Use a restaurant’s online menu as a starting point, not proof that a meal is safe or suitable. Check the current dish, call ahead so someone can verify its ingredients and preparation, ask specifically about substitutions and cross-contact, then confirm the conversation when you arrive. If staff cannot give a clear, consistent answer, involve a manager or choose another restaurant.

What “accurate dietary information” should mean

A menu is accurate only if its description matches the ingredients and preparation you are likely to receive that day. A dish can be labelled “gluten-free,” “dairy-free,” vegetarian, vegan or allergy-friendly and still differ from the online description because a recipe, supplier, sauce, garnish, oil or cooking method changed.

For a food allergy, accuracy also includes how the kitchen handles the meal. A dish may not intentionally contain the allergen but can pick it up from a shared fryer, grill, pan, utensil, cutting board or preparation surface. The U.S. Food and Drug Administration (FDA) calls this inadvertent introduction of a major food allergen “cross-contact.”

Dietary needs are not interchangeable. An allergy can cause an immune reaction and may require avoiding even small amounts. An intolerance may cause unpleasant symptoms without being an allergy. Coeliac disease requires strict avoidance of gluten and careful prevention of gluten contact. A preference or ethical choice, such as vegetarian eating, is important but does not automatically involve the same medical risk or legal protections. Tell the restaurant exactly which situation applies rather than relying on a broad label.

Start by defining exactly what you must avoid

Write the need in specific terms

Before you inspect menus, identify the ingredient, exposure or preparation practice that matters. “I have a food allergy to peanuts” is more useful than “I eat clean.” “I cannot have wheat or gluten, including cross-contact” communicates a different requirement from “I prefer gluten-free food.” If you have several restrictions, list each one separately.

  • The ingredient or allergen, using ordinary and technical names where useful.
  • Whether trace contact or shared equipment is medically important.
  • Whether the need is an allergy, coeliac disease, intolerance, religious requirement, ethical diet or preference.
  • Any severity or emergency information your clinician has told you to communicate.

Do not exaggerate a preference into an allergy, but do not minimise a medical risk. Precise wording helps staff ask the right kitchen questions.

Keep a written version available

Save the wording in your phone so you can repeat it consistently. A wallet-sized chef card can also communicate allergies and preparation instructions; Food Allergy Research & Education (FARE) describes making one yourself or downloading a template as an option. A card supports the conversation, but it does not replace checking the current dish or kitchen process.

Step 1: Review the current menu before choosing

Use the restaurant’s own current information

Open the restaurant’s current menu immediately before you decide where to eat. Check the restaurant’s website or the ordering page it currently operates, rather than relying on an old screenshot, a third-party listing or a social-media post. Look for the date or version if one is shown.

Record the exact dish name and every dietary or allergen statement attached to it. Treat icons and phrases such as “allergen-friendly” as a screening aid, not a guarantee of safe preparation. Menus often describe intended ingredients, not accidental contact in the kitchen.

Look beyond the headline ingredient

Read the description for components that are easy to overlook:

  • Sauces, dressings, gravies and glazes.
  • Marinades, spice blends and breading.
  • Garnishes, toppings and finishing oils.
  • Stock, butter, cheese or cream added during cooking.
  • Fryer oil, shared grills and other cooking media.
  • Substitutions offered by the restaurant or selected in an online order.

Note a second or third possible dish in case the kitchen cannot verify your first choice. A menu review narrows the questions; it does not answer them.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Step 2: Call ahead and reach someone who can check

Ask for a kitchen-informed person

Call during a quieter period and ask for a manager, chef or staff member who can check the ingredients and preparation with the kitchen. A front-of-house employee may not know whether a sauce contains an allergen or whether a fryer is shared, so politely ask for someone who does.

Explain the need plainly, name the exact dish and say what exposure must be avoided. Ask whether the restaurant can accommodate it. You are asking for an informed answer, not assuming that the restaurant must create a separate meal.

Use a dish-specific script

“I’m considering the [exact dish]. I have [allergy/coeliac disease/intolerance/dietary requirement] involving [ingredient or exposure]. Could you check the ingredients in the dish, including the sauce, garnish, oil and any substitutions? Has the recipe or supplier changed recently? Could it contact [ingredient] through a shared grill, fryer, pan, utensil or preparation surface? Who should I speak to when I arrive so the kitchen knows?”

Ask the staff member to pause and verify rather than answer from memory. Write down the person’s name, the dish discussed and any conditions they gave you, such as a particular preparation method or a need to avoid a fryer.

Step 3: Verify the recipe, substitutions and hidden ingredients

Ask whether the information is current

Recipes and suppliers change. Food Standards Scotland specifically advises checking for last-minute recipe changes or substitutions. Ask, “Has this dish or any ingredient changed recently?” Confirm whether the online menu is the current menu and whether the kitchen is using a temporary substitute.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Do not assume that a familiar dish has the same formulation at every branch or on every visit. A sauce made in-house may differ from a packaged sauce; a garnish may be added at the pass; and a replacement ingredient may introduce an allergen that the standard recipe did not contain.

Check every component separately

Have staff verify the main ingredient and each component. Ask specifically about sauces, glazes, marinades, dressings, stocks, garnishes, spice mixes, cooking oils and toppings. If an item can be removed, ask whether it is mixed into the dish before serving or added only at the end. Removing a visible garnish does not remove an ingredient already present in a sauce or marinade.

Clarify substitutions in an online order

Customisation controls can create a false sense of certainty. A “no cheese” button may not change a sauce containing dairy, and a “gluten-free” base may still be cooked on shared equipment. Ask the restaurant to confirm the final assembled dish, including any replacement selected by the kitchen.

Step 4: Ask how the kitchen prevents cross-contact

Discuss equipment and surfaces

For an allergy or coeliac requirement, ask whether the meal could contact the relevant ingredient through a shared grill, fryer, pan, utensils, cutting board or preparation surface. Ask what staff actually do to prevent that contact: for example, whether they use clean equipment, a separate cooking area or a documented procedure. Avoid accepting a vague “it should be fine” as a process description.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Shared fryer oil deserves a direct question. Food that is safe before frying can be exposed to breaded or allergen-containing food in the same oil. The same issue can occur on a grill or pan that is not cleaned or separated between dishes.

Distinguish intentional ingredients from accidental contact

“Does the dish contain peanuts?” and “Could it contact peanuts during preparation?” are different questions. Ask both. FARE highlights shared cooking equipment as a practical concern, and the FDA uses cross-contact to describe accidental transfer of a major food allergen.

Know what an answer can and cannot establish

Even a careful explanation is not a medical guarantee. Restaurant staff may be able to describe their ingredients and controls, but they cannot eliminate every uncertainty for you. If the restaurant cannot explain its process, treat that uncertainty as a reason not to order the dish.

Step 5: Confirm again when you arrive

Repeat the need before ordering

Tell the server or manager about your requirement and refer to the earlier call: “I spoke with [name] about the [dish] and my [specific need]. Could you confirm that the ingredients and preparation are still the same today?” This catches a change of shift, a delivery substitution or a temporary kitchen practice.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Check for changes since the call

Ask whether the restaurant is using a different supplier, sauce, oil or garnish today. If the answer differs from the phone conversation, stop and reassess rather than assuming the earlier information still applies.

Make sure the message reaches the kitchen

Ask who is responsible for communicating the requirement to the kitchen and how it will appear on the order. If the restaurant has a manager or chef confirm it directly, note that confirmation. Do not rely only on a verbal message passed through several people when the risk is serious.

Use the quality of the answer as your decision point

Signs the restaurant is prepared to answer

  • Someone checks the current recipe instead of guessing.
  • Staff can identify sauces, garnishes, oils and substitutions.
  • They distinguish ingredients from cross-contact and describe relevant equipment.
  • The answer remains consistent by phone and on arrival.
  • A manager or kitchen-informed person takes ownership of the question.

Warning signs to stop or change restaurants

  • Staff cannot identify who can verify the information.
  • Different employees give contradictory answers.
  • The answer is only “probably,” “usually” or “it should be fine.”
  • No one can say whether a fryer, grill, pan or utensil is shared.
  • The menu label is treated as proof without checking the current preparation.
  • Staff appear unable or unwilling to record or communicate the requirement.

Ask for a knowledgeable manager if the first answer is unclear. Food Standards Scotland’s consumer guidance states: “Important: Do not eat at the restaurant if you have any doubt about staff understanding your dietary needs.” That is especially important for a medically significant allergy or coeliac disease.

Compare restaurants using evidence, not labels

When several restaurants are available, compare what each one can verify. This is a practical decision framework, not a formal safety rating.

Question Stronger evidence Weak evidence
Can someone verify current ingredients? A named manager or kitchen-informed employee checks the exact dish. A generic icon or an employee guessing from the menu.
Are recipe changes and substitutions covered? Staff check the current supplier, sauce, garnish and replacements. “That is how we normally make it.”
Are cross-contact controls explained? Staff describe shared fryer, grill, pan, utensil and surface procedures relevant to the dish. “We can leave the allergen off.”
Does the answer stay consistent? The phone discussion matches the confirmation on arrival. The server cannot find or confirm the earlier information.

Choose the restaurant that can provide the clearest, most current and most consistent information, not necessarily the one with the most dietary icons.

What UK and U.S. allergen rules do—and do not—tell you

Legal disclosure requirements depend on jurisdiction and food format. They can help you ask better questions, but they do not turn an online restaurant menu into a guarantee.

Context What the guidance establishes Practical implication
United Kingdom Government guidance refers to 14 regulated allergens. Ask the restaurant which regulated allergens are present in the specific dish and how it is prepared.
United States The FDA identifies nine major food allergens: milk, eggs, fish, Crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Sesame became the ninth major allergen effective January 1, 2023. Use the U.S. list when describing a major allergen, but still ask about restaurant handling and cross-contact.
U.S. packaged-food labeling FDA allergen-labeling guidance concerns foods regulated under packaged-food labeling law. Do not assume that packaged-food rules prove a restaurant’s online menu is current or that its kitchen has prevented contact.
U.S. restaurants The 2022 FDA Food Code Annex 3 discusses food-allergy awareness, allergen identification, cross-contact prevention, management and training. It is a model code; adoption depends on state and local authorities. Do not describe the model code as a nationwide restaurant law.
UK takeaway and direct-sale food Takeaway allergen information must be provided before purchase and at delivery. Prepacked-for-direct-sale food must carry an ingredients list with regulated allergens emphasised. Check the information before paying and again when the food is delivered; these rules do not remove the need to ask about preparation.

These examples are UK and U.S. rules, not a worldwide rulebook. If you are elsewhere, check the requirements that apply to your country, region and food format.

Special cases: intolerance, coeliac disease and dietary preference

Intolerance

Explain the ingredient and the symptoms or threshold that matter to you, without calling it an allergy if it is not one. A restaurant’s allergen list may not cover every intolerance, and “allergen-free” information may not answer your question.

Free tools Windows power users keep installed

One-click scans. No signup required.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Coeliac disease

Say that you require strict gluten avoidance and ask about shared equipment, preparation surfaces, fryer oil and storage as well as ingredients. A gluten-free ingredient is not the same as a gluten-free preparation process.

Vegetarian, vegan, religious and other practices

Name the exact ingredients or practices you avoid. Ask about stocks, sauces, cooking fats, garnishes and substitutions. The allergy procedure or legal allergen list may not address every ethical, religious or preference-based requirement.

A compact checklist for the day of the meal

  1. Define the exact ingredient, exposure or practice you must avoid.
  2. Open the restaurant’s current menu and select a specific dish.
  3. Read the sauce, garnish, marinade, oil and substitution details.
  4. Call ahead and ask for someone who can check with the kitchen.
  5. Ask whether the recipe, supplier or ingredients changed.
  6. Ask about shared fryers, grills, pans, utensils and preparation surfaces.
  7. Record the answer and the name of the person who confirmed it.
  8. Repeat the requirement to the server or manager on arrival.
  9. Ask whether anything changed since the call.
  10. Leave or choose another dish if answers remain unclear or inconsistent.

If information changes after you arrive

Pause the order. Ask the manager to reassess the exact dish using the current ingredients and preparation method. If a substitute, shared fryer or new sauce changes the answer, select a dish that can be verified or leave. Do not pressure staff to improvise a “safe” version when they cannot explain the process.

Likewise, do not treat a successful previous visit as proof for the next one. The relevant question is whether today’s ingredients, suppliers and kitchen practices have been checked.
