For most alcohol-free draught beers, measure the liquid at the keg outlet or faucet and aim for 36–38°F (about 2–3°C). The Brewers Association also recommends that every keg is at or below 38°F when served. That is a liquid-temperature target, not a substitute for the beer’s own label or technical sheet: the brewer’s serving temperature, freshness window and dispense instructions take precedence. Keep kegs cold from delivery, prevent temperature swings, verify beer temperature with a calibrated liquid thermometer, and date every connection.
Start with the right temperature target
Alcohol-free beer does not have one universal serving temperature. Recipes, carbonation levels, filtration, pasteurisation, package format and dispense hardware differ between products. If the supplier gives a serving range, use it. If no product-specific value is supplied, the Brewers Association’s draught benchmark is a liquid reading of 36–38°F (2–3°C), with the keg at or below 38°F at service. These figures come from its 2019 Draught Beer Quality Manual.
Measure the beer itself. A cold-air display in a cellar, refrigerator or keg cabinet can look satisfactory while the liquid in a warm keg, long line or poorly cooled python is above target. Take a reading at the faucet or keg outlet with a calibrated liquid thermometer, and record it during opening checks and whenever staff investigate foam or flavour changes.
| Reading or rule | What it means | Qualification |
|---|---|---|
| 36–38°F (2–3°C) | General liquid draught-beer serving benchmark | Brewers Association, 2019; use the individual brewer’s instruction when supplied |
| 38°F (about 3°C) or below | Recommended maximum keg temperature at service | Brewers Association, 2019; measure the keg or liquid, not only room air |
| 11–13°C (52–56°F) | Cellar-temperature recommendation for beer operations | British Beer & Pub Association, 2022 guidance; this ambient recommendation is not the same as the liquid serving target |
| 0–5°C | General refrigerator range in UK food-safety guidance | UK Government guidance published in 2017; product instructions and validated controls still apply |
Why cellar air and beer temperature are different
A cellar is a room, while a draught system is a heat-transfer path. The British Beer & Pub Association’s 11–13°C recommendation describes cellar management; it does not mean beer should be poured at 11–13°C. Kegs may be held in a refrigerated cabinet, a cooled store or another validated arrangement, and an in-line chilled python can cool beer on its way to the bar where the installation is suitable. The UK Design and Maintenance Guide 18 states that a cellar storing kegs, real ales and bottled drinks should be cooled so products are stored and dispensed at their optimum service temperature.

Use the layout that the supplier and equipment manufacturer specify. Keep the route from keg to faucet as short and consistently cold as practical, insulate or chill lines where the system requires it, and avoid placing a keg beside a heat source or in a frequently opened doorway. A keg that warms during delivery can continue producing foam after it is moved into a cold room; allow it to chill fully before tapping.
Receiving and chilling an alcohol-free keg
Make receiving a controlled handoff rather than putting every delivery straight on tap. A simple written procedure prevents staff from guessing about use-by dates, temperature or coupler compatibility.
- Inspect the delivery. Check the keg identity, package condition, best-before or use-by marking, storage instruction and any technical sheet. Reject or quarantine a damaged, leaking or unidentifiable keg until the supplier resolves it.
- Record arrival details. Note the delivery date, lot or batch reference, stated storage range and person receiving it. This creates traceability if a flavour or dispense problem appears later.
- Move it promptly into the approved cold store. Do not leave an alcohol-free keg on a loading dock, in a warm cellar or in direct sunlight. Keep it upright and protect the valve and coupler from contamination.
- Allow warm product to chill through. The outside of a keg can feel cold before the liquid centre has reached service temperature. Follow the supplier’s chilling time or verify the liquid temperature before connection.
- Check the equipment match. Confirm the coupler, gas connection, line material, cooler capacity and faucet are approved for that product. Alcohol-free does not mean every keg uses the same connector or pressure.
- Measure before tapping. Use a calibrated liquid thermometer at the keg outlet or faucet. Record the result and correct the cooling problem before serving if the reading is above the product limit.
- Date the connection. Write the connection date and keg identity on the line board or digital log so stock can be rotated within the brewer’s freshness window.
Keeping an opened keg fresh
There is no defensible universal answer to “How long does an opened keg of alcohol-free beer last?” The Brewers Association defines a draught beer’s freshness window according to the brewer, and the period varies by product. The supplier’s keg label or technical specification controls. Do not promise customers a fixed number of days unless the manufacturer has validated that period for the exact beer, package and dispense conditions.

Freshness depends on more than the calendar. Record the connection date, keep the keg and lines within the specified temperature range, use the stated gas and pressure setup, and rotate stock so older connected kegs are served first. If a keg passes its stated limit, or the beer develops a sour, stale, sulphurous or otherwise abnormal aroma or flavour, stop service and follow the supplier’s disposition procedure rather than trying to mask the fault.
Controls that protect the freshness window
- Keep the cellar clean, dry, ventilated and free of strong odours; beer can pick up environmental smells.
- Remove syrup, beer and cleaning spills immediately so they do not attract pests or contaminate equipment.
- Keep couplers, faucets, drip trays and line connections protected from dust and splash.
- Use first-connected, first-served rotation unless a product-specific instruction says otherwise.
- Log temperature, connection date, cleaning, faults and corrective action for each line.
Setting up the dispense system
Use the brewer’s dispense sheet for gas type, pressure, temperature, line length and restriction. There is no single pressure that suits every alcohol-free beer. Changing pressure without checking the product specification can create either excessive foam or a flat pour, and can alter carbonation over time.
- Confirm the keg is at service temperature and the cooler is operating normally.
- Fit the correct coupler and inspect seals, probe and gas fittings for damage or leaks.
- Set gas pressure and gas type to the supplier’s stated values. Make one controlled adjustment at a time.
- Check that the line is the specified internal diameter and length, with no kinks, warm loops or trapped gas.
- Open the faucet fully during a pour. A partially opened faucet increases turbulence and can worsen foam.
- Pour a test measure into a clean, compatible glass. Observe the first and second pours, because a warm or recently cleaned line may behave differently.
- Record the final temperature, pressure and any adjustment so another shift can reproduce the working setup.
Diagnosing foaming and poor pours
Foam is a symptom, not a diagnosis. Check temperature first, then work through the system without making several changes at once.

| Symptom | Likely checks | Corrective action |
|---|---|---|
| Foam from the first pour after a quiet period | Warm faucet, tower, python or exposed line | Verify liquid temperature at the faucet, improve line cooling or insulation, and discard the warm test portion if the product instruction requires it |
| Every pour is aggressively foamy | Keg above limit, pressure mismatch, incorrect gas, turbulent restriction or blocked line | Recheck the brewer’s temperature and pressure settings, inspect the line and coupler, and adjust only within approved guidance |
| Foam worsens during the shift | Cooling capacity, door opening, warm replacement keg or temperature swing | Measure the keg and faucet again; restore stable cooling before changing pressure |
| Beer pours slowly or intermittently | Empty keg, closed gas valve, blocked coupler, kinked line or frozen/restricted section | Follow the equipment fault procedure, isolate the cause and sanitise any opened connection as required |
| Large bubbles, flat taste or rapid carbonation loss | Gas leak, incorrect pressure, poor seal or product outside specification | Leak-test connections, compare settings with the technical sheet and contact the supplier if the beer remains abnormal |
| Off-aroma or sour flavour | Dirty line, contaminated faucet, expired freshness window or product fault | Stop serving that line, retain batch details, clean and sanitise with compatible chemicals, and escalate to the supplier |
Glassware matters too. Use clean glasses free of detergent film, grease and lipstick. A dirty or warm glass can collapse head retention and make a correctly dispensed beer appear faulty. Keep glass-rinsing and drying practices consistent with the pub’s hygiene procedure.

The BBPA Line Cleaning Guidelines classify beer as food under the Food Safety (General Food Hygiene) Regulations 1995. Alcohol-free beer therefore needs the same disciplined hygienic management as other draught beverages. Cleaning is not a substitute for refrigeration, and refrigeration cannot compensate for a contaminated line.
- Set a documented cleaning frequency that meets the product supplier’s instructions and the pub’s HACCP plan.
- Isolate the keg, depressurise safely and use cleaning chemicals compatible with the line, coupler, seals and faucet.
- Flush the correct volume of cleaning solution through the complete line, not just the faucet tip.
- Use suitable brushes on removable parts; replace damaged or permanently soiled components.
- Rinse until the chemical is removed according to the chemical manufacturer’s instructions.
- Sanitise, reassemble with clean hands and verify the first pour before returning the line to service.
- Record date, line, chemical, concentration or test result, staff member and corrective action.
Never mix cleaning chemicals, and do not assume a product approved for one dispense material is safe for another. If staff smell chemical residue, see persistent cloudiness or cannot achieve a normal pour after cleaning, keep the line out of service and investigate.

Food-safety and compliance controls in the UK
Commercial food businesses in the UK need a HACCP-based food-safety management system. For England, the Food Safety and Hygiene (England) Regulations 2013 set 8°C as the general chilled-food ceiling unless an evidenced alternative applies. General UK food-safety guidance commonly recommends refrigerators at 0–5°C. Those figures do not create a new alcohol-free-beer shelf life: the beer’s label, supplier instruction and validated handling method remain the quality controls for that product.
Food businesses must not recommend a storage temperature and shelf life without a well-founded scientific assessment. In practice, keep records that show what was measured and what staff did when a limit was missed:
- refrigerator and cellar checks, including date, time and instrument;
- keg or faucet liquid-temperature readings;
- delivery condition and chilling time;
- connection date and batch identity;
- line-cleaning and sanitising records;
- gas, pressure and equipment faults;
- product withdrawals, waste and supplier notifications.
Use a calibrated thermometer and verify it at the interval required by the pub’s food-safety system. If a reading is outside the approved range, label the affected keg, prevent service where necessary, correct the cooling or dispense fault, and document the decision.

Choosing alcohol-free beer for a pub system
Before ordering, compare the product specification with the equipment already installed. Two alcohol-free beers can require different handling even when both are sold in similar kegs.
| Comparison point | Question for the supplier | Why it matters |
|---|---|---|
| Serving temperature | What liquid-temperature range should the beer reach at the faucet? | Sets the target used for cooling and troubleshooting |
| Package format | Is it supplied in keg, bottle, can or another format? | Determines storage, coupler and service method |
| Pasteurisation or filtration | Is either process stated, and are there handling limits? | May affect freshness instructions; do not infer treatment when it is not declared |
| Carbonation and dispense | What gas, pressure, line restriction and faucet setup are required? | Prevents foaming, flat pours and carbonation drift |
| Freshness window | How long is the keg suitable after connection under specified conditions? | Provides the only reliable opened-keg rotation limit |
| Equipment compatibility | Which coupler, cooler, line material and cleaning products are approved? | Avoids leaks, damage and contamination |
A practical shift checklist
Post a short checklist beside the cooler and line board. It should support, not replace, the full HACCP documentation.
- Confirm the keg identity, connection date and supplier freshness limit.
- Check refrigerator or cellar readings and inspect for spills, odours and pests.
- Measure liquid temperature at the faucet or keg outlet.
- Inspect coupler, gas, line and faucet for leaks, kinks or visible soil.
- Pour a test measure into clean glassware and assess appearance, aroma and carbonation.
- Record abnormalities and corrective actions before opening service.
- At close, protect the faucet, clean spill areas and verify that refrigeration remains on.
When to remove a keg from service
Take the keg or line offline when the product is past the brewer’s freshness window, has an unverified identity, has been held outside its approved conditions for an unknown period, or shows persistent off-flavour, abnormal aroma, contamination or dispensing behaviour. Do not extend life by relabelling, blending, repeatedly altering pressure or serving through an unclean line. Quarantine the product, preserve its batch and temperature records, clean the equipment as directed and ask the supplier for a disposition decision.

The most useful investment is measurement and repeatability: a reliable liquid beer thermometer, a compatible line-cleaning kit with brushes, and a simple log that ties temperature, connection date and cleaning to each keg. Those controls let staff serve alcohol-free beer cold without guessing, while preserving the product-specific limits that determine whether it is still fresh.
