Yes. A panini press or contact grill can cook raw chicken safely when the appliance is intended for meat and every piece reaches 165°F (74°C) internally. Use an instant-read food thermometer to verify the thickest part; grill marks, browned skin, firmness, and a preset timer cannot prove that the center is safe.

The method is straightforward: confirm the appliance instructions, preheat fully, use evenly thick pieces, keep raw and cooked equipment separate, and cook without interruption until the temperature target is reached.

The safety rule that matters

165°F (74°C) is the endpoint

The USDA Food Safety and Inspection Service (FSIS) identifies 165°F (74°C) as the minimum internal temperature for all poultry, including chicken. That is a temperature measured in the meat, not an appliance dial setting or a cooking-time estimate. The current USDA FSIS temperature chart was accessed October 16, 2026.

Contact grills can brown the outside quickly while the center remains below the safe minimum. USDA grilling guidance from 2022 specifically warns that meat and poultry may brown fast on the exterior and advises using a food thermometer. Treat the reading as the pass/fail test for every piece.

Check that the appliance is suitable

Read the model’s manual before loading raw chicken. Confirm that the manufacturer permits meat or poultry cooking, follow its preheating directions, and use only the plate configuration and temperature controls described for that model. A press designed only for sandwiches may not provide the operating instructions or clearances needed for raw meat.

Step-by-step method for raw chicken

  1. Prepare the work area. Have a clean plate for finished chicken, a separate plate or tray for raw pieces, raw-food tongs or another utensil that will not be used for serving, and an instant-read thermometer ready. Keep raw juices contained so they cannot reach cooked food or serving surfaces.
  2. Choose pieces that make reliable contact. Boneless breasts or cutlets of similar thickness are easiest to cook evenly in a closing press. Trim or flatten unusually thick sections if your recipe and appliance instructions allow it. Do not overlap pieces or crowd the plates; uneven contact makes the thickest area the slowest area.
  3. Preheat completely. Follow the manual’s preheating procedure and any instruction about whether the plates should be oiled. Starting on fully heated plates improves contact and reduces the chance that the exterior is done long before the center.
  4. Load the raw chicken with raw-food utensils. Place pieces so the plates can close without forcing them together. Close the lid according to the manual. Avoid repeatedly opening the press just to judge color; use the thermometer when the meat is close to done.
  5. Measure the thickest part. Insert the instant-read probe into the center of the thickest area. For a thin breast or cutlet, USDA thermometer guidance from 2024 recommends inserting the probe from the side so the tip reaches the center rather than stopping near the surface. Check the thickest piece first and check additional pieces when their thickness differs.
  6. Continue heating until the poultry minimum is reached. If the first reading is low, close the press and continue cooking, then measure again in the same central area. A single browned edge or a firm surface is not a substitute for a reading.
  7. Transfer with clean equipment. Move the cooked chicken to the clean plate with clean utensils. Do not place it back on the plate that held raw chicken, and do not use the raw-chicken tongs for serving unless they have been cleaned.
  8. Clean and sanitize after cooking. Follow the appliance’s care instructions for the plates and handles. Clean and sanitize the plates, handles, nearby counter, and thermometer probe as directed so raw juices are not carried into the next meal.

How to take a dependable thermometer reading

Thin cutlets and butterflied breasts

Insert the probe horizontally from the side into the thickest section. A top-down insertion can pass through a thin cutlet too quickly and leave the tip near the surface, where the reading may be higher than the center.

Thick, tapered, or bone-in pieces

Probe the densest portion rather than a thin tip or an area touching bone. If a piece narrows sharply, take readings in the thick center and in any other location that appears substantially different. When pieces are not the same thickness, check each of the thicker ones instead of assuming the thinnest piece represents the batch.

Keep the probe from touching the equipment

The sensing tip should be surrounded by chicken, not pressed against a hot plate. Wait for the display to stabilize, then remove the probe and clean it according to its care instructions before it contacts another piece or the finished plate.

Preventing cross-contamination

Raw chicken juices can contaminate cooked food, plates, utensils, handles, counters, and the thermometer. USDA FSIS advice in its Chicken from Farm to Table guidance and 2022 grilling guidance supports a strict separation:

  • Use one plate or tray for raw chicken and another clean plate for cooked chicken.
  • Use separate utensils for loading raw meat and serving cooked meat.
  • Keep the raw-food plate away from the finished-food area; never return cooked pieces to it.
  • Control drips when moving raw chicken to the press and when removing it.
  • Clean and sanitize the appliance surfaces and probe after cooking, following the manufacturer’s care directions.

Why there is no honest universal cooking time

A contact grill’s result depends on variables that differ by model and batch: press wattage, actual plate temperature, chicken thickness, whether the cut is boneless or bone-in, and whether the chicken started chilled or at another temperature. Plate design and the amount of food loaded also affect how consistently the meat contacts both surfaces.

Panini press versus a skillet or open grill

All three methods can be safe when the chicken reaches the poultry minimum and raw-food controls are followed. The practical differences are about heat contact, access, space, and cleanup rather than a different safety temperature.

Consideration Panini press or contact grill Skillet Open grill
Heat contact Normally heats from upper and lower plates at once; contact depends on piece thickness and lid pressure. Direct contact is usually strongest on the pan side; the chicken must be turned or otherwise heated from above. Heat comes from the grate and surrounding air; turning and hot-spot management are part of the process.
Space and overlap Limited plate area makes even spacing important; overlapping pieces can block contact. Pan size determines how many pieces fit without crowding. Grate area and the ability to create separate heat zones determine capacity.
Thermometer access Opening the lid briefly may be needed to insert the probe; measure the center, not the surface. The meat is visible and easy to probe while in the pan. The meat is accessible, but positioning over a grate or hot spot can make probing awkward.
Grease and juice management Some models channel drippings, but the manual determines how those channels and plates are handled. Juices remain in the pan and must be managed during transfer and cleanup. Drippings fall through the grate or onto a collection system; surfaces around the grill can still be contaminated.
Cross-contamination control Separate raw and cooked plates and clean the plates, handles, and counter after use. Use separate utensils and a clean serving plate; clean the pan and nearby surfaces. Keep raw and cooked utensils separate and clean the grate, tools, and surrounding surfaces.
Manufacturer permission Verify that the specific press or grill is rated and documented for raw meat. Use cookware intended for the heat source and follow its care instructions. Follow the grill’s operating and cleaning instructions, including any restrictions on food types.

Common problems and the correct response

The outside is brown but the center is under the target

Close the press and continue heating, then recheck the thickest center. Do not serve based on color or grill marks. If the appliance cannot heat the center evenly, reduce the thickness of future pieces or use a method and pan arrangement that gives the meat better contact.

The pieces cook at different rates

Remove only pieces that have reached the target and keep checking the thicker ones. For the next batch, group pieces by thickness and avoid placing a very thick piece beside several thin cutlets if the lid pressure or plate contact becomes uneven.

The press is overloaded

Stop adding pieces when they touch or overlap. Cook in smaller batches so the plates can contact each piece and the thermometer can reach the center without obstruction.

The thermometer reading seems inconsistent

Reposition the probe from the side into the center of the thickest area and ensure the tip is not touching a plate or bone. Check more than one location when the cut tapers. If readings still vary, follow the thermometer’s care and operating instructions before relying on it.

You started cooking but cannot finish immediately

USDA guidance says never partially grill meat or poultry and finish it later. The only partial-cooking exception described there is immediate transfer to a hot grill to complete cooking. Do not refrigerate or leave partly cooked chicken for a later finish.

The manual does not mention raw meat

Do not assume that a sandwich press is meat-rated. If the manual does not authorize the intended use or provide safe operating instructions, choose an appliance explicitly designed for meat rather than improvising a setting.

A quick pre-serve checklist

  • Every piece has been checked in its thickest area with an instant-read thermometer.
  • The probe was inserted from the side for thin pieces and did not touch a plate or bone.
  • Raw and cooked plates and utensils were kept separate.
  • Cooked chicken is on a clean plate, not the raw-food plate.
  • The press, handles, counter, and thermometer probe have been cleaned and sanitized according to their care instructions.
