International Space Station meals are built for a kitchen without a normal refrigerator, freezer, gravity or sink. Most food is processed and packaged on Earth so it can remain safe at ambient temperature; in orbit, astronauts add water to rehydratable foods, warm suitable packages and manage every crumb, utensil and wrapper so nothing floats into equipment.
What food storage on the ISS actually involves
NASA says the station has no dedicated refrigerator or freezer for ordinary meals. Food is generally stored at ambient temperature, so the preservation method, package materials and handling plan have to provide the protection that cold storage supplies in a terrestrial kitchen. The station does have a chiller for beverages and condiments; that equipment should not be described as a refrigerator for the crew’s meals.
Food arrives as packaged cargo prepared on Earth. NASA’s U.S. Space Food Systems Laboratory at Johnson Space Center tests, processes and packages U.S. foods for flight. The United States and Russia provide food and share some items, while other partner agencies can contribute specialty foods. This is a coordinated supply chain rather than a single national menu.

Once a package is aboard, the crew normally unstows it, checks what preparation it requires, adds water or applies heat when appropriate, eats it with the supplied utensils and secures the waste. NASA’s food-system requirement summarizes the job: “The system shall provide the capability for preparation, consumption, and stowage of food.”

Why the station does not use a meal refrigerator
A refrigerator would add mass, power demand, hardware volume and maintenance requirements to a vehicle that is already designed around tightly controlled resources. Instead, ISS food is selected and processed to remain stable at cabin conditions for its planned storage period. Packaging also has to survive launch, cargo handling and long-term stowage without leaking or shedding particles.
NASA identifies shelf life, food safety, nutrition, limited storage volume, limited preparation capability and microgravity as linked design constraints. A food that needs continuous refrigeration would be a poor fit unless a mission had a dedicated cold-storage system, which the ISS meal system does not provide.
How ISS food is preserved
Freeze-dried foods
Freeze-drying removes much of a food’s water while preserving a lightweight, shelf-stable product. On the station, the astronaut restores the food by injecting a measured amount of water through the package’s port. After the water has time to distribute through the food, the package can be opened and eaten with a utensil. The method reduces the water that must be launched with the food while allowing the crew to add water from the station’s supply system at mealtime.
Thermostabilized foods
Thermostabilized foods are heat-processed and packaged so they can remain usable without normal cold storage. NASA’s food researchers choose processing and packaging according to how perishable the ingredients are and how they behave after treatment. These items are closer to ready-to-eat products: they do not rely on freeze-dried texture being restored, although a crew member may warm them for better taste.

Powdered beverages
Powdered drinks are sealed in packages designed to accept injected water. The water is added without opening the container, which limits spills and keeps loose powder from escaping into the cabin. The crew then drinks through an attached opening or straw arrangement suited to microgravity.
Fresh produce
Fresh fruits and vegetables are the exception, not the station’s standard supply. NASA describes small quantities arriving on visiting cargo vehicles and being eaten soon after arrival because they have a short shelf life and there is no dedicated food refrigerator. Limited plant-growing experiments have taken place in orbit, but those demonstrations are distinct from routine produce provisioning.
From Earth to orbit: the storage and delivery chain
- Menu planning: Food specialists and crew members identify items that meet nutritional, safety, shelf-life, packaging and acceptability requirements.
- Processing and testing: NASA’s food laboratory evaluates the ingredients and selects a preservation treatment, such as freeze-drying or thermostabilization. Packaging is tested for sealing, handling and use with station equipment.
- Packaging for microgravity: Portions are enclosed so crumbs, liquids and powders remain controlled. Labels and preparation instructions tell the crew how much water or heat an item needs.
- Cargo launch: The packaged food is sent as part of a resupply flow. The exact manifest changes over time, so a general description should not be treated as a current cargo list.
- On-orbit stowage: Crew members place the packages in designated storage locations at ambient cabin conditions, organizing them so meals can be assembled without searching through unsecured cargo.
How an astronaut prepares a meal
Preparation is intentionally simple, but every action is designed around microgravity and limited equipment.
Quick wins for a faster PC:
Repair Windows errors before they cause bigger problemsFix Now →Scan for outdated or missing drivers - takes under a minuteDriver Scan →- Select the item and read its package instructions. The astronaut chooses a meal or drink from the stowed supply and determines whether it is ready to eat, requires rehydration or benefits from warming.
- Gather the package and implements. Utensils, scissors, wipes, straws and any other required items are collected before opening the food. Keeping the whole setup together reduces the chance that a loose object will drift away.
- Rehydrate when required. A station water dispenser injects the specified amount into a sealed package. Freeze-dried meals and powdered beverages are typical examples. The package remains closed during injection to control the liquid.
- Warm suitable foods. Packages that are intended to be heated are placed in an onboard food warmer. Heating is optional for items that are safe to eat at cabin temperature, but it can improve flavor and texture.
- Open and eat carefully. The astronaut opens the package only after it is ready, uses a utensil or straw and keeps the opening oriented so food does not escape. Sauces and liquids are handled in containers that limit free droplets.
- Secure the remains. The empty package, used wipes and utensils are put into the planned waste stream. The crew wipes the eating area and checks for stray particles before returning to other station tasks.
How astronauts heat food on the ISS
Heating is done with purpose-built onboard equipment rather than a conventional kitchen oven or microwave. A package that is compatible with the warmer is inserted for the period specified by its instructions, then removed carefully because the container may be hot. Foods that do not fit a particular warmer, or that are designed to be eaten without heating, follow a different preparation path.

NASA’s 2000 technical overview described a Russian Service Module rehydration station and heaters, plus a U.S. suitcase-style warmer for packages that did not fit the Russian units. That document is historical: it explains how the international food system was being developed at the time, but it should not be treated as a verified inventory of every heater currently aboard the ISS. Current NASA descriptions support the general process of adding water and warming appropriate foods without establishing a present-day list of hardware models.
Why packaging and cleanup are part of the meal
On Earth, gravity pulls crumbs onto a plate and spills toward the floor. In orbit, a crumb can float into an air filter, fan or experiment, while a free droplet can damage equipment or contaminate a surface. For that reason, food packaging is also a containment system.
- Sealed ports allow water to enter a package without exposing powder or dry food to the cabin.
- Flexible containers help retain sauces, drinks and other liquids while the crew eats.
- Utensils and straws are selected for controlled feeding rather than ordinary table service.
- Labels and preparation instructions reduce errors when several foods require different water volumes or heating steps.
- Waste and wipe-down procedures prevent particles from becoming a ventilation or equipment problem.
NASA’s habitability requirements therefore address preparation, consumption, stowage, heating and cleanup within the meal schedule. The food system is not complete when a package leaves its storage location; it includes the tools and time needed to finish the meal safely.

NASA’s ISS food overview describes about 200 standard menu items in the late-2010s-era system. “About” matters: it is an approximate inventory from that NASA overview, not a permanently fixed count. Crew members can supplement standard choices with personal selections, including some commercial off-the-shelf foods that meet flight requirements.

Personal and cultural preferences are deliberate parts of menu planning. NASA notes that astronauts may choose familiar foods, seek variety and share meals, while partner agencies can contribute specialties. NASA’s account of ESA astronaut Thomas Pesquet describes him bringing 13 dishes prepared by the French space agency CNES for Expeditions 50 and 51. That is a historical example tied to one astronaut, not a standard allotment for every crew member.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone. The trade-offs behind every menu item
Food designers evaluate more than whether a recipe tastes good after processing. A practical ISS item has to balance several competing requirements:
- Nutrition: The menu must support health during long stays and encourage enough intake when appetite changes.
- Safety: Processing and packaging must control microbial and physical hazards without relying on a household refrigerator.
- Shelf stability: The item has to remain usable during storage and the logistics period associated with its mission.
- Mass and volume: Water, packaging and serving portions all consume launch capacity and stowage space.
- Preparation burden: Water injection, warming, utensils and cleanup must fit the crew’s schedule and available hardware.
- Microgravity behavior: Crumbs, powders and free liquids need containment so they do not threaten people or equipment.
- Acceptability: Familiar flavors, cultural foods and variety help maintain appetite and make shared meals possible.
These factors explain why a novelty freeze-dried snack sold on Earth is not automatically representative of an ISS meal. Flight food is selected as part of an integrated system of processing, packaging, storage, preparation and cleanup.
Do astronauts have a refrigerator in space?
Not for ordinary ISS meals. NASA describes ambient-temperature food storage and identifies a chiller for beverages and condiments. The station’s meal supply is therefore built around shelf-stable products rather than refrigerated leftovers.

What do astronauts do with freeze-dried food?
They inject water into the sealed package, let the food rehydrate according to its instructions and then eat it with a utensil. The process restores the water removed before launch and avoids carrying the full water content as part of the dry food’s cargo.
How is fresh food handled?
Fresh produce arrives only in limited quantities on visiting vehicles and is consumed soon after delivery. It is not a continuously refrigerated supply, and experimental plant growth should not be confused with routine production of the station’s meals.
What is established, and what can change?
The broad system—ambient storage, preserved foods, package-based rehydration, selective warming and careful cleanup—is stable enough to describe generally. Specific menu counts, cargo contents, individual preferences and the exact hardware assigned to a module can change. NASA’s 2019-era overview supports the approximate 200-item figure, while the technical equipment description published in October 2000 is historical context. NASA’s Space Food Systems page, updated March 10, 2026, describes current program work but also covers exploration-class research; those broader projects should not automatically be read as current ISS practice.
