Spent-grain water filters work mainly by adsorption: dissolved molecules or ions attach to the surface and chemical functional groups of brewer’s spent grain (BSG) or a material made from it. Laboratory studies have shown capture of selected dyes, heavy metals, pharmaceuticals and antibiotics. They have not shown that a generic spent-grain filter makes water safe to drink, removes pathogens, or eliminates every chemical contaminant. Performance changes with the pollutant, pH, competing dissolved substances, grain processing, contact time and flow.

The phrase “spent-grain filter” covers very different media—raw grain, processed cellulose, biochar and activated carbon. A capacity measured for one of these cannot be treated as a specification for the others or for a household cartridge.

What a “spent-grain filter” actually is

Brewer’s spent grain is the wet solid left after mashing malted grain during beer production. It contains cellulose, hemicellulose, lignin, proteins and mineral components. Those constituents provide pores and chemical groups that can interact with dissolved contaminants. Researchers have used the residue in several forms:

Material form What researchers do to it Evidence represented in the studies
Raw or minimally processed BSG Wash, dry, grind and use the grain directly as a biosorbent Dye and selected-metal uptake in batch or column experiments
Modified cellulose Recover the fiber-rich fraction from spent-grain processing and convert it into a cellulose adsorbent High reported capacities for lead and manganese under controlled tests
Biochar Heat the residue in limited oxygen to create a porous carbon material Removal studies for antibiotics and other pharmaceuticals
Activated carbon Further activation increases surface area and changes pore structure Spent-grain-derived carbon tested for pharmaceutical adsorption

These preparations differ in surface area, pore size, ash content and functional groups. “Spent grain” therefore does not identify one standardized filter medium.

How adsorption removes pollutants

Surface charge attracts some contaminants

Water molecules do not simply pass through a sieve of grain particles. Pollutants diffuse to the media surface and bind there. Attractions can be electrostatic, while other interactions involve hydrogen bonding, electron donation or acceptance, pi interactions between aromatic structures, ion exchange or surface complexation.

In a 2026 study of minimally processed BSG, the surface was reported as negatively charged at pH 6.8. That favored the cationic dye Safranin T through electrostatic attraction. The same surface captured the anionic dye Congo Red much less effectively; the authors associated its retention with localized pi interactions and hydrogen bonding rather than a strong charge attraction. The reported maximum capacities—30.62 mg/g for Safranin T and 1.36 mg/g for Congo Red—belong to that material and test design, not to all BSG filters. Read the 2026 dye study.

pH changes both the pollutant and the media

Changing pH can alter the charge on grain functional groups and the electrical form of a dye or metal ion. A 2020 biosorption study found its best experimental condition for methylene blue at pH 11 and for tartrazine at pH 2. Equilibrium was reported after about 240 minutes for methylene blue and 300 minutes for tartrazine. The mechanisms discussed included electrostatic interactions, electron donor/acceptor interactions, hydrogen bonds, pi interactions and dye aggregation. A filter optimized for one pH cannot be assumed to work equally well at another. See the methylene-blue and tartrazine study.

Ion exchange and complexation matter for metals

Metal ions can exchange with ions already associated with the biomass or form complexes with oxygen-, nitrogen- or phosphorus-containing groups. A 2019 study reported the affinity order Mn≈Zn<Ni<Cd<Cu<Pb for its spent-grain biosorbent. It also found that other cations restricted sorption, showing why a single-metal solution can overstate performance in real water. After 16 sorption–desorption cycles, the study reported loss of functional-group sorption capacity. Read the 2019 heavy-metal study.

A 2026 fixed-bed study using model waters tested nickel, cadmium and lead and found the strongest affinity for lead in its reported runs. The authors proposed that poorly soluble lead phytate formed through surface complexation. That is a proposed mechanism for those experiments, not a generally settled explanation for every BSG medium. See the fixed-bed metals record.

Competing solutes occupy binding sites

Binding sites are finite. Calcium, magnesium, sodium and other dissolved ions can compete with a target metal; dissolved organic matter can coat surfaces or compete for carbon pores. Consequently, results in buffered or distilled water often exceed results in tap water, wastewater or a mixture of contaminants.

What spent-grain materials have captured

The table separates the pollutant, the material and the test context. Reported capacities are maximum values from particular experiments, not flow-rate ratings or predictions of how many liters a cartridge can treat.

Pollutant or class Spent-grain material and study context Reported result Important qualification
Safranin T (cationic dye) Minimally processed BSG; 2026 equilibrium study 30.62 mg/g maximum adsorption capacity Measured under that study’s pH, dose, concentration and equilibrium conditions
Congo Red (anionic dye) Minimally processed BSG; same 2026 study 1.36 mg/g maximum adsorption capacity Much lower than Safranin T in that experiment; charge and molecular interactions differed
Methylene blue and tartrazine Raw residue biosorption study Best reported pH: 11 for methylene blue and 2 for tartrazine; equilibrium about 240 and 300 minutes, respectively Separate optimum conditions show that dye chemistry controls uptake
Congo Red and Malachite Green BSG in batch and continuous-flow systems Removal was studied in both modes Breakthrough occurred sooner with higher concentration or flow and a shallower bed
Nickel, cadmium and lead Raw BSG in metal sorption studies, including a 2026 fixed-bed model-water study Lead showed the highest affinity in the 2026 reported tests; the 2019 affinity order was Mn≈Zn<Ni<Cd<Cu<Pb Other cations reduced uptake; results were not a drinking-water validation
Lead and manganese Processed cellulose made from a fiber-rich spent-grain stream 272.5 mg/g for lead and 52.9 mg/g for manganese These are capacities for a modified cellulose adsorbent, not raw grain, and cannot be compared directly with the dye values
Carbamazepine Spent-grain-derived biochars and activated carbons Adsorption was demonstrated in a 2020 study Derived carbon media, not loose raw BSG in a kitchen filter
Sulfamethoxazole, trimethoprim and ciprofloxacin Spent-grain-derived biochar in batch and fixed-bed tests Adsorption was stronger in buffered distilled water than in wastewater and mixed-antibiotic solutions Dissolved organic matter and competition reduced performance; microwave regeneration improved trimethoprim adsorption over cycles in the reported work

The cellulose results come from a 2022 study that specifically produced an adsorbent from spent-grain processing waste. Other metal ions in tap water negatively affected adsorption. Read the cellulose adsorbent study. The pharmaceutical and antibiotic findings likewise concern engineered carbon materials, not a claim that raw grain removes medicines from household water. See the carbamazepine carbon study and the 2025 antibiotic fixed-bed study.

Why laboratory capacity is not a household filter rating

Batch tests measure contact under still conditions

In a batch experiment, a known mass of adsorbent is mixed with a known contaminant concentration until the concentration stops changing. The resulting capacity describes that dose, concentration, pH, mixing time and temperature. A household cartridge has continuously changing water chemistry and a limited contact time, so the same number cannot predict its treated volume.

Columns eventually break through

In a fixed-bed column, water flows through a packed bed. At first, the outlet may contain little of the target pollutant. As sites near the inlet fill, a mass-transfer zone moves through the bed and the pollutant appears at the outlet; this is breakthrough. The 2019 Congo Red and Malachite Green work found faster breakthrough under higher influent concentration and flow and with a shallower bed. Bed depth, particle size, empty-bed contact time and flow distribution all affect service time. Review the batch and continuous-flow dye study.

Regeneration can change the media

Desorption may restore some sites but can also damage functional groups or leave concentrated waste that needs controlled disposal. The 2019 metal study observed capacity loss after 16 sorption–desorption cycles. In a separate antibiotic-biochar study, microwave regeneration improved trimethoprim adsorption over repeated cycles. Those results cannot be combined into a universal replacement interval or a standard home-maintenance schedule.

Can a spent-grain filter make drinking water safe?

Current studies do not establish that. They show removal of selected chemicals under specified laboratory or model-water conditions. They do not demonstrate reliable removal of bacteria, viruses, protozoa, nitrate, pesticides, solvents, salts or every pharmaceutical. They also do not establish that the media itself will not release organic matter, metals or microbes as it ages.

A safe-water device needs validated claims for its exact construction, contaminant, operating range, flow rate and replacement schedule. It also needs hygienic handling: wet grain is biodegradable and can support microbial growth if it is not properly processed and kept dry. A loose laboratory sorbent placed in a bottle is not equivalent to a certified point-of-use treatment system. Do not use experimental BSG media as the sole barrier for water that may contain pathogens or hazardous concentrations of chemicals.

How to evaluate a proposed spent-grain filter

  1. Identify the medium. Ask whether it is raw BSG, modified cellulose, biochar or activated carbon. A claim that only says “spent grain” omits a decisive performance variable.
  2. Name the target contaminant. Look for data on the exact compound or ion, not a broad statement such as “removes toxins.” Dye results do not prove metal or pathogen removal.
  3. Check the water matrix. Distilled, buffered, tap, brackish and wastewater tests are not interchangeable. Find out whether competing ions or dissolved organic matter were present.
  4. Match the operating mode. Batch contact time does not specify a safe flow rate. For a column, require bed depth, particle size, empty-bed contact time, influent concentration and a defined breakthrough endpoint.
  5. Read the pH range. If the test worked at pH 2 or 11, that does not mean untreated household water will produce the same result.
  6. Check regeneration and disposal. A regeneration method must address both performance loss and disposal of the concentrated contaminant solution. Cycle counts from one pollutant cannot set a schedule for another.
  7. Demand independent validation for drinking use. A research paper can establish a promising adsorption mechanism without certifying a consumer product or finished-water quality.

What the evidence supports—and what it does not

  • BSG surfaces can bind selected organic dyes and metal ions, and engineered BSG-derived carbons can bind some pharmaceuticals and antibiotics.
  • Surface charge, functional groups, pH, contact time, flow and competing solutes determine the result.
  • Higher capacity numbers from modified cellulose or activated carbon cannot be used to rank raw grain, biochar and cellulose universally.
  • Breakthrough and regeneration data show why a filter needs an operating envelope and replacement plan, not just a headline milligrams-per-gram figure.
  • No cited study establishes a certified, universal household spent-grain filter or safe finished drinking water.

The Bottom Line

Spent grain is a promising, low-cost adsorbent platform rather than a proven all-purpose water filter. It can capture particular dyes, metals and pharmaceutical compounds when the material and water chemistry are carefully matched, but experimental capacities and regeneration results should not be treated as household safety specifications.
