You can build a conversational barista that looks up venue-maintained menu and allergen records, then returns a structured answer—but that answer is only as trustworthy as the records and the café’s handling process. Google’s Agent Development Kit (ADK), Gemini, and Cloud Firestore provide pieces for building the software; they do not establish that a drink is safe, that records are complete, or that cross-contact has been prevented. Treat the agent as an information interface, and route uncertainty and preparation questions to staff.
What the AI barista can—and cannot—answer
A useful allergen-aware assistant retrieves approved information about a specific drink and explains what the venue has recorded. It can report listed ingredients, recorded allergens, unknown fields, and when a record was updated. It should not convert an absent or ambiguous record into a claim that a drink is safe.
Even a correct database result cannot establish what happened during preparation. The venue’s records may be incomplete or out of date, and the drink may be exposed to cross-contact through ingredients, equipment, surfaces, or handling. A customer asking whether a drink is safe for their allergy needs a staff member to confirm the applicable handling conditions.

How the components fit together
ADK is Google’s open-source framework for developing agents. Google lists Python, TypeScript, Go, and Java support, and describes capabilities for building, debugging, evaluating, and deploying agents. Its overview discusses both workflow-style orchestration and agent-coordinated routing, and names Agent Runtime, Cloud Run, and Google Kubernetes Engine as deployment options.

For a practical first version, keep the flow narrow: the user asks about a drink, a defined tool retrieves the relevant venue record from Firestore, and Gemini returns an answer in a controlled format. The application validates that response and presents the source record and any uncertainty. A staff process handles missing information and questions about preparation. This is an implementation design based on the documented capabilities—not a turnkey architecture or food-safety assurance from Google.

How to build a first version with ADK and Agent Runtime
Google’s Agent Runtime quickstart demonstrates a path that sets up a Google Cloud project and APIs, defines an ADK agent with a Gemini model and a tool, tests it locally, and deploys it to Agent Runtime. Use that as a deployment walkthrough, not as a guarantee that every example setting remains current.

- Choose the runtime and language. Start with the ADK language and deployment target your team can operate. The quickstart focuses on Agent Runtime; the ADK overview also names Cloud Run and Google Kubernetes Engine. The available documentation does not establish a cost, latency, or suitability ranking among them.
- Prepare the cloud project and APIs. Follow the current Agent Runtime quickstart’s project and API setup steps for your account and region. Confirm the required APIs, permissions, and regional availability in the live documentation before deployment.
- Define a narrowly scoped retrieval tool. Make the tool retrieve venue-approved records for the requested drink. Avoid giving the model broad, unnecessary database access; enforce access boundaries in the application and service configuration.
- Connect the agent to Firestore. Google documents connecting an ADK Python agent to a remote Firestore MCP server. This is a documented technical integration path, not a prescribed allergen schema or a validation of the data stored there.
- Configure a supported Gemini model. The quickstart’s example uses
gemini-3.5-flash. Treat that identifier as an example from the documented walkthrough, not a timeless recommendation: check current model availability and region support when implementing. - Test locally before deployment. Exercise ordinary questions as well as missing, conflicting, and ambiguous records. Confirm that the agent abstains from asserting safety when its retrieved information cannot answer the question.
- Deploy and inspect the result. Follow the quickstart’s current deployment and use steps, then test the deployed agent against the same cases. Use its cleanup guidance when removing demonstration resources you no longer need.
What to store in Firestore
Google’s Firestore MCP instructions document how an ADK Python agent can access a remote Firestore MCP server; they do not define a canonical menu or allergen data model. Design the records with the venue’s owners and operational process, and make ownership and update responsibility explicit.

As a product-design suggestion—not a schema prescribed by Google—a drink record could include a stable drink identifier, the venue and menu version, recorded ingredients and allergen information, the source of that information, an update timestamp, fields that are unknown, and a status indicating whether the answer needs staff review. Keep the meanings of “not recorded,” “not applicable,” and “confirmed absent” distinct; collapsing them into one empty value invites overconfident answers.

Decide how the application behaves when records are stale, missing, or contradictory. For example, it can display that the venue has no current answer and request staff confirmation instead of selecting one conflicting entry. Do not imply that reading a record from Firestore verifies its accuracy or reflects substitutions and preparation practices on a particular shift.
How to constrain and validate Gemini’s answer
Gemini structured output can constrain a response to a specified schema. Google’s documentation explains that JSON mode without a response schema is only a strong hint, and recommends using a schema and client-side validation where appropriate. This helps make outputs predictable for an application; it does not establish the truth of the fields.

For this use case, a proposed response shape could carry the retrieved drink identifier, recorded ingredient and allergen fields, the source-record timestamp, any unknown fields, and an escalation state. Those are design suggestions, not a Google-provided schema. Validate the response against the schema in the application, check that it corresponds to the retrieved record, and reject or escalate malformed or unsupported claims.

- Preserve unknowns and conflicting information rather than converting them to “no allergen” or “safe.”
- Show which venue record the answer came from and its update time so a customer or staff member can identify what is being represented.
- Use a clear escalation state for questions that the stored information cannot resolve, especially preparation and cross-contact questions.
Where Firestore security rules help—and where they stop
Firestore security rules can validate certain client transactions and batched writes. Google documents the use of getAfter() to inspect the state of documents after a set of writes but before the transaction or batch commits. That can help enforce selected data invariants, such as relationships among writes that must hold together.

The transaction documentation also describes access-call limits for security rules used with transactions and batched writes. Check the current limits and design rules accordingly. Rules that validate selected write conditions are one security control, not a complete application security review; they do not establish that ingredient information is substantively correct or that café staff followed a handling procedure.
How to handle allergy questions responsibly
Use wording that reports what is recorded instead of making an unsupported safety verdict. If a customer asks whether a drink is safe, the agent should say what the venue’s record lists, identify missing or ambiguous information, and direct them to staff for confirmation of ingredients and handling. Do not use claims such as “guaranteed safe” or “prevents cross-contamination” unless a qualified, venue-specific process supports them.
This boundary matters beyond the application. FDA material describes allergen labeling and cross-contact as food-handling topics. The FDA page discusses a 2005 Compliance Policy Guide on labeling and preventing cross-contact of common food allergens; it also says that on May 16, 2023, the agency announced draft guidance that, if finalized, would replace existing staff guidance. The page’s draft announcement is not evidence that the draft became final, and it does not establish every current food-service obligation or local requirement. A venue should use the applicable rules and its own qualified food-handling procedures rather than treating an AI response as compliance.
