Flat and conical burrs are both capable of excellent coffee. Burr shape alone does not predict grinder quality, consistency, or flavor. The useful questions are how the burrs are designed and aligned, how precisely the grinder adjusts, how repeatably it delivers particles, and how much coffee remains inside under your actual workflow. Retention figures are meaningful only when the dose, hopper or single-dose method, purge routine, and measurement point are stated.
What do flat and conical burrs mean?
“Flat” and “conical” describe the geometry of the two cutting surfaces that break coffee beans. They are categories of burr shape, not quality ratings. A grinder’s result also depends on tooth design, burr material and diameter, alignment, motor and drive mechanics, adjustment system, heat management, and the brew method for which the grinder was designed.
Mazzer’s burr tutorial explains that a grinder is developed as a system with its burrs, rather than as a generic flat-versus-conical package. The company presents geometry, material, and intended flavor profile as model-specific choices. That is manufacturer guidance about particular designs, not proof that one geometry wins universally.
How burr design changes the result
Manufacturers can use different tooth profiles and materials within the same broad geometry. For example, Mazzer describes two 64 mm stainless-steel burr sets for its Philos grinder. The I200D has long, continuous teeth and is intended for light-to-medium roasts with a brighter, clearer profile. The I189D is based on the company’s Mini burr design and is intended for medium-to-dark roasts with a fuller profile. These are the maker’s intended-use and flavor descriptions, not independent sensory-test results.

- 40mm stainless steel conical burrs: Precision grinding system produces uniform coffee grounds to ensure even extraction for rich, balanced flavor in every cup.
- 15 grind settings (plus 43 micro-adjustments): Easily customize your coffee grind—from fine for espresso to coarse for French press and cold brew.
- One-touch start: The Conical Burr Coffee Grinder remembers your last setting. Just push to grind—no need to reset each time.
- Brew bigger: Large removable hopper holds up to 12 ounces of coffee beans.
- Always fresh: UV-blocking tint shields coffee beans in sunny kitchens.
When comparing grinders, ask which burr set is installed, what roast range and brew methods the maker specifies, whether replacement burrs are available for that exact model, and whether the adjustment mechanism lets you return reliably to a previous setting. Do not infer those answers from the word “flat” or “conical” alone.
Does burr type determine grind consistency?
No. Grind consistency has two related meanings: repeatability from dose to dose at a chosen setting, and the distribution of particle sizes within one dose. A grinder can produce a useful distribution for espresso, filter, or batch brew without every particle being identical. What matters is whether the distribution is appropriate for the recipe and stable enough to reproduce extraction.
An article in SCA’s “Designing Flavor” feature describes grinding as a source of variation through heat, retained grounds, burr expansion, and inconsistent particle distribution. The feature is sponsored content by Ceado, so its descriptions of the REV system and related technologies should be read as manufacturer-backed claims presented through sponsored SCA coverage, not as an independent ranking.

- Heat: Temperature changes during grinding can affect the grinding environment and extraction behavior.
- Retained coffee: Grounds left in the chamber or chute can mix with the next dose, especially after changing settings or beans.
- Burr movement or expansion: Mechanical and thermal changes can shift the effective grinding point.
- Static and clumping: Electrically charged grounds can stick to surfaces, form clumps, and leave a less even dose in the basket or brewer.
- Adjustment repeatability: A precise scale or dial is useful only if the burr gap returns to the same position consistently.
A technical SCA article on reducing static electricity during grinding discusses a study in which lightly wetting beans before grinding reduced retention and clumping. That finding does not make wetting a universal requirement: follow your grinder’s instructions, consider electrical safety and corrosion, and treat the technique as workflow-dependent.
What does coffee-grinder retention mean?
Retention is the amount of ground coffee that remains inside a grinder instead of being delivered in the current dose. It is usually found in the grinding chamber, around the burrs, and in the chute. A retention claim is incomplete unless it states what was measured and when: after a normal dose, after changing the grind setting, after switching beans, or after a defined single-dose sequence.
“Low retention” and “zero retention” are therefore not universal specifications. Coffee can remain in hidden passages even when little exits immediately, and a chute-knocker or purge can move yesterday’s grounds into today’s dose. Compare figures only when the operating conditions and measurement method match.

Why hopper and single-dose numbers differ
In a hopper-fed workflow, beans continuously push older grounds through the burr chamber. In a single-dose workflow, the operator weighs each dose and may use bellows, a knocker, or a finisher to clear the path. The same grinder can show different retained amounts under those methods.
Mazzer’s FAQ says its Mini range is intended to be used hopper-fed. Mazzer reports approximately 8 g retained with a full hopper, defining that amount as coffee in the chamber between the burrs and chute. The FAQ says this amount should be purged after changing grind fineness when extraction time is affected. Separately, Mazzer reports approximately 0.1 g in single dosing at a steady level after the first three doses. Those are figures for different Mini workflows, not a controlled comparison between operating modes or brands.
For its ZM model, Mazzer’s product page states retention of less than 0.45 g and describes the grinder as suitable for single dosing. The page does not state a test protocol, so the figure should remain attributed to Mazzer and should not be compared directly with the Mini values.
| Published figure | Model and workflow | How to interpret it |
|---|---|---|
| Approximately 8 g | Mazzer Mini range, full hopper | Manufacturer figure for coffee in the chamber and chute; purge after a grind-fineness change when extraction time is affected. |
| Approximately 0.1 g | Mazzer Mini range, single dosing at steady level after the first three doses | Manufacturer figure under that sequence; not directly comparable with the full-hopper value. |
| Less than 0.45 g | Mazzer ZM, single-dose suitability stated | Manufacturer product-page claim; the retrieved page does not state a test protocol. |
How to compare grinders fairly
No source establishes a common independent retention test or a controlled flat-versus-conical ranking across brands. Use a comparison framework that describes your own workflow first.
1. Match the grinder to your brew methods
List whether you make espresso, pour-over, French press, or batch brew, and whether you switch between them in one day. A café that grinds one bean continuously from a hopper has different priorities from a home user who changes beans and settings for every dose.

- [ EASY CLEAN & ACCESSORIES ] Removable grounds chamber with an anti-spill lid helps control powder scattering. Includes a professional brush to easily sweep away leftover micro-grounds.
2. Examine the complete burr specification
Record geometry, diameter, tooth design, material, and the roast range the manufacturer names. A larger burr is not automatically better, and a geometry label does not reveal alignment or particle distribution.
3. Check adjustment precision and repeatability
Look for the adjustment mechanism, the size of its increments or dial markings, and whether the setting can be reproduced after cleaning. Espresso users need controlled small changes; multi-method users also need a practical way to move between coarse and fine settings.
4. Compare retention with conditions attached
Write down dose size, hopper or single-dose operation, whether the claim is after the first doses, whether a purge was performed, and where the maker measured the residue. Do not place figures from different protocols in a single ranking.
5. Inspect cleaning access and parts support
Routine access to the burr chamber and chute affects how easily you can remove stale coffee. Confirm that replacement burrs and other service parts are available for the exact model; generic burrs should not be assumed to fit another grinder.

6. Consider switching costs in your workflow
If you change beans or brew methods frequently, low retention and easy adjustment may matter more than hopper capacity. If you grind continuously for one recipe, dose-to-dose repeatability, heat behavior, and service access may carry more weight.

Cleaning, burr replacement, and calibration
Mazzer’s burr tutorial recommends frequent cleaning, giving daily or at least weekly cleaning as guidance. Use the specific user manual, unplug or safely isolate the grinder as directed, and do not treat that guidance as a universal service interval for every make and model.
For the Philos, Mazzer says the grinding chamber can be accessed from the front. Its product material describes grinding into the canister, actuating the chute knocker several times, and using the dose finisher while the motor is running to clear residue; Mazzer calls the resulting retention negligible. This is a manufacturer procedure and claim for that model.
Mazzer’s FAQ says the Philos rear-burr adjustment allows cleaning without losing the grind setting. It also says calibration is needed after burr replacement or after burrs are removed and reinstalled. The same FAQ states that the Mini’s grind setting remains unchanged during its described chamber-cleaning procedure. These instructions are model-specific, so verify the manual for another grinder before disassembly.

When to replace burrs
Replace burrs according to the manufacturer’s wear guidance, changes in grind performance, or visible damage rather than a universal calendar. Dull or damaged burrs can require more adjustment, produce less predictable particles, and increase the effort needed to reach a target extraction. Confirm the exact burr part number and compatibility before ordering; Mazzer recommends original replacement burrs for its relevant models.
Frequently asked questions
Is a flat-burr grinder better than a conical-burr grinder?
Neither geometry is inherently better for every coffee or brew method. Tooth design, alignment, material, mechanics, adjustment, heat, and intended use determine the practical result.
Best Value
- Slim, powerful grinder with precise settings from fine to coarse, with 15 settings and 29 micro-adjustments
- Stainless steel conical burrs provide high grind quality and consistency
- Holds up to 50 grams of coffee beans, for making up to 6 cups/30 oz of coffee
- At only 11 in/28 cm tall and 4 in/10 cm wide, it’s compact enough to store easily on countertops or in cabinets

How much retention is normal?
There is no universal normal value. Retention depends on the grinder, dose, hopper or single-dose workflow, grind setting, purge, static, and cleaning. Use a number only with those conditions attached.
Does single dosing eliminate retention?
No. It can reduce the amount left between doses when the grinder and clearing routine support it, but residue may remain. Mazzer reports approximately 0.1 g for the Mini after the first three doses at a steady level, while its full-hopper figure is approximately 8 g.

Outbyte PC Repair FREERepair Windows errors before they cause bigger problemsFix Now →Outbyte Driver Updater FREEScan for outdated or missing drivers - takes under a minuteDriver Scan →Should I purge after changing grind size?
If retained coffee can alter extraction time, purging may be necessary. Mazzer specifically recommends purging the Mini’s retained coffee after changing fineness when extraction time is affected. Follow your own grinder’s manual and workflow.
How often should I clean a grinder?
Mazzer recommends daily or at least weekly cleaning in its burr tutorial, but the correct interval depends on usage and the model’s manual. Clean more often when oily beans, heavy volume, or visible buildup increases residue.
