An automated makeline is safe to run only when its food-contact surfaces, moving interfaces, refrigeration areas, and detachable parts are cleaned on a documented, model-specific schedule. There is no single interval or chemical that fits every machine. Use the current manufacturer manual, the chemical label, your written SSOP (sanitation standard operating procedure), and local code together.
The dependable sequence is: stop and isolate the line, protect food, remove permitted parts, scrape and pre-rinse, wash, rinse when required, sanitize for the labeled contact time, drain or air-dry, inspect, verify, and document release before loading food.
What automated makeline cleaning controls
A makeline combines refrigerated ingredient pans, conveyors or belts, dispensing nozzles, guards, sensors, pumps, gaskets, drains, and sometimes cutting or portioning mechanisms. Soil can collect where these parts meet: under pan lips, inside gasket folds, along belt edges, in seams, around nozzle tips, behind guards, and at drain points. Those niches can recontaminate food after an apparently clean surface has passed a quick visual check.
Cleaning removes food residue, grease, allergens, and biofilm-supporting soil. Sanitizing reduces microorganisms on already-clean surfaces. Sanitizer cannot reliably compensate for residue left behind, so the wash step and the inspection that follows it are essential. FDA HACCP guidance says cleaning and sanitation procedures should be written and followed, with a master sanitation schedule assigning what is cleaned, how, how often, and by whom.

Your SSOP should identify each makeline model and serial or equipment ID, the parts that may be removed, approved tools and chemicals, temperatures and contact times, safety controls, verification methods, acceptance limits, corrective actions, and restart requirements. If the manual, chemical label, SSOP, or local authority requirement conflicts, stop and resolve the conflict with the responsible food-safety manager and the equipment or chemical supplier; do not improvise a disassembly or concentration.
Set up a model-specific SSOP and master schedule
Write the procedure so a trained employee can follow it without guessing. Include these fields for every line:
- Manufacturer, model, equipment ID, and the current manual revision.
- Food-contact parts, adjacent splash-zone parts, and components that must remain installed or dry.
- Approved detergent and sanitizer names, label dilution, water-temperature requirement, and minimum contact time.
- Required brushes, scrapers, collection containers, personal protective equipment (PPE), and any color-coding that separates food-contact tools from drain or waste tools.
- Isolation steps for electrical power, conveyors, pumps, blades, compressed air, and stored mechanical energy.
- Cleaning frequency, trigger events, verification method, release criteria, and corrective-action instructions.
- Record fields for date, shift, employee, equipment ID, sanitizer or other critical readings, inspection result, and supervisor release.
Schedule extra cleaning when the line has heavy production, high-soil ingredients, allergen changes, leaks, warmer-than-normal conditions, or a failed verification. A calendar interval is only acceptable when it demonstrably prevents soil accumulation and recontamination.

- Stop production. Remove exposed ingredients, packaging, and utensils from the cleaning zone. Cover or relocate food that must remain in the room so spray, detergent, and debris cannot reach it.
- Identify the equipment. Confirm the model and retrieve the current OEM cleaning and maintenance instructions. Check whether the manual requires a specific belt position, drain configuration, refrigeration protection, lubricant, or restart test.
- Record pre-existing damage. Note cracked pans, chipped plastic, deep scratches, loose fasteners, torn gaskets, exposed wiring, or leaking seals before disassembly. A damaged food-contact part should not be returned to service merely because it looks clean.
- Apply energy isolation. Follow the site’s lockout/tagout procedure for moving conveyors, pumps, blades, agitators, and electrical components. Do not reach into a belt or nozzle area that can start unexpectedly. Protect components that the manual identifies as unsuitable for water or chemical exposure.
- Prepare tools and chemicals. Verify that detergent and sanitizer are in date, labeled, and available at the required concentration. Put on the PPE listed by the chemical label and SSOP. Never mix chemicals.
Disassemble and remove soil without spreading it
Remove only permitted parts
Take out pans, guards, belts, nozzles, utensils, gaskets, covers, and other detachable parts only as the manual permits. Keep fasteners and small components in a controlled container so they cannot fall into drains or food. If a belt cannot be removed by an operator, clean it in the installed position using the manufacturer-approved method rather than forcing it.

Scrape before adding water
Scrape thick food deposits into waste and remove disposable liners or debris. Dry removal reduces the amount of organic material that detergent must handle and prevents drains from becoming overloaded. Keep tools used for dry residue, waste, or drains segregated from food-contact cleaning tools.
Pre-rinse, soak, or brush as needed
Use the water pressure, temperature, and direction allowed by the manual. Excessive pressure can drive soil into bearings, seals, electrical housings, or other niches. Soak or brush parts when residue has dried. Work from cleaner areas toward dirtier areas and from upper surfaces toward drains, while preventing splash onto cleaned parts.
Give special attention to belt edges, hinge lines, pan rails, gasket folds, nozzle openings, seams, welds, fastener recesses, drain screens, and the interfaces where a conveyor passes a guard. These are common locations for retained food and allergen residue.

Follow the wash-rinse-sanitize sequence
1. Wash
Prepare the detergent exactly as its label and the equipment procedure specify. Apply the solution to every food-contact and adjacent splash-zone surface, using brushes or pads that will not damage the material. Maintain the required temperature and mechanical action for the label’s stated contact time. For manual warewashing, the 2022 FDA Food Code lists 43°C (110°F) as the minimum wash-solution temperature unless the detergent label specifies another temperature; do not transfer that number to a makeline when the OEM or chemical label requires something different.

Brush grooves, gasket channels, nozzle interiors, belt cleats, pan supports, and drain-side surfaces rather than relying on a spray-only pass. Replace solution that becomes visibly dirty or falls outside the site’s control limits.
2. Rinse
Rinse with potable water when the detergent label or SSOP requires it. Remove detergent film and loosened soil without flooding protected components. Inspect the rinse water path so it does not carry debris back over a cleaned surface. If the product label permits a no-rinse sanitizer process, follow that label exactly; never assume every detergent or sanitizer has the same requirement.
3. Sanitize
Mix the sanitizer to the labeled concentration and apply it uniformly to cleaned surfaces. Keep every surface visibly wet for the full labeled contact time. Measure concentration or another critical parameter when the site’s verification plan requires it, and record the result. A sanitizer that is too weak, too strong, expired, contaminated, or applied for too little time is not an acceptable control.
Do these 3 things before closing this tab:
1Scan for outdated or missing drivers - takes under a minute2Clear out junk files and repair common Windows errors3Fix the driver behind crashes, sound loss and screen glitches4. Drain or air-dry and reinstall
Place removable parts so they can drain freely or air-dry as directed. Do not wipe food-contact surfaces with a potentially contaminated cloth. Reinstall only after inspection, and apply only the lubricant specified for the equipment and approved for its location. Confirm that gaskets seat correctly, guards are secure, nozzles point correctly, and belts track without rubbing.

Inspect the places that are easiest to miss
Perform a deliberate visual inspection under bright lighting before food is loaded. Use a flashlight or inspection mirror where the design creates a blind spot. Check:
- Conveyor belt edges, cleats, hinges, rollers, transition plates, and the gap between belt and guard.
- Gasket folds, compression points, door corners, pan rails, and the underside of covers.
- Nozzle tips, internal passages that the manual allows you to access, pump connections, and product-contact tubing ends.
- Grooves, seams, welds, fastener recesses, hinges, drain screens, and areas around drain outlets.
- Cracks, chips, deep scratches, flaking coatings, swollen seals, corrosion, and loose or missing hardware.
FDA inspection guidance directs inspectors to check that food establishments follow manufacturer cleaning and maintenance instructions. Do not return a cracked, chipped, deeply scratched, or otherwise defective food-contact part to service until it is repaired or replaced and the disposition is documented.
How often should an automated makeline be cleaned?
Set frequency by performance: clean often enough to prevent soil accumulation, microbial growth, allergen carryover, and recontamination. The responsible person should review production volume, ingredient soil, temperature, leaks, changeovers, and verification results rather than copying an interval from an unrelated machine.
| Documented guidance or condition | Interval or action | How to use it |
|---|---|---|
| USDA FSIS example at 5°C (41°F) or less | 24-hour cleaning frequency | Use as an example to adapt to the establishment and applicable code, not as a universal makeline rule. |
| USDA FSIS example above 5°C to 7.2°C (45°F) | 20-hour frequency | Shorten the interval when temperature, soil, or verification shows greater risk. |
| USDA FSIS example above 7.2°C to 10°C (50°F) | 16-hour frequency | Document the temperature basis and the site’s decision. |
| USDA FSIS example above 10°C to 12.8°C (55°F) | 10-hour frequency | Treat as guidance requiring adaptation, not permission to operate outside local temperature rules. |
| FDA Food Code warewashing equipment used in operation | Clean during operation as needed and at least every 24 hours when used | This provision concerns warewashing equipment; it does not establish one automatic interval for every refrigerated makeline. |
Clean immediately after a spill, leak, allergen changeover, extended idle period with exposed soil, or failed verification. If a line cannot remain clean for the scheduled interval, revise the SSOP, equipment condition, or operating practice instead of simply signing the old schedule.

Verify cleaning before release
Pre-operational visual inspection
A trained employee who did not perform the cleaning, when staffing permits, should inspect the entire line before ingredients are loaded. The acceptance standard is no visible soil, residue, standing water where it is not allowed, chemical film, loose parts, or damage that affects cleanability. Record the result with the date, shift, equipment ID, and signature.
ATP, swab, and environmental testing
Use ATP testing, surface swabs, or environmental sampling where the site’s verification plan requires it. FDA GMP guidance identifies swabs or ATP tests as a way to verify cleaning efficacy on difficult-to-clean equipment. Establish site-specific sampling locations and pass limits; a handheld result is meaningful only when the instrument, location, timing, and limit are controlled.
Corrective action for a failure
- Hold the equipment and any food exposed since the last acceptable check.
- Identify the failed location and likely cause, such as incomplete disassembly, weak detergent, inadequate contact time, worn gasket, or poor rinse technique.
- Re-clean and sanitize the affected area, then repeat the required verification.
- Repair or replace damaged parts before release if the surface cannot be effectively cleaned.
- Document the failure, correction, verification result, employee, time, and supervisor approval. Escalate recurring failures for SSOP or equipment redesign.
Chemical, worker, and storage controls
- Use only detergents, sanitizers, lubricants, and test materials approved by the current SSOP, OEM instructions, chemical label, and local requirements for the intended surface.
- Follow label dilution, water temperature, contact time, rinsing, ventilation, first-aid, and PPE directions. Do not combine products or pour one chemical into another container unless the label and site procedure explicitly allow it.
- Store chemicals in a secure, ventilated area away from food, ingredients, packaging, clean utensils, and single-service articles. Keep containers labeled and closed.
- Train employees on chemical hazards, lockout/tagout, splash control, emergency response, and the difference between food-contact tools and drain or waste tools.
- Keep hoses, brushes, and spray devices from touching dirty floors or drains, and clean and store them so they cannot contaminate sanitized parts.
Manual cleaning versus an automated cleaning program
An automated cycle can improve repeatability, but it does not automatically prove that every niche is clean. Compare the program against the controls below before replacing manual steps.
| Control point | Manual program | Automated program |
|---|---|---|
| Access | Operators can remove and brush accessible parts, but may miss hidden niches or vary technique. | Spray paths and fixed nozzles are consistent, but areas outside the validated coverage still require manual attention. |
| Chemistry | Employees must measure dilution, temperature, and contact time correctly. | Dosing and timing can be controlled by the system, provided settings are maintained and chemicals match the validation. |
| Repeatability | Depends heavily on training, fatigue, and adherence to the SSOP. | Cycle steps are repeatable, but a blocked nozzle, low tank, sensor fault, or incorrect recipe can invalidate the cycle. |
| Verification evidence | Visual checks plus ATP, swab, or environmental testing show actual surface condition. | Cycle logs are useful process evidence but do not replace surface inspection or required testing. |
| Downtime and labor | More hands-on labor and potentially longer disassembly. | May reduce labor while still requiring setup, part removal, inspection, and maintenance downtime. |
| Compatibility | Can be adapted within the limits of the OEM manual. | Must be validated for the exact makeline, materials, water path, detergent, sanitizer, and temperature limits. |
| Documentation | Signed checklists capture actions and corrective work. | Electronic cycle records should be linked to operator release, verification results, and corrective actions. |
Use a complete sanitation record
A signed record should show more than “cleaned.” Capture:
- Date, shift, start and finish time, equipment ID, and employee.
- Production condition or trigger, such as scheduled sanitation, allergen changeover, spill, or failed check.
- Parts removed, cleaning method, detergent and sanitizer identification, concentration, temperature, and contact time when required.
- Pre-operational inspection result and ATP, swab, or environmental result when applicable.
- Damage found, parts repaired or replaced, corrective cleaning, re-test result, and supervisor release.
Keep records according to the site’s retention policy and applicable regulation. Review trends: repeated failures at one gasket, nozzle, drain, or belt interface usually indicate a design, maintenance, training, or frequency problem rather than an isolated employee mistake.
Quick Recap
Restart checks before loading food
- Confirm all parts are installed in the correct orientation and all guards and fasteners are secure.
- Verify that no tools, rags, test strips, waste, or chemical containers remain in the food zone.
- Check that surfaces are dry or drained as required and that no chemical odor or film remains.
- Release energy controls only under the site’s procedure, then run the equipment without food long enough to confirm belt tracking, pump operation, nozzle direction, sensors, and emergency stops.
- Confirm refrigeration and product-temperature controls are within the site’s operating limits before loading ingredients.
- Sign the release record. If any check fails, keep the line out of production and follow corrective action rather than making an undocumented adjustment.
