Confirm robot flange and payload, pneumatic or electrical utilities, vacuum or flow capacity, sensors, tooling clearance, quick-change interfaces, controller signals, and safe behavior on utility loss.
  7. Run a representative trial. Use production-speed samples across the full product and environmental envelope. Measure successful picks, slips, drops, marks, damage, release timing, cycle time, utility use, and the cleaning time required after the run.
  8. Run the sanitation and changeover trial. Clean the assembled tool using the intended chemicals and procedure, then inspect seals, joints, filters, pads, and hidden surfaces. Repeat performance tests after cleaning and after the planned number of changeovers.
  9. Approve with a documented risk review. Food safety, quality, maintenance, automation, and operations should sign off on contact scope, foreign-material controls, allergen changeover, guarding, failure recovery, and replacement-part identity.

Candidate examples and model-specific specifications

The figures below belong to the named products and their stated conditions; they are not a cross-category benchmark.

Model or family Published details How to interpret the claim
Schmalz SFG food flow gripper Designed for dry food such as waffles and cookies with highly structured surfaces; FDA-compliant contact element for direct contact with dry food; hygienic-design construction; stated suction-rate range 270 to 650 l/min; contact-element diameters 20 to 60 mm. These are product-family specifications stated by Schmalz. Confirm airflow at your product, noise and energy limits, and the exact dry-food contact scope.
NITTA SOFTmatics Flexible urethane soft handling, selectable finger shapes, and pressure adjustment of gripping force. NITTA says materials comply with Japan Ministry of Health and Welfare Notification No. 370 as of May 2021; the gripper body meets an FDA 21 CFR 177.2600 dissolution test as of April 2023. Those statements have the stated dates and scopes; they do not mean the complete system is universally FDA-approved. For a Baumkuchen application, NITTA reports 95–97% to 100% grip rate and maintenance reduced from up to 4 hours/day to 0 hours/day in customer feedback; the page does not state a date. Treat this as a vendor-reported result for that application, not an independent industry statistic.
OnRobot Soft Gripper Maximum payload stated as 2.2 kg, depending on item shape, softness, and friction; grip dimensions 11–118 mm depending on silicone tool. Silicone tools are described as dishwasher-safe and as complying with FDA 21 CFR for non-fatty food items and EC 1935/2004 for food handling. Keep the non-fatty-food qualification attached to the FDA statement. Verify payload at the actual shape, friction, acceleration, tool, and cleaning process.
Piab piSOFTGRIP 40-3 Announced May 26, 2026; three-finger, sealed vacuum-based soft gripper; capacity up to Ø40 mm; detectable silicone described as suitable for direct food contact under FDA 21 CFR and EU 1935/2004; optional wash-down fitting. These are Piab’s claims for this model. Confirm the installed fitting, food category, vacuum range, release behavior, and sanitation instructions before approval.

Performance checks

  • Run minimum, nominal, and maximum dimensions and mass.
  • Include the driest, wettest, oiliest, most porous, and most textured permitted surfaces.
  • Use the production robot acceleration, approach, dwell, and release timing.
  • Count successful picks, slips, drops, double picks, misorientation, and failed releases over a meaningful production sequence.
  • Measure visible marks, crush, tearing, deformation, crumbs, and contamination introduced by the tool.
  • Record utility pressure, vacuum or flow, cycle time, noise, and recovery after an intentional utility interruption.

Sanitation checks

  • Clean the complete assembled tool with the intended method, not a convenient substitute.
  • Disassemble only as the production procedure allows and time the changeover.
  • Inspect seams, cavities, filters, seals, finger roots, jaw covers, and tubing for retained soil.
  • Repeat contact and release tests after cleaning, drying, and the planned chemical exposure.
  • Document replacement intervals and identify every food-facing spare part by part number and material.

Published payloads, dimensions, material statements, and customer results are model- and condition-specific. The cited material does not provide an independent cross-category benchmark, a market-wide success rate, or a comparative sanitation statistic, so do not combine the figures in the table into a universal ranking.

Common failure modes and corrective actions

Symptom Likely cause Corrective action
Cup loses grip on some pieces Porosity, texture, moisture, crumbs, or insufficient vacuum reserve. Improve surface access, filter contamination, and vacuum monitoring; test a food-flow or compliant finger design instead of increasing force blindly.
Product is held but visibly marked Excessive jaw or finger pressure, concentrated edge contact, or high acceleration. Lower force, enlarge contact area, change pad geometry, slow the move, and verify marks after sanitation as well as before it.
Soft tool works initially but fails after washdown Elastomer swelling, chemical attack, trapped water, or degraded friction. Check the exact chemical and temperature compatibility, improve drainage, replace the material or fitting, and repeat the post-cleaning trial.
Flow gripper moves crumbs or allergens High airflow, poor filtration, or an uncontained exhaust path. Review air direction and filtration with food-safety staff; define cleaning between allergen products and verify the surrounding cell.
Gripper releases late or not at all Vacuum decay, sticky residue, insufficient venting, or control timing. Measure release pressure and timing, clean or replace filters, add a controlled blow-off if permitted, and interlock the robot with a confirmed-release signal.
Parts are difficult to inspect Hidden fasteners, blind cavities, or a tool that cannot be disassembled in the approved changeover time. Redesign for tool-less access or documented disassembly, then validate cleaning and inspection with the actual operators.

Match the principle to common food scenarios

Dry, porous or highly structured bakery

Start with a food-flow concept when a smooth cup cannot seal. The SFG example is explicitly aimed at dry foods such as waffles and cookies with structured surfaces. Compare it with a compliant finger tool if the product is fragile or must be wrapped, and verify that airflow does not scatter crumbs.

Delicate, irregular or variable pieces

Investigate vacuum-driven soft fingers or a soft mechanical grasp. Distributed contact can reduce local pressure, but test the exact shape range, friction, vacuum level, and elastomer after cleaning. Do not infer food-contact suitability from the word “soft.”

Robust pieces needing precise orientation

A parallel-jaw design can be efficient when side contact is acceptable and the pick location is repeatable. Use force control and cleanable contact inserts, then perform a mark and damage trial at line acceleration.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Wet, oily or residue-heavy products

Conventional cups become less attractive as sealing and contamination risks rise. Compare a mechanically compliant grasp or a purpose-built contact element, and require explicit documentation for the food category and cleaning chemicals. A dry-food flow-gripper claim cannot be extended to this case without a separate validation.

Packaged products

If the gripper touches only a sealed package, direct food-contact rules may differ, but packaging damage, condensation, seal integrity, and cleanability still matter. Confirm the plant’s hazard analysis before treating the application as non-food-contact.

Integration, maintenance and changeover requirements

Include the gripper in the robot-cell specification rather than treating it as a bolt-on accessory. Confirm flange pattern, total mass and center of gravity, cable and hose routing, collision envelope, utility connectors, controller I/O, vacuum or pressure sensors, and a safe state for loss of air or power. Define whether a dropped product triggers a stop, a reject, or a controlled retry.

Set preventive-maintenance points for cups, fingers, pads, filters, seals, fittings, and jaw mechanisms. Track cycles, sanitation exposure, and observed wear. Keep food-facing spares segregated, labeled, and traceable; a visually similar industrial replacement may not have the same contact declaration.

For changeovers, specify tool identification, recipe limits, torque or latch checks, sanitation sign-off, and a first-piece verification. If a finger shape, silicone tool, jaw pad, or contact diameter changes, treat it as a new configuration and repeat the applicable grip and cleaning checks.

What a defensible purchase decision contains

Your final shortlist should show, for each candidate, the exact contact components and regulatory scope, cleaning and disinfection procedure, chemical and temperature limits, product envelope, tested force or vacuum settings, robot acceleration, cycle results, damage and marking results, utility consumption, failure behavior, changeover time, spare-part plan, and owner for sanitation validation. Keep vendor claims attributable to the named model and retain the test data generated on your own products.

The right choice is the narrowest solution that reliably handles the full product variation and survives the real sanitation regime. A cup may be ideal for a clean, smooth surface; a flow gripper may solve dry porous bakery handling; soft fingers may protect irregular delicate items; and parallel jaws may win on robust, orientation-critical parts. Select among them only after hygiene, cleanability, product damage, motion, and recovery behavior have all passed the same documented trial.
