Paying by wallet does not normally mean money travels directly from your phone to the delivery rider. You select a wallet balance, saved card, another digital method, or cash at checkout. The platform and its payment providers handle the order charge, while any rider tip is a separate amount that the platform says should be passed to the rider in full on the services covered here.
The exact settlement path from your authorization to the restaurant, platform, rider employer, and rider earnings account is not publicly standardized across the UAE. The clearest public information concerns the customer payment choices and the treatment of tips.
What “paying by wallet” means in a UAE delivery app
A digital wallet is an account or stored-value balance that you can use at checkout instead of entering a card number for every order. In Careem’s published food-payment options, for example, customers may use cash, a card, Apple Pay, or Careem Pay money. Careem describes Pay credit as digital money held in the Careem account.

A platform may keep a customer’s payment balance in one system while paying a rider through an employer’s payroll, bank transfer, payment card, or another arrangement. The public UAE platform pages reviewed do not identify one universal rider account, cash-out method, or payout timetable.

So a wallet payment covers the order transaction; it does not by itself determine how the rider is paid or when the rider can withdraw earnings.
The payment flow, from checkout to delivery
1. You select an available payment method
At checkout, the app displays the methods permitted for that order. A wallet or platform credit may appear alongside saved cards and other digital options. Cash may be disabled for a particular restaurant, partner, location, order value, or delivery arrangement. The absence of a wallet button does not mean wallets are unavailable everywhere; it means that method is not offered for that transaction or account at that moment.
2. The app authorizes the order charge
For an online Talabat order, the company’s UAE terms identify a third-party payment-service provider as the processor. In practical terms, the platform sends the transaction for authorization and receives a success or failure response before confirming the order. That statement does not reveal which institution performs every step, how funds are cleared, or how a particular restaurant is settled.

When you choose cash on delivery, there is no online wallet authorization for the order amount. The order is accepted on the basis that cash will be collected at handover, subject to the platform’s own conditions.
3. The platform coordinates fulfillment and settlement
An online payment can involve several commercial relationships: the customer, the delivery platform, the restaurant or shop, a payment-service provider, and the rider or rider’s employer. Public help pages generally explain the customer-facing payment choice, not the private settlement ledger between those parties. Do not assume that the amount shown as paid in your app is deposited directly into the rider’s personal account.
4. A tip is an additional transaction in your mental model
A gratuity is attached to the delivery experience, not the food price itself. You can think of the order charge and the tip as two separate amounts even when the app submits them together. The platform may collect both using the payment method selected for the order, but the tip has a different entitlement: the platform statements cited below say the rider receives the full customer-provided amount.

5. The rider’s payout occurs under a separate arrangement
The sources do not state whether every rider is paid through a rider wallet, payroll card, bank transfer, cash settlement, or another channel. They also do not state a universal payout day or cash-out timetable. Those details can vary by platform, logistics contractor, and employment relationship, so a customer cannot infer them from the wallet used at checkout.

Careem: wallet money is one food-payment choice
Careem’s payment-method guidance lists cash, card, Apple Pay, and Careem Pay money for food orders. The page describes Pay credit as digital money held in the Careem account. This establishes a customer-side wallet option; it does not describe a rider earnings wallet or promise that the rider receives the customer’s wallet balance directly.
Talabat: online provider processing and a defined tip policy
Talabat’s UAE terms say an online order payment is processed by a third-party payment-service provider. For eligible orders, the customer can add a Rider Tip, Talabat collects it using the payment method chosen for the order, and the rider receives the full tip after delivery.
The tip feature has stated boundaries. Talabat excludes cash-on-delivery orders and orders delivered by the merchant. If a qualifying order is cancelled and the tip is refunded, the terms say the refund is returned as Talabat credit unless the customer asks otherwise; in that case it is returned only to the original payment method.
Deliveroo UAE: card or cash at checkout, 100% of tips
Deliveroo UAE says customers can pay by card or cash, with cash availability depending on the partner or order. It also says customers may tip in the app or in cash and that riders receive 100% of all tips.

The same support material says a post-delivery tip triggers a push notification for the rider. That notification confirms the tip event; it does not disclose the rider’s broader earnings payout schedule.

How an in-app tip reaches the rider
Before or during delivery
Where the order qualifies, select the tip option shown by the app and choose the amount before completing checkout or during the permitted tipping window. The exact button names and timing can change by platform and order type, so use the control displayed on the order screen rather than assuming every order supports a tip.
After delivery
Some services allow a post-delivery tip. Deliveroo UAE explicitly describes in-app and cash tipping and says the rider receives 100% of the tip. A post-delivery tip can generate a rider notification, but the customer may not see the rider’s internal account or payout ledger.
Cash tips
A cash tip is handed to the rider separately from the online order charge. It does not pass through the app’s payment processor. If you want a digital record, an in-app tip is the clearer option; if you tip in cash, keep in mind that the app may not display that amount in your order history.
What “100%” does and does not mean
In the cited Talabat and Deliveroo statements, 100% refers to the customer-provided gratuity. It does not mean the rider receives the full order value, the restaurant’s revenue, or every component of the rider’s compensation. Dubai’s official delivery-platform guidance uses the same narrow gratuity concept: the customer’s gratuity should be transferred in full to delivery personnel.
Dubai’s gratuity guidance and its geographic limit
The Dubai Department of Economy and Tourism, through DCCPFT, published Guidelines for Online Food Delivery Platforms in the Emirate, surfaced with a date of 2 September 2025. Section 2.6(a) states:
Any Gratuity provided by the Customer should be transferred in full (100%) to the Delivery Personnel.

The guideline also says platforms should avoid deducting, withholding, or reallocating any portion of the gratuity. It says deductions, such as late-delivery penalties, should be clearly communicated.
This is Dubai-specific official guidance. It should not be presented as proof that identical rules, wording, or enforcement arrangements apply in every UAE emirate. Platform terms may also set eligibility conditions, such as Talabat’s exclusions for cash-on-delivery and merchant-delivered orders.
Where the UAE payment system fits in
The Central Bank of the UAE describes payment infrastructure that connects banks, exchange houses, and e-wallets for cross-institution payments and real-time settlement, including credit transfers and direct debits. It identifies the UAE Funds Transfer System as a large-value payment system and lists retail systems that include the UAE Wages Protection System.
These are system-level descriptions, not a transaction map for a particular delivery order. The cited material does not show whether a specific wallet payment, restaurant settlement, or rider tip travels over one named central-bank rail.
Central Bank regulatory pages describe licensing categories for digital payment services, including payment-account issuance, merchant acquiring, payment aggregation, and domestic or cross-border fund transfers. The regulations page also says the UAE framework licenses Stored Value Facilities. This explains why wallet and payment services operate within regulated categories; it does not mean the Central Bank handles each order directly or that every app wallet has the same legal structure.

What customers should check at checkout
- Confirm the order type. Check whether the order is delivered by the platform or by the merchant. This matters for tip eligibility on Talabat.
- Read the available payment buttons. Use the wallet, card, Apple Pay, or cash option actually displayed. Do not assume a method offered on one restaurant or account will appear on another.
- Separate the totals. Review the food, delivery and other charges, then identify any tip line before confirming payment.
- Save the receipt or order screen. It is the most useful record if the payment fails, the order is cancelled, or a tip is missing from the visible history.
- For cash orders, prepare the accepted amount. Cash-on-delivery rules are order-specific, and a cash tip is separate from the amount due for the order.
- After a cancellation, check the refund destination. Talabat’s stated rule for a qualifying refunded tip is Talabat credit unless you request return to the original payment method.
Common problems and what they mean
The wallet option is missing
First check whether the restaurant, delivery address, order type, or account supports that method. If the app offers only card or cash, choose among those displayed options or contact the platform before placing the order. A missing option is not evidence that the platform has stopped supporting wallets generally.

The online payment failed but the order looks pending
Do not immediately submit repeated orders. Check your bank or wallet activity and the platform’s order status. A pending authorization can take time to reverse according to the provider’s process. Use the platform’s support channel with the order number and the payment reference shown in your receipt.
The tip control is unavailable
Review whether the order is cash on delivery or merchant-delivered. Talabat expressly excludes those cases from its stated Rider Tip feature. Other platforms can apply their own eligibility and timing rules.
The rider says a tip was not received
Distinguish an in-app tip from a cash tip and verify that the charge was completed rather than merely pending. On Deliveroo, the rider-support material says a post-delivery tip produces a push notification. For any dispute, provide the platform with the order receipt, tip amount, and time of the transaction.

A cancelled order changed the tip refund
For Talabat’s qualifying orders, the published terms say the default refund is Talabat credit unless you request the original payment method. Check the credit balance and the original payment statement before reporting a missing refund.
What is still not publicly standardized
- The complete route from customer authorization through platform and merchant settlement to a rider’s earnings account.
- Whether a particular rider is paid through a wallet, payroll card, bank transfer, cash, or another channel.
- How often riders can withdraw earnings and whether timing differs between direct employees and contractor-employed riders.
- Whether Dubai’s gratuity guidance is applied identically in every other UAE emirate.
Those are operational details that require a platform or employer’s specific rider agreement. Customer-facing wallet documentation should not be used to fill in the gaps.
The practical answer for customers and riders
For customers, a wallet is simply one checkout funding method. The platform’s payment provider processes an online charge, or cash is collected when cash on delivery is offered. For riders, the important separate question is the gratuity: Talabat and Deliveroo publicly state that the rider receives 100% of the eligible customer tip, and Dubai guidance says gratuities should be transferred in full to delivery personnel.
That promise concerns the tip, not the whole order payment or the rider’s complete compensation. The rider’s underlying payout account, withdrawal method, and schedule remain platform- and employer-specific.
