Modified-atmosphere packaging (MAP) keeps fresh produce longer by allowing its own respiration to lower oxygen and raise carbon dioxide inside a carefully selected film package. The resulting atmosphere can slow respiration, ripening, moisture loss and some microbial decay—but only when the film, gas balance, commodity and temperature are matched correctly. MAP supplements refrigeration; it does not replace it.
What modified-atmosphere packaging is
Fresh fruits and vegetables remain biologically active after harvest. They consume oxygen, release carbon dioxide and water vapor, and continue processes such as ripening, softening and senescence. MAP places that produce in a package whose film controls how quickly gases and water vapor move through the package.
As the produce respires, oxygen inside the package falls and carbon dioxide rises. A suitable film lets enough oxygen enter and carbon dioxide leave to establish a stable atmosphere rather than an oxygen-starved, damaged one. The package also slows moisture loss and reduces exposure to outside contaminants. It is not sterile, and it cannot make spoiled produce safe.

How the gas balance develops
Passive MAP
In passive MAP, the package is sealed with air and the produce creates the atmosphere. Respiration consumes oxygen and generates carbon dioxide. Film permeability and the product’s respiration rate eventually balance those flows. Passive systems are common for ready-to-eat salads, herbs and other commodities whose respiration is predictable at the intended temperature.
Active MAP
Active MAP changes the starting atmosphere before sealing. Equipment may flush the package with a selected gas mixture, remove oxygen, or add absorbers and emitters that control oxygen, carbon dioxide, moisture or ethylene. Active systems can reach a target faster and more consistently, but they require validated equipment settings and closer quality control.
Why the same film does not work for every vegetable
The final atmosphere depends on produce mass, package surface area, film oxygen and carbon-dioxide transmission rates, temperature, relative humidity, produce maturity and respiration rate. A film that works for leafy greens may admit too little oxygen for a high-respiration vegetable. A package sized for 100 grams can become oxygen-deficient when filled with 250 grams.

Microperforations or films with differential permeability are often used when ordinary gas transmission cannot provide the needed balance. Perforations increase exchange, but their number and size must be controlled: too little exchange risks anaerobic conditions, while too much exchange produces little shelf-life benefit.

There is no universal MAP recipe. The following ranges are broad guidance, not settings that can be applied to every crop.

| Guidance | Oxygen range | Carbon-dioxide range | How to interpret it |
|---|---|---|---|
| FAO foundational post-harvest guidance | 2–5% | 8–12% | General target range reported in Food and Agriculture Organization guidance; the publication date is recorded in the FAO record, as listed there in 2026. |
| FAO combined-methods vegetable guidance | 2–8% | 5–15% | Broader range for systems combining packaging with other controls; commodity tolerance still determines the acceptable point within the range. |
These percentages describe the package atmosphere, not the composition of every commercial gas cylinder. A packer must validate the atmosphere at the product’s actual fill weight, film area, sealing method and temperature. The target should be based on measured product quality and safety, not on a generic label such as “breathable.”
Why MAP delays deterioration
Slower respiration
Lower oxygen and elevated carbon dioxide can reduce respiration. That slows the consumption of stored sugars and organic acids, delaying the loss of firmness, flavor and nutritional quality associated with senescence. The effect is temperature-dependent: warmer produce respires faster and can overwhelm the film’s designed gas exchange.

Delayed ripening and softening
Many fruits and vegetables produce or respond to ethylene, a plant hormone involved in ripening and aging. A suitable atmosphere can reduce ethylene production or action, delaying color change, softening and other ripening responses in susceptible commodities. Ethylene sensitivity varies substantially among species and cultivars, so an ethylene-control feature is not automatically useful for every package.
Less microbial growth and decay
Elevated carbon dioxide can inhibit some decay organisms and retard microbial growth. The package also reduces direct exposure to external contamination. However, MAP does not sterilize produce, destroy pathogens reliably or reverse decay that began before packing. Washing, sanitation, hygienic handling and temperature control remain necessary.
Moisture retention
A sealed film package limits water loss. Better humidity retention reduces wilting, shriveling and mass loss, especially in leafy vegetables and herbs. Moisture control is a design trade-off: excessive condensation creates a wet surface that can accelerate decay, while a film that is too dry can leave the product limp.

Which gases are used?
| Gas or control | Purpose in produce packaging | Important limitation |
|---|---|---|
| Oxygen | Kept low enough to slow respiration but high enough to prevent oxygen starvation and anaerobic off-odors. | The safe minimum differs by commodity, temperature and maturity. |
| Carbon dioxide | Raised to slow respiration and inhibit some decay organisms. | Excess concentrations can injure tissue, create off-flavors or cause discoloration. |
| Nitrogen | Used as an inert replacement gas in active flushing and to reduce oxygen in the starting atmosphere. | It does not by itself create the commodity-specific balance that respiration and film permeability must maintain. |
| Oxygen, carbon-dioxide, moisture or ethylene scavengers and emitters | Absorb unwanted gases or release substances that adjust the package environment. | Placement, capacity, humidity and timing must be validated for the package size and product load. |
Some newer systems use antimicrobial films, edible coatings or non-traditional gases. These approaches add functions beyond passive gas exchange, but they still require commodity-specific validation for sensory quality, regulatory compliance and safety.
How commercial MAP is designed and run
- Characterize the commodity. Identify species, cultivar, maturity, cut condition, respiration rate, ethylene sensitivity and tolerance of low oxygen or high carbon dioxide. Whole produce and cut produce can require different designs.
- Define the target atmosphere. Set an oxygen and carbon-dioxide range that preserves quality without causing physiological injury. Use published guidance as a starting point, then validate it under the intended distribution temperature.
- Select the film and package format. Specify oxygen and carbon-dioxide transmission, water-vapor transmission, seal performance, thickness, surface area and any microperforation pattern. A tray, pouch, lidded container and rollstock package can produce different gas dynamics even with similar film chemistry.
- Control the starting temperature. Pre-cool produce before sealing when the commodity and process require it. Warm product respires rapidly and can create an oxygen deficit before the package reaches equilibrium.
- Create the atmosphere. For passive MAP, seal the correct mass of produce in the validated film. For active MAP, flush with the specified gas mixture or use validated scavengers and emitters. Verify fill weight and seal integrity on every production run.
- Measure equilibrium and quality. Check oxygen and carbon dioxide in representative packages, along with temperature, condensation, firmness, color, odor, microbial indicators and mass loss. Measurements should cover the cold-chain temperature range, not only the packing room.
- Maintain the cold chain. Store and transport at the validated temperature and humidity. Record excursions; do not assume the package can compensate for prolonged warming.
Do produce bags extend shelf life at home?
A household produce bag can help when its film has been designed to regulate gas exchange and retain moisture for the specific type of produce. USDA Agricultural Research Service material documents suitable packaging films that allowed cilantro to remain fresh for up to 14 days. That is an example for cilantro under the tested conditions, not a promise for every herb or refrigerator.
Generic resealable bags are not interchangeable with validated MAP films. A completely airtight bag can trap moisture and deplete oxygen; a highly perforated bag may behave like ordinary storage. Household results also depend on how fresh the produce was at purchase, whether it was wet when packed, refrigerator temperature, fill amount and the presence of ethylene-producing items nearby.
For home use, remove visibly damaged pieces, chill produce promptly, avoid sealing dripping-wet leaves, leave the package in the refrigerator and follow any commodity-specific ventilation instructions. If the package develops a sour odor, slime, gas swelling or unusual discoloration, discard the contents rather than opening it and tasting the product.
How long can MAP keep produce fresh?
Shelf-life improvement varies from a small reduction in wilting to a substantial extension under controlled conditions. A single number cannot describe all produce, films and temperatures.

| Evidence | What it shows | What it does not show |
|---|---|---|
| Cilantro: up to 14 days with a suitable film | USDA Agricultural Research Service documentation of a measurable freshness benefit for one herb and an appropriate packaging film. | It is not a universal 14-day guarantee for other herbs, vegetables, films or refrigerator conditions. |
| Apples and pears: storage life can approximately double in controlled-atmosphere storage | FAO guidance reports a major benefit from controlled-atmosphere storage for some fruits. | Controlled-atmosphere rooms are not the same as a retail MAP pouch; the result cannot be transferred directly to household bags. |
Published gains should always be read with their conditions: product variety, starting quality, temperature, humidity, package design and the definition of “fresh.” Commercial specifications commonly state a validated use-by period rather than an atmospheric target alone.

Oxygen becomes too low
Symptoms can include fermented or sour odors, tissue browning, loss of firmness and liquid accumulation. Causes include excessive fill weight, an overly restrictive film, blocked perforations, warm product or a respiration rate higher than expected. Reduce the product load, increase gas exchange or select a film with higher transmission only after validation.
Carbon dioxide becomes too high
High carbon dioxide can injure tissue, create off-flavors or discolor produce. Check film permeability, package headspace and active-flush settings. A target suitable for one commodity may be toxic to another.
Condensation and decay increase
Temperature swings move water vapor onto the film and product surface. Improve pre-cooling and temperature stability, select an appropriate moisture-vapor transmission rate and avoid packing wet produce unless the process was designed for it.
Temperature abuse defeats the design
When a package warms, respiration accelerates while film properties and gas solubility change. The resulting atmosphere may leave the validated range, and microbial growth can accelerate. MAP is not a substitute for refrigeration or a safety control that permits time-temperature abuse.

Produce varies more than expected
Different cultivars, maturity levels, cut sizes and seasonal lots can respire at different rates. Revalidate when changing supplier, variety, package size, film, perforation pattern or distribution temperature.
MAP versus controlled-atmosphere storage
MAP modifies the atmosphere inside an individual package. Controlled-atmosphere (CA) storage regulates the atmosphere of a room or transport container with monitoring and gas-control equipment. CA can provide long storage periods for commodities such as some apples and pears, while MAP is suited to packaged units moving through retail and household handling.
| Feature | Modified-atmosphere packaging | Controlled-atmosphere storage |
|---|---|---|
| Where the atmosphere is controlled | Inside each sealed package | Inside a storage room, container or chamber |
| How it is created | Produce respiration plus film permeability; optionally gas flushing or scavengers | Room-level gas injection, removal and monitoring |
| Primary design variables | Film transmission, package area, fill weight, perforation and humidity | Room volume, gas-control equipment, loading density and continuous monitoring |
| Typical use | Retail pouches, trays, herbs, salads and prepared produce | Bulk storage and transport for selected commodities |
Choosing a MAP system
Ask these questions before buying film or equipment:
- Has the atmosphere been validated for this exact commodity, cultivar, cut condition and fill weight?
- What oxygen and carbon-dioxide transmission rates does the film provide at the intended temperature and humidity?
- Does the design require microperforation, gas flushing, scavengers or emitters?
- What temperature range was used to establish the shelf-life claim?
- How will oxygen, carbon dioxide, seal integrity, condensation and product quality be monitored?
- What happens when a package warms during loading, transport or a refrigerator failure?
- Are the package materials and any active components permitted for the intended food-contact use?
The safest choice is a documented system with commodity-specific instructions, measurable limits and a cold-chain procedure. “Breathable” marketing language without transmission data, temperature limits or a stated commodity fit is not enough to predict shelf life.
Quick Recap
Key takeaways
- MAP works by balancing produce respiration with controlled gas and moisture transfer through a film.
- Lower oxygen and higher carbon dioxide can slow respiration, ethylene-related ripening, senescence and some decay.
- Film properties, package size, fill weight, humidity and temperature determine the actual atmosphere.
- Gas targets are commodity-specific; broad FAO guidance includes 2–5% oxygen with 8–12% carbon dioxide and, for some combined methods, 2–8% oxygen with 5–15% carbon dioxide.
- A suitable film kept cilantro fresh for up to 14 days in USDA ARS documentation, while other produce can perform very differently.
- MAP does not sterilize produce and cannot compensate for poor sanitation or a broken cold chain.
