Yes—air fryers generally use much less added oil than deep fryers. They circulate hot air around food instead of submerging it in oil, so some foods absorb fewer oil calories. That can be a meaningful advantage, but it does not automatically make every air-fried meal healthy. The ingredients, portion size, coating and cooking method still matter.

Acrylamide is more complicated: evidence does not show that air frying always produces less than deep frying. The safest approach is to control browning, especially with potatoes, and verify meat temperatures with a thermometer.

How air frying and deep frying use oil differently

An air fryer is essentially a small countertop convection oven. A heating element warms the air, and a fan moves that air around the food. Deep frying, by contrast, surrounds food with hot oil. The cooking medium explains why an air fryer can produce a crisp surface with little added fat, while deep frying requires enough oil to immerse the food.

Comparison Air fryer Deep fryer What that means
Cooking medium Moving hot air, usually with a light coating or spray of oil Food is submerged in hot oil Air frying normally needs far less added oil.
Typical oil amount Cleveland Clinic describes recipes using about a tablespoon of oil Exact amount varies by appliance, batch and recipe; a substantial volume is needed for immersion The tablespoon figure is an example, not a universal requirement or guarantee.
Calories from oil May be lower when the same food absorbs less oil; Cleveland Clinic says reductions can reach “up to 80%” in some comparisons More oil can be absorbed, depending on the food, coating, temperature and cooking time “Up to 80%” is a potential maximum cited by the Cleveland Clinic, not a typical result for every recipe.
Texture and capacity Results depend on the model, basket loading and recipe Results depend on oil temperature, vessel and batch size The available evidence does not establish one method as a universal winner for texture or capacity.
Cleanup and handling No large reservoir of hot oil, although the basket and food residue still need cleaning Hot oil must be handled, cooled and disposed of safely Deep-frying has additional burn and spill precautions.

USDA describes air fryers as countertop convection ovens that “cook food faster and consume less energy.” Cooking speed and energy use are separate from the nutrition question, and actual performance varies by appliance size and power. See USDA’s Air Fryers and Food Safety guidance.

How much oil should you add?

There is no single correct quantity. Some foods need only a light coating; others contain enough surface fat to brown without added oil. A tablespoon can be enough for a recipe, but the amount depends on the food, the coating and how the oil is distributed. Spraying or tossing food with a measured amount is easier to compare than pouring oil by eye.

Less added oil does not mean no fat. Bacon, sausage, cheese-filled foods and many prepared breaded products already contain fat. An air fryer cannot remove that fat; it only changes how much additional oil is used during cooking.

Are air-fried foods healthier?

“Healthier” is a qualified comparison, not a property guaranteed by the appliance. If you cook the same potatoes, vegetables or chicken in both methods, using less oil may reduce calories absorbed from the cooking fat. The difference can matter when deep frying would otherwise add a substantial amount of oil.

Where air frying can help

  • Lower oil absorption: A food that would soak up frying oil may take up less added fat in an air fryer.
  • Lower calories from the cooking fat: The exact saving depends on the recipe and the amount actually absorbed. A like-for-like measurement is needed for a precise number.
  • Easier use of nutrient-dense ingredients: Cleveland Clinic registered dietitian Julia Zumpano recommends thinking of an air fryer as a way to make healthier foods more appealing. Vegetables and lean proteins can benefit from crisping without a deep-fry bath. Read the Cleveland Clinic explainer.

What the appliance cannot fix

  • A processed, heavily breaded product remains highly processed after air frying.
  • Air frying does not remove saturated fat already present in bacon, fatty meat, cheese or commercial snacks.
  • A large portion can provide more calories than a smaller portion, even when it is air fried.
  • Adding oil-heavy sauces or eating fried food frequently can outweigh the oil saved during cooking.

The reviewed sources do not establish that air frying causes weight loss, prevents disease or delivers a fixed calorie reduction. Those outcomes depend on the complete diet, portions and individual circumstances.

Does air frying reduce acrylamide compared with deep frying?

Not reliably. Acrylamide can form when sugars and the amino acid asparagine in some plant foods react during high-temperature cooking such as frying, roasting and baking. Potatoes and other starchy foods are common examples. The U.S. Food and Drug Administration (FDA) says high doses caused cancer in laboratory animals, but those doses were much higher than levels found in human food; the risk from food-level exposure in people is not clear.

Why the comparison is uncertain

The European Food Safety Authority (EFSA) reports that tests by industry and consumer organizations found hot-air fryers produced 30–40% more acrylamide than conventional deep-oil fryers. That figure describes the tests summarized on EFSA’s acrylamide topic page; it is not a guaranteed result for every appliance, potato variety, oil, temperature or cooking time.

A 2024 study comparing home-prepared potatoes found no statistically significant acrylamide difference among the tested cooking methods. Its conclusion was that air frying’s role needed further investigation. The result applies to those potatoes and conditions, not to every food or recipe. You can read the study record at PubMed.

These findings are compatible: air frying may use less oil while producing similar or even higher acrylamide under particular conditions. Oil quantity and acrylamide formation are different variables, so a lower-fat result does not prove a lower-acrylamide result.

  • EASY CLEANING: Easy-to-clean baskets and dishwasher-safe crisper plates.
  • Cook potato pieces to golden yellow rather than brown. FDA notes that acrylamide generally increases with longer cooking and higher temperatures.
  • Soak raw potato slices in water for 15–30 minutes before frying or roasting, then drain and blot them dry.
  • Store potatoes in a cool, dark place rather than in the refrigerator, which can increase acrylamide formation during cooking.
  • Avoid extending the cooking time simply to obtain a darker crust.

FDA analyzed approximately 2,500 individual food-product samples collected from 2011 through 2015 to study acrylamide levels. That monitoring effort provides context about the contaminant; it was not an air-fryer-versus-deep-fryer experiment.

A practical, healthier air-frying routine

  1. Start with the ingredient. Choose vegetables, potatoes, fish or lean poultry when you want the appliance to support a balanced meal. Air frying a processed snack does not turn it into a nutrient-dense food.
  2. Measure the oil. Use the smallest amount that gives the recipe the coating it needs. A tablespoon is an example cited by Cleveland Clinic, not a required dose.
  3. Prepare potatoes with acrylamide in mind. If using raw slices, soak them for 15–30 minutes, drain and blot dry. Stop cooking at golden yellow rather than dark brown.
  4. Follow the appliance and package directions. USDA says cooking times vary with an air fryer’s size and power, so a time that works in one model may not work in another.
  5. Check the center of meat or poultry. Use a food thermometer in the thickest part rather than relying only on color, browning or the timer.
  6. Serve a sensible portion. The calorie difference comes mainly from the recipe and amount eaten, not from the appliance label.
  7. Refrigerate leftovers promptly. USDA advises refrigerating leftovers within two hours.

Safe internal temperatures for air-fried meat, poultry and fish

Air fryers cook rapidly, but rapid cooking does not guarantee a safe center. Use the temperatures below as USDA’s minimums and follow any stricter instructions supplied with the appliance or packaged food.

Food Minimum internal temperature How to apply it
Poultry 165°F Check the thickest portion without touching bone.
Ground meat 160°F Measure the center of the patty or portion.
Fish 145°F Check the thickest part.
Whole cuts of beef, pork, veal and lamb 145°F plus a three-minute rest Remove from heat at the required temperature, then rest for three minutes.

Use a clean thermometer between raw and cooked foods, and do not assume that a crisp exterior means the interior is safe. The full USDA guidance is available in Air Fryers and Food Safety.

Deep-frying safety differences

Deep frying introduces hazards that do not disappear when the food is cooked correctly. USDA advises keeping water away from hot fat, because water can cause violent splattering. Do not move or clean a fryer while the oil is hot; allow the oil and appliance to cool first. The agency’s Deep Fat Frying and Food Safety guidance covers these handling steps.

An air fryer avoids a large pool of hot oil, but it still has a hot heating element, basket and grease residue. Unplug it, let it cool and clean it according to the manufacturer’s instructions. Never use the absence of a deep-oil reservoir as a reason to ignore burn or fire precautions.

Which method should you choose?

  • Choose air frying when your priority is using less added oil, reducing possible calories from absorbed oil, or preparing a small batch without handling a pot of hot fat.
  • Choose deep frying when a recipe specifically requires immersion and you can manage oil temperature, splashing and disposal safely.
  • For potatoes, choose based on browning control rather than an assumed acrylamide advantage. Keep pieces golden yellow, consider the FDA soaking step and avoid overcooking whichever appliance you use.
  • For meat and poultry, choose based on the recipe and capacity, then verify temperature. Neither method makes a food safe merely by reaching a particular surface color.

Air frying is therefore best understood as a lower-added-oil cooking technique, not a health guarantee. It can lower calories from cooking oil in a like-for-like comparison, while the food’s ingredients, portion and preparation determine whether the finished meal fits a healthy eating pattern. Acrylamide results vary by conditions, so controlling time, temperature and browning is more reliable than assuming air frying always produces less.
