“Open French skillet” describes the broad, relatively shallow frying-pan format. It is useful for frying, sautéing, reducing sauces and cooking foods that need access to a wide surface. Because there is no lid, recipes that depend on covered simmering require a separate lid or another pan.

Why the 20cm base matters more than the 26cm name
A pan’s nominal diameter is normally measured across the upper rim. Food, however, cooks on the flat base. CHOICE lists a measured 20cm base for this skillet, eight centimetres narrower than the 26cm headline size. That difference affects how many ingredients can sit in one layer, how much of the pan is directly over an induction coil and whether the pan fits your preferred burner.
The 26cm rim still tells you something about the pan’s overall footprint, but it should not be used as a promise of a 26cm flat frying area. If you regularly cook several steaks, a large batch of vegetables or a wide pancake, compare the measured base diameter of every candidate. A smaller base can crowd food sooner, encouraging steaming instead of browning even when the pan looks large on the bench.
The 45cm listed length also deserves attention. That is the external length including the handle, so measure your drawer, rack or cupboard before buying. The 8.4cm external height describes the pan’s overall profile rather than a guaranteed usable wall depth.
Cooktop compatibility and heat behaviour
Induction
Essteele lists the skillet as induction compatible. Induction performance depends on the relationship between the cooktop’s coil and the pan’s magnetic base, so place the pan centrally on a zone that is close to the 20cm measured base. Very small zones may heat only the middle; oversized zones can leave the outer cooking area cooler.

CHOICE reports that the base was slightly concave when heated. That is a recorded measurement, not proof of a defect or a cooking-performance score. It does mean you should keep the pan centred and observe how your own cooktop heats it, especially if your induction hob has a small or unusually shaped zone.
Gas and electric
The manufacturer also lists gas and electric cooktops. On gas, keep the flame under the base rather than allowing it to climb the sides. On a solid electric element or radiant glass zone, choose a burner close to the base diameter and allow the pan to preheat gradually. Aluminium can respond quickly to heat changes, so avoid leaving an empty nonstick pan on a high setting for an extended period.
Preheating and the Thermotech indicator
Essteele says the Thermotech handle indicator turns green when it is time to start cooking. Use it as a visual cue, not as a substitute for controlling the burner or checking your recipe. The evidence available here does not independently verify the indicator’s calibration, colour visibility under every lighting condition or consistency across cooktops.
- Set the skillet on a correctly sized burner and add the cooking fat required by your recipe.
- Heat at a moderate setting while watching the indicator and the food-safe temperature needs of the recipe.
- When the button reaches the manufacturer-described green state, begin cooking rather than continuing to heat an empty pan.
- Adjust the burner as ingredients are added; a green indicator does not guarantee that every part of the 20cm base is at the same temperature.
Oven use: the 180°C ceiling
The official listing sets the oven limit at 180°C (350°F). That is a hard operating limit for this model. It makes the pan suitable for moderate oven finishing, such as setting a frittata or keeping a dish warm within the limit, but not for recipes that require a very hot oven, grill or broiler.
Account for the handle when transferring the pan. The phenolic handle is part of the stated design, but the product’s published oven limit still applies to the complete pan. Use oven gloves, keep the handle clear of hot elements and allow the pan to cool before washing. Do not assume that a different lid or accessory has the same temperature rating.

Nonstick coating and realistic expectations
The maker’s diamond-reinforced nonstick and DuraShield descriptions explain how Essteele positions the interior. They do not establish how long the coating will last, how it performs after repeated heating cycles or whether it releases food better than another nonstick pan. No independent evidence in the available material supplies a coating-life test, release score or searing comparison.

Nonstick is attractive when you want straightforward release and easier cleanup, but the coating is a consumable surface even when the pan carries a lifetime warranty. A lifetime warranty generally covers manufacturing defects under stated conditions; it should not be read as a guarantee that the cooking surface will remain unchanged forever.
Use utensils and cleaning methods that are appropriate for a nonstick surface, avoid deliberately overheating an empty pan and replace the pan if the coating is visibly damaged or begins to flake. The product-specific care documents do not promise that the coating is immune to scratches or wear.
Care and cleaning: follow the manufacturer, not the conflicting table entry
Essteele’s product page says “Dishwasher Safe No,” and the Per Salute care PDF states, “This product is not dishwasher safe.” CHOICE’s retrieved table contains a contradictory field reading “Yes (handwashing recommended).” Because the manufacturer’s product page and care document are specific to this model, hand-washing is the safer interpretation.
- Let the skillet cool before washing. Sudden temperature changes can stress cookware and make handling unsafe.
- Wash by hand with warm water, a mild detergent and a soft sponge or cloth.
- Do not use abrasive pads, scouring powders or metal tools that could mark the nonstick surface.
- Rinse away detergent and dry the pan completely before storing.
- Store it so hard cookware or utensils cannot scrape across the interior; if stacking is unavoidable, use a protective layer.

Warranty and ownership considerations
Essteele lists a lifetime warranty for the skillet. Before relying on it, read the current terms supplied with the product or shown by the seller. Confirm what counts as a manufacturing defect, whether proof of purchase is required, how claims are handled and which forms of wear are excluded. Nonstick wear from normal use, accidental damage or misuse may be treated differently from a structural fault.
Keep your receipt and the model details. Photographing a defect before contacting the seller can make a claim easier to document, but a warranty statement alone does not predict how quickly a claim will be resolved.
