A 2026 Mendelian-randomization study found that genetically predicted spinach intake may be associated with lower gastric-ulcer risk. It did not test whether eating spinach prevents ulcers, so the finding is not a dietary recommendation or a treatment. The National Institute of Diabetes and Digestive and Kidney Diseases (NIDDK) says diet and nutrition have not been shown to play an important role in causing, preventing, or treating peptic ulcers.
What the spinach study actually found
The 2026 study, “Bidirectional and mediation Mendelian randomization of dietary intake and risks of gastric ulcer and gastric cancer,” analyzed genetic association data for 226 dietary factors and gastric-ulcer outcomes from FinnGen R11. It included 7,012 people with gastric ulcers and 385,082 controls; all participants were of European ancestry. Yang et al., 2026
For genetically predicted spinach intake, the researchers reported an odds ratio of 0.633 (95% confidence interval 0.416–0.963; P=.032). This is an estimate from genetic-instrument analysis, not a measured outcome after people ate spinach. It cannot be translated into a promise that eating spinach will reduce an individual’s ulcer risk by a particular percentage.

The authors note that the findings may not generalize beyond European-ancestry populations. They also say the clinical relevance needs further investigation and that vegetable-related findings, including spinach, need confirmation in larger prospective datasets.

Why this does not establish spinach as prevention
Mendelian-randomization research uses genetic variants as proxies for exposures—in this case, dietary intake—to examine possible relationships with outcomes. It is different from a clinical trial that assigns people to eat spinach or another diet and then measures ulcer diagnoses.
The study’s outcome was gastric ulcer, not every kind of peptic ulcer, and its participants came from a Finnish dataset. The result is an association signal worth further study, not evidence that a serving of spinach prevents ulcers. The study does not establish a protective dose, a spinach-based regimen, or a benefit for people who already have an ulcer.

What earlier evidence says about a possible mechanism
A 2008 Chemistry World report on Swedish research described rats fed a nitrate-rich diet as having a thicker gastric mucus layer, which may help shield the stomach lining from acid. The account also described a role for oral bacteria in converting nitrate to nitrite; disrupting those bacteria made rats more vulnerable to ulcers in the reported experiments.

This is animal and mechanistic evidence, not proof of a human benefit from spinach. The report did not establish a clinical serving or recommend spinach as ulcer prevention or treatment. A 2016 review listed spinach among foods allowed in a proposed peptic-ulcer food table, but cautioned that plant anti-ulcer effects were mostly demonstrated in animals and did not reliably support human prevention or treatment recommendations. That historical table is not a current clinical guideline.

What causes peptic ulcers, and what should you do?
Peptic ulcers are sores in the lining of the stomach or duodenum, the first part of the small intestine. NIDDK identifies Helicobacter pylori (H. pylori) infection and use of nonsteroidal anti-inflammatory drugs (NSAIDs) as the most common causes. Its guidance does not recommend a special diet, or avoiding particular foods or drinks, to prevent or treat ulcers. NIDDK: Peptic Ulcers (Stomach Ulcers)
If an ulcer is suspected, care should focus on diagnosis and the underlying cause rather than relying on a food. Clinicians may test for H. pylori using blood, breath, or stool tests and may use endoscopy or other upper-GI evaluation. When H. pylori is present, treatment combines antibiotics with acid-reducing medicines; follow-up testing can confirm whether the infection is gone. If an NSAID may be contributing, a clinician can advise whether it should be changed. MedlinePlus: Peptic Ulcer

How to interpret claims about foods and ulcers
- Check the evidence type: Rat experiments, genetic-proxy analyses, and clinical food interventions answer different questions.
- Check the outcome: A finding about gastric ulcers should not automatically be applied to all peptic ulcers or to gastric cancer.
- Check the population: This study used European-ancestry data, so its result may not apply equally to other populations.
- Separate association from advice: The spinach result does not establish a therapeutic serving, supplement, or special ulcer diet.
