There is no universal nutritional winner. “Plant-made meat,” fermentation-produced protein and animal-derived protein are broad categories, not single ingredients. The useful comparison is between specific products, using the same serving basis and checking protein quantity, amino-acid quality, digestibility, fibre, saturated fat, sodium, micronutrients, ingredients and the type of evidence behind each claim.

Fermentation also describes two fundamentally different routes. Biomass fermentation grows edible microorganisms, such as the fungal biomass used for mycoprotein. Precision fermentation uses microbes as production systems for specified proteins, such as selected milk or egg proteins. A 2026 laboratory comparison found product-specific differences between four mycoprotein meat analogues and corresponding animal-derived foods, but it does not rank every fermented protein, plant-based product or meat.

What the three protein categories actually mean

Before comparing nutrition, identify what was produced and what you are eating. The label “fermentation-produced protein” can refer to an entire edible microbial biomass or to a purified protein made by engineered microbes. Those products should not be treated as interchangeable.

Plant-made meat proteins

Plant-based meat analogues use crop proteins such as soy, pea or other plant sources in a formulated food designed to resemble meat. Manufacturers may blend proteins, add vitamins and minerals, and adjust fats, binders, flavourings and texture. Consequently, “plant-made meat protein” is not a standardized ingredient category. Two burgers can have very different protein amounts, amino-acid profiles, sodium levels and ingredient lists.

The finished product, rather than the source crop alone, determines what a consumer eats. A product can contain a high-protein plant isolate but also substantial oil, starch, salt or other ingredients. Reviews of plant-based meat identify formulation and fortification as ways to improve nutritional content, while emphasizing that composition varies across products.

Biomass fermentation

In biomass fermentation, microorganisms are grown as food. Mycoprotein is a familiar example: fungal biomass is produced in a submerged fermentation process, harvested and processed into an ingredient or food. The resulting structure can contribute both protein and fibre, but commercial products usually contain additional ingredients and are not simply a bowl of unprocessed microbial cells.

Precision fermentation

Precision fermentation uses microbes to manufacture a specified protein. The target may be identical or similar to a protein traditionally obtained from an animal, such as a selected milk or egg protein, or a component used in a meat analogue. After production, the desired protein is recovered and used as an ingredient. This is different from eating the whole microbial biomass: the nutritional and functional properties depend on the particular protein, purification and final recipe.

Animal-derived proteins

Meat and other animal foods are also variable. Species, cut, fat content, cooking and processing change the amount of protein and other nutrients in a serving. “Meat protein” therefore needs a defined comparator, such as a stated product and serving size, rather than a generic assumption about all animal foods.

The comparison that matters: product, serving and evidence

Use a consistent method whenever you compare plant-based meat, fermentation-derived foods and animal products.

  1. Define the product. Record the exact food, brand-neutral product type, preparation state and serving size. A cooked patty and a dry ingredient cannot be compared fairly without accounting for water and cooking losses.
  2. Use one basis. Compare either the same labelled serving or the same weight, commonly 100 g. Keep that basis throughout the calculation.
  3. Separate protein grams from protein quality. The nutrition panel reports total protein; it does not by itself show how much is digested or whether indispensable amino acids meet a particular requirement.
  4. Read the whole panel. Include fibre, saturated fat, sodium, iron and other declared micronutrients, as well as calories.
  5. Check the ingredient list. Note protein blends, added oils, starches, binders, salt, fortification and allergens.
  6. Identify the evidence type. A label, an in-vitro digestion experiment, a short human feeding trial, an observational association and a long-term clinical outcome answer different questions.

This approach prevents a result about one recipe or one laboratory method from being presented as a ranking of an entire food category.

Protein quantity is not the same as usable protein

Protein grams are the first comparison, but they are only the starting point. A label value is total protein in the product. Digestible protein depends on how the food is broken down and absorbed, while amino-acid adequacy depends on the amounts and proportions of indispensable amino acids.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Protein-quality scores therefore must be named. A score generated from an in-vitro digestion model is not interchangeable with a label value, a human balance study or another scoring system. It is also inappropriate to convert a score from one product into a claim about every product made by the same production route.

The U.S. Food and Drug Administration states in its Statement of Policy: Foods Derived from New Plant Varieties: “From a nutritional standpoint, the amount and quality of total protein in the diet, rather than of any particular protein, is of greatest significance.” The guidance discusses assessment of introduced proteins in foods derived from new plant varieties, including case-by-case considerations of allergenicity, toxicity and dietary contribution. It is not a blanket approval or safety verdict for all plant-based, fermented or alternative proteins.

Amino acids and digestibility: what the 2026 comparison found

A 2026 in-vitro study compared four mycoprotein meat analogues with corresponding animal-derived counterparts. The analogues had slightly lower in-vitro digestible indispensable amino-acid scores overall, with differences between products. Some of the tested analogues did not meet the study’s reference protein-intake requirements for both children and adults.

Those findings have a narrow scope. They describe a laboratory comparison of four products and their selected comparators, not a universal ranking of all mycoprotein, all fermentation-produced protein, all plant-based meat or all meat. In-vitro digestion also does not reproduce every aspect of eating, digestion and absorption in people. The result cannot be transferred automatically to precision-fermented ingredients, which may consist of a specified protein rather than fungal biomass.

For a question such as “Is mycoprotein a complete protein?”, the accurate answer is product-specific. You need the amino-acid data, the scoring method and the serving context for the particular food. A general statement that mycoprotein is always complete, or always inferior to meat, goes beyond the evidence described here.

Other nutrients can change the practical choice

Protein quality is only one part of a meal’s nutritional profile. Compare the nutrients that accompany the protein.

Fibre

Fibre is naturally present in many plant-based formulations and can also occur in mycoprotein products. The amount varies substantially by recipe. It should be read from the product’s nutrition panel rather than inferred from the word “plant” or “fermented.”

Saturated fat and calories

Oil selection and quantity can move a meat analogue’s saturated-fat and calorie values up or down. An animal product’s fat content also changes with species and cut. Compare the stated values for the exact products instead of treating either category as nutritionally uniform.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Sodium

Salt and other sodium-containing ingredients are common formulation tools for savoury meat analogues, while processed animal foods can also contain substantial sodium. The sodium number on the label is the relevant comparison; the production method alone does not predict it.

Iron and other micronutrients

Some plant-based meat products are fortified, and the amount and chemical form of a nutrient can differ from that in an animal food. Record declared iron and other micronutrients, then consider the serving actually eaten. A product’s fortification is a recipe characteristic, not a guarantee shared by an entire category.

What the mycoprotein data do—and do not—show

A 2024 review reproduces typical values for Quorn mycoprotein per 100 g wet weight. The figures are company-provided unpublished averages from two fermentation campaigns, sampled in December 2023 and January 2024, and attributed in the review to Marlow Foods Ltd. They describe that material under that sampling and reporting arrangement, not every mycoprotein food.

These numbers illustrate why the basis and source matter. A finished mycoprotein burger may include oils, coatings, sauces or other ingredients that change the nutrition per serving. The table should not be used as a universal database for all fungal proteins or as a substitute for the label on the food being purchased.

How production changes the ingredient and processing questions

Plant formulations

Plant-based meat typically combines one or more protein ingredients with a fat phase, water, flavourings, colourants, binders and sometimes added vitamins and minerals. Processing can improve texture and palatability, but it also means that the nutritional result is a formulated product rather than the profile of an unprocessed legume.

Biomass fermentation

For mycoprotein, the organism, growth substrate, submerged fermentation conditions, harvesting and downstream processing all matter. Fermentation may alter digestibility, allergenicity or antinutritional factors in some contexts, but the direction and magnitude depend on the organism, substrate, process and final product. A fungal-biomass ingredient and a ready-to-eat meal made with that ingredient should not be treated as the same thing.

Precision-fermented ingredients

Precision fermentation is evaluated around the specified protein and the final food in which it is used. The microbe is a production host; the consumer may receive an isolated protein, not the host biomass. Claims about the nutrition of one precision-fermented milk or egg protein cannot be extended automatically to a precision-fermented meat analogue containing several other ingredients.

Animal foods

Animal-derived protein can arrive as a whole food or as an ingredient in a processed product. Cooking, curing, grinding and added ingredients change the final composition. The fairest comparison is therefore between defined products prepared in comparable ways.

Market context is not a nutrition verdict

The Good Food Institute reported in a September 2025 paper that fermentation-derived meat represented nearly 20% of plant-based meat sales in Western Europe, citing a market source. That figure is geographically limited and tied to the paper’s publication and source definitions. It is not a global share and should not be read as a current 2026 estimate for every market.

Market adoption can show that a production route is commercially significant; it does not establish protein quality, health effects or superiority to meat.

How to compare a product at the supermarket

  1. Start with the serving. Write down the grams of protein and the serving weight. If two products use different serving sizes, calculate protein per 100 g as a second view.
  2. Inspect the amino-acid claim. If a manufacturer or study cites a protein-quality score, record the named score and whether it came from an in-vitro, animal or human method.
  3. Compare the accompanying nutrients. Record calories, fibre, saturated fat, sodium, iron and any other nutrient relevant to your diet.
  4. Scan the ingredient order. Identify the primary protein sources and meaningful additions such as oils, starches, salt, binders and fortification.
  5. Check allergen information. Soy, wheat, milk, egg and fungal ingredients can have different relevance for different people. A precision-fermented protein that resembles an animal protein may still require its own allergen assessment.
  6. Match preparation. Compare cooked with cooked and account for sauces, buns, coatings and toppings if the question concerns the meal rather than the patty alone.
  7. Use the appropriate conclusion. Say that one product has more protein, fibre or sodium, or that a particular study found a difference. Do not turn that observation into a category-wide ranking.

What is known about health and safety

Plant-based meat reviews identify opportunities to improve nutrient profiles and emphasize the importance of processing and ingredients. For fermentation-derived meat, the Good Food Institute review notes that larger and longer studies are still needed to clarify health implications. Short-term composition or digestion findings cannot establish long-term disease outcomes.

Safety assessment is also case-specific. The FDA guidance cited above addresses foods derived from new plant varieties and introduced proteins, considering issues such as allergenicity, toxicity and dietary contribution. It should not be presented as a universal finding that every fermented food or alternative protein is safe, unsafe or nutritionally equivalent to meat.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

For consumers, the practical safeguards are straightforward: use the regulated product label, follow allergen information, consider the full dietary pattern and treat broad health claims cautiously when they are not supported by human outcome data.

A decision framework for common questions

“Are plant-based burgers as nutritious as beef?”

There is no category-wide yes-or-no answer. Compare the specific burger and beef serving for protein, the relevant amino-acid or digestibility evidence, fibre, saturated fat, sodium, iron, calories and ingredients. A plant-based burger can have a different mix of strengths and trade-offs from a particular beef product.

“How does fermentation-made protein compare with meat?”

First determine whether it is microbial biomass or a precision-made protein ingredient. Then compare the finished foods on the same basis. The 2026 mycoprotein study provides a product-specific in-vitro result; it does not establish that every fermentation-made protein has lower quality than meat.

“Is precision-fermented protein the same as eating microbes?”

No. Precision fermentation is intended to produce a specified protein, which is recovered for use as an ingredient. Biomass fermentation grows microbial material that itself becomes food. Their processing, composition and evidence requirements differ.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

“Does more protein on the label mean better protein?”

No. More grams indicate a larger total quantity, not necessarily better amino-acid balance or digestibility. Evaluate the amount and quality separately.

Bottom line for interpreting comparisons

Plant-made meat, biomass-fermented mycoprotein, precision-fermented proteins and animal-derived foods are production routes and product categories, not fixed nutritional rankings. Use the exact product label for composition, name the protein-quality method when one is reported, and keep laboratory findings within their tested scope. The strongest comparison is specific, serving-matched and transparent about what is known, what was measured in vitro and what remains uncertain in longer-term human health.
