Not from the ingredient list alone. Fries can contain no gluten-containing ingredients yet still raise a cross-contact concern if they share a fryer with foods that contain gluten. A useful menu agent must connect dishes to preparation equipment and practices—and flag what it does not know—rather than turn “gluten-free” into a safety guarantee.
Why the menu can say “gluten-free” while the fryer still matters
Ingredient information answers what goes into a dish. It does not necessarily tell you how the dish is prepared. Fries made with gluten-free ingredients may be cooked in a fryer also used for battered or breaded foods containing gluten. The ingredient list alone cannot resolve that preparation question.
The distinction matters for people with celiac disease, wheat allergy, or another reason to avoid gluten, though those are not interchangeable conditions. In particular, celiac disease is not the same diagnosis as an IgE-mediated food allergy.
Windows Errors? Fix Them Before They Spread

Random freezes, missing sound and display glitches usually trace back to one bad driver. Find and replace yours safely.Free scan · under a minuteIn the United States, the FDA’s gluten-free labeling rule sets a limit of less than 20 parts per million for foods bearing the claim, including gluten from unavoidable cross-contact. That is a standard for the labeling claim; it is not a measurement of a restaurant’s fryer or a guarantee about an individual order. FDA also explains that packaged-food allergen labeling requirements do not apply to food placed in a wrapper or container after a customer orders it at the point of purchase. A restaurant menu entry therefore should not be treated as a complete account of kitchen handling.

What a menu agent needs to represent
A conventional menu database may connect a dish to its ingredients. To reason about preparation risk, an agent needs a broader map of relationships: dishes to ingredients, and dishes to the equipment, utensils, surfaces, and practices involved in preparing them.
From recipe data to preparation paths
For fries, a useful representation would record whether a particular location uses a dedicated fryer, whether other foods are cooked in it, and what is known about the preparation area and utensils. It should also account for relevant recipe details such as sauces, toppings, substitutions, and supplier changes. A dish name or ingredient list cannot establish those facts by itself.

Unknown should remain unknown
If fryer sharing is not documented, the agent should identify the missing information and prompt the diner to ask staff. It should not infer that the fryer is dedicated because the fries are marked gluten-free, or label the order safe without evidence. Restaurant practices can vary by location and change over time, so useful records should identify their source, branch, and last-confirmed date.

What to ask the restaurant
Ask about the specific location and current preparation procedure. CDC recommends using separate equipment and preparation areas for customers with food allergies “when feasible”; that qualification matters, and it does not promise zero risk.
- Are the fries cooked in a dedicated fryer?
- Are foods containing wheat or gluten cooked in that same fryer?
- Can staff use separate utensils and a separate preparation area for this order?
- Can the restaurant confirm that the information applies to this location and today’s preparation?
These questions help establish what the restaurant can do for a particular order. They do not certify the meal as safe.

How to evaluate an allergy-aware menu agent
There are no established test scores or verified competing products in the available evidence to rank menu agents. These are practical evaluation criteria, not a product ranking:
| Criterion | What to look for |
|---|---|
| Ingredient coverage | Does the record include sauces, toppings, substitutions, and supplier-provided changes, not just the base recipe? |
| Preparation-path coverage | Does it represent fryer use, shared surfaces, utensils, and preparation areas as well as ingredients? |
| Evidence and provenance | Is each fact linked to a restaurant-provided source, location, and date, or inferred from the dish name? |
| Handling of unknowns | Does the agent show missing or stale information and direct the diner to confirm it, rather than converting uncertainty into a confident safe/unsafe label? |
| Location and time | Can it distinguish branches and menu versions and show when preparation information was last confirmed? |
Why U.S. food-code context does not settle a fryer question
On September 17, 2026, the FDA released the 2026 Food Code, which the agency describes as its latest full edition and a model for state, local, tribal, and territorial regulators. It includes clarification about allergen cross-contact. The Food Code is a model, not an automatic federal rule for every restaurant; U.S. restaurant oversight is typically state and local, and adoption varies by jurisdiction. The FDA’s Food Code overview explains that regulators use the model to develop or update their own rules.

That regulatory context does not tell a diner whether a specific restaurant uses a dedicated fryer. The practical answer still depends on the current procedure at the particular location.
What the evidence does not establish
Public guidance supports asking about preparation and separating equipment and areas when feasible. It does not establish a universal safe fryer protocol, a rate of gluten transfer through shared fryers, or the accuracy of an AI agent at judging restaurant meals. The FDA’s gluten-free labeling threshold should not be applied to a restaurant fryer or individual order without evidence that directly supports doing so.
