AI is becoming a new starting point for restaurant discovery, but it does not yet replace the full journey from choosing a place to completing a booking or order. A diner can ask for a nearby lunch spot that fits a time, cuisine, or budget; the useful result is a shortlist grounded in accurate restaurant information and a clear next step. Current evidence points to a mix of conversational search, restaurant listings, reservation services, websites, apps, and in-person hospitality—not one universal AI-powered system.
What role does AI play in restaurant discovery?
AI adds a conversational way to search. Instead of entering separate keywords, a diner can describe constraints—“I only have an hour, need a quick lunch spot, any suggestions?”—or specify cuisine, occasion, location, price, or dietary needs. The system can then suggest options, drawing on information such as menus, reviews, photos, and listings. Whether those details are current still matters: a polished recommendation is not useful if the hours, menu, or availability are wrong.
In a March 2026 Dynata survey of 3,001 U.S. consumers, DoorDash reported that 22% had used an AI tool such as ChatGPT or Google Gemini to help choose a restaurant. This is a survey response, not a count of restaurant decisions made by AI or a measure of completed visits. DoorDash also relayed Yext research indicating that listing platforms accounted for more than 41% of sources cited in AI restaurant recommendations; the release does not provide the underlying methodology, so treat it as an attributed finding rather than a universal ranking rule. DoorDash’s 2026 report describes operators focusing on menu information (39%), review management (34%), and photo quality (32%).
Google’s August 21, 2025 announcement described AI Mode recommendations that could use a U.S. user’s previous conversations and Search or Maps activity when the user opted into the experiment. Google’s example involved a quick lunch request and preferences such as Italian food, plant-based meals, or outdoor seating. That is Google’s product description, not independent evidence that recommendations are consistently accurate or personalized well. Google’s announcement also makes clear that the described feature was an experiment, not a general statement about current availability.

Can AI complete a restaurant reservation?
AI can help turn a loosely phrased request into a more structured search. For example, “getting a dinner reservation with friends” can depend on party size, date, time, location, and preferred cuisine. Google said its AI Mode experiment could check reservation platforms and restaurant websites for real-time availability, present options, and then send the user to a booking page to finalize. The announcement named OpenTable, Resy, and Tock among the partners. As of August 21, 2025, the feature was limited to U.S. Google AI Ultra subscribers through Labs; access and partner coverage may change, so check Google’s current product information rather than assuming it is generally available.
Surveyed willingness is not the same as real-world use. The 2026 DoorDash–SevenRooms trend page reports that 74% of diners were open to AI handling reservations. The same page says 64% still call to book and cites Nation’s Restaurant News for an estimate that 40% of reservation calls go unanswered. These are different measures with different sources: openness does not establish deployment or successful bookings, and the unanswered-call figure is a separately attributed estimate. The DoorDash–SevenRooms report page presents these findings in its U.S. restaurant-trends coverage.

How do ordering and payment preferences differ?
Restaurant format affects which digital options customers say they would use. The National Restaurant Association’s 2024 research reports stated likelihoods, not observed shares of completed orders:
Do these 3 things before closing this tab:
1Clear out junk files and repair common Windows errors2Scan for outdated or missing drivers - takes under a minute3Repair Windows errors before they cause bigger problems| Restaurant context | Reported preference |
|---|---|
| Limited-service customers | 7 in 10 said they would likely order using a smartphone app. |
| Delivery customers | 8 in 10 said they would likely order using a smartphone app. |
| Delivery customers | 84% said they would order through a restaurant website. |
| Survey respondents on payment | 79% said they would like contactless or mobile payments; 73% said they would use a digital wallet. |
The figures are from the Association’s 2024 research and its accompanying segment summary; they describe stated preferences, not transaction records. The National Restaurant Association’s technology landscape report says technology preferences vary across full-service, limited-service, and delivery experiences. Its segment summary gives additional detail on ordering and payment preferences.

For off-premises dining, the Association’s 2025 release says nearly 75% of restaurant traffic happens off-premises and that 57% of U.S. adults had recently used mobile ordering (74% of millennials and 65% of Gen Z). It also reports that 94% of consumers say speed is critical and more than nine in ten cite customer service as a top priority. These figures describe broader off-premises behavior and expectations; they do not show that AI caused them. The Association’s 2025 off-premises report release provides the source context.
Why does a connected journey matter?
A diner may discover a restaurant in search, reserve through a booking service, dine in, then order delivery from the same restaurant later. DoorDash’s 2026 U.S. consumer survey reports that 74% said a dine-in visit led them to order delivery from that restaurant later, while 62% said delivery later led them to dine in. It also reports that 65% said remembered preferences would affect how often they choose a restaurant, and 63% said a personalized recommendation or follow-up had prompted at least one return visit in the prior six months. These are self-reported survey answers, not evidence that personalization caused repeat visits. The findings came from DoorDash’s March 2026 Dynata survey of 3,001 U.S. consumers. DoorDash’s report release provides its survey context.

The DoorDash–SevenRooms 2026 page also says 64% of diners prefer one app for delivery, pickup, and reservations. That expresses a preference for convenience, not proof that a single app can serve every restaurant or that all diners want one. On the operator side, 83% reportedly believe connected systems could positively affect profitability; that is an operator belief, not a demonstrated financial result. The report page covers both the diner and operator findings.
What should restaurants and diners evaluate?
There is no evidence here for a universal winning platform or a like-for-like platform comparison. The relevant question is whether a tool handles the task accurately and leaves a workable path to service.

The National Restaurant Association recommends fitting technology choices to a restaurant’s customer base while maintaining high-touch hospitality. Its March 27, 2024 release quoted President and CEO Michelle Korsmo saying, “More than 3 in 4 operators say technology gives them a competitive edge, and this research will also help operators find the right technology fit for their restaurant and their customers.” The Association’s release discusses that research.
What the evidence does—and does not—show
The available figures show consumer interest in AI-assisted discovery, openness to AI handling reservations, and established demand for digital ordering and payment options. The evidence is mostly survey-based, with results tied to particular U.S. populations and years. It does not establish that AI recommendations increase restaurant revenue, improve reservation completion, or raise diner satisfaction. Google’s reservation description was a limited experiment when announced in August 2025, while the National Restaurant Association’s ordering figures come from 2024 and its off-premises figures from 2025. Keeping those dates and distinctions attached to each claim is essential when using the numbers to make decisions.
