Short answer: A Chemistry World report published on 8 September 2005 described tests in which no PFOA was extracted from commercially obtained coated or non-coated cookware at 100 °C or 125 °C. That is a finding for the tested pans, liquids and temperatures—not proof that every frying pan is harmless under every condition, nor current regulatory advice.

What “Cooking up a storm in a frying pan” was actually about

The headline refers to a historical Chemistry World news report by Niamh O’Connor. Its specific question was whether PFOA could be released from the surfaces of nonstick cookware during conditions intended to represent cooking. Charles Powley and colleagues at DuPont investigated the question using cookware bought commercially rather than a laboratory coating prepared only for the experiment.

PFOA was the substance the investigators tried to detect. The report does not present a broad assessment of all chemicals associated with cookware, every type of nonstick coating, or every possible health outcome. It describes one set of extraction experiments and reports what happened under those conditions.

What the investigators tested

Commercial coated and non-coated pans

The reported work included both coated cookware and non-coated cookware obtained commercially. Including non-coated pans gave the investigators a comparison category, but the account does not provide a complete inventory of brands, coating formulations, pan ages, sample counts or manufacturing lots. Those omissions matter when deciding how far the result can be generalized.

Water and water–ethanol mixtures

The pans were exposed to water and to mixtures of water and ethanol. These liquids were used as extraction media: after contact with the cookware, the liquids could be examined for evidence that PFOA had migrated from the pan surface. A water–ethanol mixture is not the same as every food, oil or sauce used in a kitchen, so the result should be read as a controlled test outcome rather than a simulation of every recipe.

Two reported temperatures

Condition What the report says How to interpret it
100 °C Used as one of the reported extraction conditions. A test temperature, not a universal operating limit for cookware.
125 °C Used as the second reported extraction condition. A test temperature, not evidence about all higher or lower temperatures.
Water One extraction liquid. Represents the specified test medium only.
Water–ethanol mixtures Additional extraction liquids. Shows that more than plain water was examined, but not every food or cooking oil.

What result did the 2005 report give?

Chemistry World says that no PFOA was extracted under any of the conditions examined. The report quotes Charles Powley, identified as a member of the DuPont research team, saying:

“The results showed conclusively that no PFOA was extracted from commercially-obtained cookware under any of the conditions examined.”

The important qualification is at the end of that sentence: “under any of the conditions examined.” The finding supports a narrow statement—no detectable extraction in the described test set—not a claim that PFOA can never come from a pan, that all coatings behave identically, or that cookware-related health questions are settled.

How the temperature comparison should be read

The article also reports that earlier reports placed polymer degradation at 360 °C to 500 °C, described as well above temperatures normally encountered during cooking. Those figures are a historical comparison included in the 2005 account. They are not a modern, universal “safe temperature” range for every frying pan.

Several distinctions are easy to lose:

  • Extraction is not the same as degradation. The reported experiment looked for PFOA moving into test liquids. The 360 °C–500 °C figures concern degradation reported for a polymer, a different process.
  • A tested temperature is not a product rating. The study conditions of 100 °C and 125 °C describe what the investigators did; they do not establish the maximum temperature for a particular pan.
  • Cookware varies. Coating chemistry, substrate, construction, damage, age and manufacturer instructions can differ. The report does not test every combination.
  • “Normally encountered” is not a guarantee. Cooking practices, empty-pan heating, burner output and ventilation vary. The historical article does not establish what happens in every misuse or overheating scenario.

Does this prove that Teflon-coated cookware is safe?

No. It provides reassuring evidence about one question under a limited set of conditions, but it does not prove safety in the broad sense. “Safe” could mean many different things: no PFOA migration, no release of any substance, no risk when a coating is damaged, or no health effect from long-term use. The reported experiment addresses only the first of those ideas, and even there it covers the tested cookware and extraction conditions rather than every product on sale.

The original study was not retrieved for the account summarized here. Consequently, details such as detection limits, the number of pans, replicate tests, coating histories and statistical treatment cannot be supplied from the report alone. Chemistry World’s description should therefore be attributed as a news account of the work, not treated as an independently reviewed reconstruction of the paper.

What the study did not examine

A careful reading is as useful for its boundaries as for its result. The account does not establish findings for:

  • temperatures other than 100 °C and 125 °C;
  • every oil, acidic ingredient, salty food, sauce or other cooking medium;
  • scratched, blistered, flaking or otherwise damaged coatings;
  • empty-pan heating, direct flame exposure or other overheating situations;
  • all brands, coating formulas, pan constructions, ages or manufacturing batches;
  • inhalation, ingestion or other exposure routes unrelated to the extraction liquid;
  • substances other than the PFOA the investigators sought; or
  • present-day products, manufacturing practices or regulatory limits.

None of these omissions makes the reported result false. They define the questions that the result cannot answer.

Why a “no extraction” result can still matter

Testing migration directly is more informative than simply assuming that a coating will remain unchanged. The investigators put commercially obtained cookware into contact with specified liquids at specified temperatures and then looked for PFOA. Finding none under those conditions is evidence against PFOA extraction in that particular test setup.

At the same time, a negative result is conditional. It depends on the cookware selected, how the samples were prepared, how long contact lasted, what analytical method was used and what the method could detect. Because the news report does not provide those technical details, readers should not convert “none detected in the described tests” into “zero exists in every circumstance.”

What a reader can responsibly conclude today

If you are evaluating the historical claim

You can accurately say that the 2005 Chemistry World report found no PFOA extraction from the commercially obtained cookware it described at 100 °C and 125 °C, using water and water–ethanol mixtures. You can also say that the article contrasted those tests with an earlier-reported polymer-degradation range of 360 °C to 500 °C.

If you are making a present-day health decision

Do not use this article as a substitute for current official guidance. The account does not contain contemporary regulator recommendations, and it does not establish a safe temperature for a specific pan. For a current decision, identify the exact coating and model, read the manufacturer’s instructions, and consult up-to-date guidance from the relevant public-health or regulatory authority for your location.

If a pan is old or visibly damaged

The 2005 experiment cannot tell you how a scratched, peeling or otherwise altered pan behaves. Condition is a separate question from the behavior of the commercially obtained samples in the report. Follow the product maker’s replacement and use instructions rather than inferring that an older or damaged pan is covered by the historical result.

Choosing a frying pan is a separate question from proving PFOA safety

Retail cookware listings show that frying pans differ by size, coating or base material, cooktop compatibility and intended use. Those are practical selection criteria, but the existence of choices does not create a safety ranking. The 2005 report did not compare competing products head-to-head, and retailer descriptions are not independent evidence that one pan releases less PFOA than another.

Selection factor Question to ask What the historical report can—and cannot—tell you
Size Does the diameter suit the quantity and burner? Nothing about size-based PFOA performance was established.
Coating or material What does the product documentation identify? The report included coated and non-coated cookware, but not every formulation.
Cooktop compatibility Is the pan rated for your hob or range? No compatibility or performance ranking was tested.
Intended use Will it be used for low, medium or high-heat cooking? The report covered only its stated extraction conditions.
Condition and care What does the manufacturer say about utensils, cleaning and replacement? Damage and care history were not resolved by the account.

A practical checklist for interpreting claims about nonstick pans

  1. Identify the exact claim. Is it about PFOA migration, polymer breakdown, another substance, or a general health outcome?
  2. Check the conditions. Note the temperature, liquid, contact time, cookware type and whether the test used new or used pans.
  3. Separate historical reporting from current advice. A 2005 news report can document what was known then without supplying today’s regulatory limits.
  4. Look for the evidence boundary. “No extraction under the conditions examined” is narrower than “never released.”
  5. Use product-specific instructions. The pan’s model, coating, condition and cooktop matter more than a generic headline.
  6. Seek current primary guidance for a health decision. If the decision concerns exposure, replacement or a medical concern, use current official sources rather than relying on this historical report alone.

The bottom line on the frying-pan report

The 8 September 2005 Chemistry World article reported a bounded negative finding: no PFOA was extracted from the commercially obtained coated and non-coated cookware tested with water and water–ethanol mixtures at 100 °C and 125 °C. It did not test every pan, every temperature or every cooking condition, and its cited 360 °C–500 °C degradation range is historical context rather than a universal safety rule. Treat the article as evidence about that experiment—not as a complete, current verdict on the health safety of all Teflon-coated or other nonstick frying pans.
