To determine whether a commercial appliance can be installed at a particular property, start with the local authority having jurisdiction (AHJ)—the agency or official enforcing the applicable codes. Ask which code editions and local amendments apply, what reviews and permits are required, and which product-certification agencies the AHJ accepts. Then verify the exact appliance model, its intended use, its nameplate ratings, and its installation instructions against the proposed electrical supply, water service, and drainage. A certification mark is important evidence, but it is not a blanket approval for every site or installation.
What does “meets local requirements” mean?
There is no single nationwide yes-or-no answer based only on an appliance’s brand, a certification logo, or a model-code edition. Requirements depend on the installation address, the use and location of the equipment, applicable locally adopted codes and amendments, and the AHJ’s interpretation. The relevant reviewers may include building, electrical, plumbing, mechanical, fire, and—in food-service settings—health or sanitation officials. Which offices are involved depends on the project and the appliance.
For a commercial kitchen, the review can include more than whether a plug fits or a water hose connects. Officials and trades may need to establish that the exact product is certified for its intended application, its electrical ratings match the planned circuit, its water and waste connections are acceptable, and its location and installation follow the manufacturer’s instructions and local rules.
Keep the scope of any answer precise. Approval of a product or installation in one jurisdiction, or for one use, does not prove that a different AHJ will accept it. UL’s commercial cooking guide describes third-party certification as a common code requirement, but that is UL’s guidance—not a guarantee that every jurisdiction has identical rules. Which local office should you contact first?
Contact the building department for the property’s installation address and ask which office handles electrical and plumbing review. Describe the project accurately: the appliance category, its proposed location and use, and whether it is new equipment, a relocation, or a replacement. For cooking equipment, ask whether mechanical, fire, ventilation, or health review is also required. Do not assume that a prior installation or a contractor’s experience in another city establishes the rules at this address.
Ask the AHJ for the information that will determine the approval path:
- Which editions of the applicable building, electrical, plumbing, mechanical, and fire codes are currently adopted, and what local amendments apply?
- Does this equipment or project require a permit, plan review, or both? What documents must be submitted?
- Which inspections are expected, and in what order?
- Which third-party certification agencies and marks does the AHJ accept for this appliance category and intended use?
- Are there local product-approval or listing procedures in addition to certification by a testing organization?
- For food-service equipment, which agency addresses sanitation, water supply, and waste disposal?
Request the office’s current guidance and, where possible, a written response tied to the project address and specific model. A code book or model-code reference can help frame questions, but it cannot confirm which edition a jurisdiction has adopted or whether it has amended the text.
Why model-code references are not local approval
The 2021 International Mechanical Code (IMC) provides a useful reference point, not proof of the rules at an unspecified site. Its Chapter 3 states that electrical wiring, controls, and connections to equipment and appliances regulated by that code must be in accordance with NFPA 70. It also directs potable-water supply and building-drainage connections for covered equipment to the International Plumbing Code. Read the provisions in context at the 2021 IMC, Chapter 3: General Regulations, then ask the local AHJ which requirements actually govern the project.
What appliance information should you collect?
Before asking for a model-specific determination, identify the appliance precisely. A brand name or product family is not enough: variants may have different electrical ratings, connection arrangements, or certification scope. Photograph the permanent nameplate and save the installation documentation for the exact model being considered.

- Manufacturer, exact model number, and serial number, if available.
- Certification agency and mark, plus any file, control, or other identification shown on the label.
- Electrical ratings shown on the nameplate, including voltage, amperage, and phase, along with other equipment-specific ratings.
- Water-supply and drain requirements stated on the appliance or in its manual.
- Installation clearances, connection instructions, and any conditions or restrictions stated in the manual or certification record.
- The intended commercial application and the proposed room or installation location.
The 2021 IMC’s equipment-label provisions identify the manufacturer, model, serial number, approved-agency mark, and ratings—including electrical volts, amperes, and phase—as relevant label information for equipment covered by that code. This makes the nameplate a key starting point; it does not, on its own, establish that a product or site installation complies. 2021 IMC, Chapter 3
If equipment has not yet been purchased, ask the supplier or manufacturer for a clear photograph of the label on the exact proposed model, its installation manual, and the applicable certification record. Verify that the delivered unit matches those documents before it is connected. If the label is missing, illegible, or inconsistent with the paperwork, pause the review and ask the manufacturer and AHJ how to resolve the discrepancy.
How do you verify certification and intended use?
Search the certification agency’s official directory using the exact model number. Confirm that the record identifies the appliance or equipment category and covers the intended commercial application. A mark on a brochure, a similar model’s directory entry, or a general statement that a product is “tested” does not answer whether the specific unit is certified for the proposed use.
For UL-certified commercial cooking equipment, UL identifies Product iQ as a way to find equipment records. UL states that access to the free database requires a one-time registration. A Product iQ record can help establish what UL’s directory says about a product; it does not establish certification by a different agency, acceptance by the local AHJ, or approval of the complete site installation. After checking the directory, ask the AHJ whether it accepts that agency and mark for the equipment and application. This distinction matters because an official evaluates a product under the rules enforced in that jurisdiction. A Los Angeles Department of Building and Safety bulletin illustrates that local approach: it addresses product listing and approval requirements for plumbing and mechanical products and was effective January 1, 2023. What a certification record can—and cannot—answer
- It can help confirm: whether the exact model appears in that agency’s directory and what category or scope the agency associates with the record.
- It does not by itself confirm: that the local AHJ accepts the agency, that the certification covers a different use or configuration, or that the proposed wiring, plumbing, location, and installation comply.
- It cannot replace: the appliance’s model-specific installation instructions, local permit or plan review, or required inspections.
How do you check electrical compatibility?
Compare the nameplate and installation instructions with the electrical supply proposed for the appliance. At minimum, the review needs to address voltage, amperage, phase, and the connection requirements—not simply plug shape or whether an adapter appears to fit. A connection that can be physically made is not evidence that the circuit is suitable.

The design review may need to account for the wiring method, disconnecting means, grounding and bonding, overcurrent protection, and any special conditions stated in the listing or installation instructions. The exact requirements depend on the equipment and the locally adopted rules; do not infer them from the general information in this guide.
Section 301.10 of the 2021 IMC states: “Electrical wiring, controls and connections to equipment and appliances regulated by this code shall be in accordance with NFPA 70.” That reference links covered equipment connections to NFPA 70, but it does not specify the circuit design for an unidentified appliance or establish which edition or amendments a particular jurisdiction enforces. The local electrical code, the appliance documents, and the electrician’s and AHJ’s review determine the project-specific answer. 2021 IMC, §301.10
Electrical questions to resolve before installation
- Do the site’s available supply and the appliance’s stated voltage and phase match?
- Has the circuit been designed for the appliance’s nameplate amperage and connection type under locally adopted requirements?
- Do the manufacturer’s instructions or certification record specify a wiring method, disconnect, or other installation condition?
- Who will install the circuit, and which inspection or approval is required before the equipment is energized?
If any rating is absent, contradictory, or unclear, do not fill the gap by guessing from a different model. Ask the manufacturer for model-specific documentation and have the electrician or AHJ resolve the issue before purchase or connection.
How do you check water supply and drainage?
Review every water and waste connection shown in the appliance’s instructions, not just the inlet hose. Establish what potable-water supply the unit needs and how its discharge must connect to the building drainage system. The manual may specify connection size and pressure, treatment, backflow protection, a direct or indirect waste arrangement, temperature limits, an air gap, or sanitation conditions. Do not assume that every appliance uses every one of these arrangements; use the exact model’s instructions and local interpretation.

Section 301.11 of the 2021 IMC states: “Potable water supply and building drainage system connections to equipment and appliances regulated by this code shall be in accordance with the International Plumbing Code.” This is a model-code reference for covered equipment, not a determination that the 2021 IMC or a particular plumbing-code edition applies at the site. UL’s commercial cooking guide also advises consulting the AHJ on sanitation, water supply, and waste disposal. Plumbing questions to resolve
- What supply connection, water conditions, and any treatment or protective devices does the manufacturer specify?
- Does the appliance require a particular drainage arrangement, discharge temperature, or air gap?
- Are there local sanitation or health-department requirements for this appliance and its use?
- Which licensed plumbing professional and AHJ reviewer will confirm the connection design and inspection requirements?
Have the plumber compare the model-specific instructions with the proposed water and drainage design and the locally adopted plumbing rules. If the manual and a local direction appear to conflict, ask the AHJ and manufacturer to resolve the issue before rough-in; changing connections after installation can require rework and may delay inspection.
How should you compare two appliances?
Compare exact models against the same site conditions and local review criteria. A lower purchase price or a familiar connection does not settle whether a unit is suitable for the intended use. Record the evidence side by side and mark unresolved items as “not confirmed” rather than assuming the options are equivalent.

Use the comparison to narrow the decision, not to substitute for approval. If one model has a clear certification record and complete installation documentation while another does not, that affects how much remains to be verified; it does not automatically determine the AHJ’s decision.
What should be in the project decision file?
Keep the records together so the owner, designer, contractor, installer, and inspectors are working from the same model identity and assumptions. A complete file should include:

- Installation address, occupancy or use, equipment category, intended application, and proposed location.
- Nameplate photographs and exact model documentation, including the installation manual.
- The official certification-directory result and any model-specific listing or approval information.
- Written notes or correspondence from the AHJ identifying applicable code editions, amendments, accepted agencies, and review requirements.
- Electrical and plumbing design information prepared by the relevant trades.
- Permit, plan-review, and inspection records, including final sign-off where required.
Preserve the record for the installed unit rather than merely for the product family. If the unit changes, or the site design changes after review, check whether the certification scope, connections, permits, and prior determinations still apply.
Common mistakes that delay approval
Assuming a mark means universal permission
A certification mark is evidence to verify, not an all-jurisdiction installation approval. Confirm the exact model and scope in the agency’s records, then ask the AHJ whether it accepts that agency for the intended use.
Checking only the plug or connector
Physical fit does not establish that the voltage, amperage, phase, circuit design, or plumbing arrangement is appropriate. Compare the ratings and installation instructions with the site design and have the appropriate licensed trade review it.

Applying a model code without checking local adoption
The 2021 IMC is a reference source; local adoption dates and amendments can differ. Ask the enforcing agency which text applies rather than treating an edition cited in a guide as current at the project address.
Using paperwork for a similar model
Certification, ratings, and installation conditions can be model-specific. Match the directory record and manual to the exact model on the nameplate, and resolve any discrepancy before equipment is connected.
Waiting until after purchase or rough-in to ask
If the AHJ does not accept the agency, the intended use falls outside the certification scope, or the connections do not match the site, the project may need a different product or a revised design. Check those points while the equipment and layout can still be changed.
Practical approval sequence
- Define the project: Record the address, use, appliance category, intended application, location, and whether the equipment is new, relocated, or replacement.
- Map the review: Contact the local building department to identify electrical and plumbing reviewers and determine whether mechanical, fire, ventilation, or health review also applies. Ask about adopted editions, amendments, permits, submittals, and inspections.
- Identify the exact unit: Obtain a nameplate image, exact model, installation manual, ratings, and water and drain requirements.
- Check certification: Search the certifier’s official directory by model, confirm the category and intended-use scope, and ask the AHJ whether it accepts that agency and mark.
- Check site connections: Have the electrician and plumber compare the appliance documents with the planned electrical supply, potable-water service, drainage, and local rules.
- Resolve uncertainties: Obtain manufacturer and AHJ clarification for missing ratings, conflicting instructions, unclear scope, or nonstandard connections before purchase, rough-in, or connection.
- Complete approvals: Submit required documents, obtain permits and inspections, and retain the AHJ’s decisions and final records with the appliance documentation.
This sequence is applicable as a verification process, but the specific code provisions, certification categories, permits, and inspections must be established for the appliance and location. UL’s cited materials focus on commercial cooking and food-service equipment; for another commercial appliance class, identify the relevant code and certification category rather than assuming the cooking-equipment guidance governs it.
