Yes. A 2026 laboratory study engineered lettuce chloroplasts to produce porcine myoglobin, a muscle protein linked to meat’s color and sensory properties. The lettuce contained an estimated 1.5% myoglobin by total soluble protein, with a reported yield of 48 ± 2.6 mg per kilogram of fresh lettuce. This is a proof of concept—not whole meat, a ready-to-eat food, or evidence of commercial-scale production.
What the researchers produced
In “Sustainable production of myoglobin meat protein in plant chloroplasts,” published in Frontiers in Plant Science on 6 August 2026, Alexia Groff and colleagues used chloroplast transformation to express porcine myoglobin in lettuce and tobacco. They also expressed bovine myoglobin in the green alga Chlamydomonas reinhardtii. The article page records a correction dated 10 August 2026.
The authors describe the lettuce result as the first known expression of a heterologous hemoprotein in lettuce. A hemoprotein is a protein that contains or binds heme. Myoglobin is an oxygen-binding protein naturally found in vertebrate muscle; it is not muscle tissue or a complete meat substitute.

The study reports two different ways of expressing the lettuce result. They describe distinct measurements, so the percentage should not be read as the amount of protein in each kilogram of crop.

| Measure | Reported result | What it means |
|---|---|---|
| Myoglobin as a share of total soluble protein | Estimated 1.5% | The proportion of the soluble protein pool attributed to myoglobin. |
| Yield by fresh weight | 48 ± 2.6 mg/kg | Myoglobin per kilogram of fresh lettuce. |
| Yield by dry weight | 810 ± 60 mg/kg | Myoglobin per kilogram of dry lettuce. |
For comparison, tobacco reached a reported 2.7% of total soluble protein, higher than lettuce on that measure. Lettuce’s significance is that it is the edible crop tested; the comparison alone does not show which host would be practical to produce at scale.
Does this mean lettuce can grow meat?
No. The plant produced one animal protein, porcine myoglobin. It did not grow pork, create animal muscle, or produce a nutritionally complete meat replacement. The researchers propose that plant-produced myoglobin could eventually be explored as an ingredient for plant-based meat products, where myoglobin’s properties may be useful. That is a possible application, not a demonstrated commercial product.

What remains uncertain about function and production?
Myoglobin’s association with meat characteristics makes its function relevant, but production alone does not establish how well the protein would perform in a food. In purified myoglobin from tobacco leaves, the study reported approximately 35% heme binding; the comparison E. coli-expressed protein had 80% heme binding. Those figures concern purified tobacco-derived protein, not lettuce, and should not be treated as a direct lettuce performance result.
The authors identify heme availability as a possible bottleneck and say yields need further optimization to match animal muscle. The study does not establish production cost, commercial-scale output, market availability, or environmental savings for this system.

Is engineered myoglobin lettuce safe or approved to eat?
The fact that lettuce was used as an edible host does not establish that the engineered line is safe or approved for consumption. The study does not provide a product-specific regulatory determination. In the United States, the FDA’s guidance on foods from new plant varieties describes risk-based food-safety principles, including for genome-edited varieties. Separate FDA guidance on early food-safety evaluation of new non-pesticidal proteins addresses proteins produced by new plant varieties intended for food use. These general policies do not answer whether this particular lettuce line has been evaluated or authorized.
More broadly, molecular farming—using plants to produce substances of interest—requires attention to stewardship when transferred food allergens or substances not normally intended for the food supply are involved. A 2024 perspective on molecular-farming stewardship discusses containment, identity preservation, commingling, and allergen cross-contact as issues to manage during development and processing. This general discussion is not evidence that the myoglobin lettuce is hazardous or allergenic.

What the result does—and does not—show
- Demonstrated: The researchers expressed porcine myoglobin in lettuce chloroplasts and reported the measured accumulation and yields above.
- Not demonstrated: A food product made from the lettuce, consumption safety for the specific line, product-specific regulatory approval, commercial-scale production, competitive costs, or environmental benefits.
- Next challenge identified by the authors: Improve yields, with heme availability noted as a possible constraint.
The study is an early step toward investigating plants as a production platform for animal proteins. Whether it can become a useful ingredient source depends on further work on yield, protein function, food-safety evaluation, regulatory status, and production scale.
