Build the scanner as four separate parts: look up a barcode in Open Food Facts, use browser OCR when you need to read a photographed ingredient list, cache the app shell and selected records for offline use, and show an explicit review or unknown state whenever the evidence is incomplete. Neither a community product record nor OCR proves that a food is safe for someone avoiding gluten.

How should the scanner decide what to scan?

Offer two routes: scan a barcode to look for an existing product record, or photograph the package’s ingredient list when a record is missing, incomplete, or not the information the user needs. These routes solve different problems. A barcode identifies a product for lookup; it does not contain the ingredients itself. OCR turns pixels into text; it does not verify that the text was read correctly.

Keep the data flow visible to the user: barcode or photo → record or extracted text → review → cautious result. Do not collapse those stages into a single green “safe” indicator.

How do you look up a barcode in Open Food Facts?

  1. Capture the barcode. Normalize the scanned value before sending it to the product-read operation. If the scan fails or the code is unreadable, let the user try again or switch to a label photo.
  2. Request only the fields the interface uses. Open Food Facts API v3.6 is the version its API introduction recommends for new integrations. Its product-read operation accepts a barcode and supports a fields parameter to limit returned data. Follow the Get Product Data documentation for the request format, and the API introduction for version guidance and a descriptive User-Agent.
  3. Handle missing or partial records as normal outcomes. A lookup can fail because the product is absent, the network is unavailable, or the record lacks useful ingredient information. Show which situation occurred when you can determine it; do not turn an empty response into a positive gluten result.
  4. Show the record’s source and age when available. Community records can be incomplete, inaccurate, or out of date. Keep the product details available for inspection rather than presenting a derived label as more authoritative than its source.

Open Food Facts says its database is populated voluntarily and does not guarantee that its data is accurate, complete, or reliable. Treat a match as a lead to review against the physical package, not as certification.

What should happen when the barcode has no useful record?

Offer a photo-based route to the ingredient panel. The camera should frame the text rather than the whole package: small, angled, blurry, reflective, or low-contrast print can make recognition harder. Let users retake the image before asking them to interpret the result.

OCR should produce editable text, not a verdict. Open Food Facts’ ingredient-analysis tutorial states, “The OCR may contain errors.” It recommends human review and correction, making it easy to reject bad OCR or take a clearer photo, and handling multilingual labels. Follow that guidance in the interface: show the captured text beside a correction control, make discard and retake easy to find, and require a deliberate confirmation before using the text in an ingredient assessment.

Choose an OCR location based on the product requirements

On-device OCR can avoid sending the image to a remote recognition service, but the sources do not establish a general winner for speed, language coverage, or accuracy on food labels. Measure the options on the devices and languages you intend to support, and explain image handling clearly. The Open Food Facts tutorial identifies on-device OCR as an option; it does not validate a particular library or its performance.

How should the result express uncertainty?

Use statuses that describe the evidence rather than implying clinical or regulatory certainty. For example, distinguish a product record that needs package verification, OCR text awaiting user review, an ingredient list that appears to contain a term the user flagged, and a result that cannot be determined. Keep the original ingredient text accessible so the user can see what the status is based on.

  • Missing record: invite a label photo or manual review; never interpret absence of data as absence of gluten.
  • Unclear or incomplete OCR: request a retake or correction, and do not issue a confident result from unreadable text.
  • Ambiguous ingredient or package claim: mark the outcome as needing verification. Encourage checking the current package and contacting the manufacturer when uncertainty remains.
  • Potentially relevant ingredient text: explain which text triggered the flag, while avoiding a claim that the app establishes whether the food is safe for a particular person.

Labeling rules and thresholds depend on jurisdiction, and this guide does not establish a country-specific rule. Do not encode a universal threshold or describe a barcode/OCR check as a medical or regulatory determination.

What can the PWA do offline?

A service worker can cache the interface and other app resources, intercept fetches, and make the app shell available without a connection. It cannot fetch a new remote product record while the device is offline. A previously saved record may be available if the app deliberately stored it and can identify it as cached rather than freshly retrieved. Choose a cache strategy for each kind of content

Remote product lookup Try the network for a current response; if unavailable, show a clearly labeled saved record only when one exists. Network-first favors freshness but needs a fallback for disconnection. A saved record may be stale.
Selected product records Store only records the user has chosen to keep available, and indicate when they were retrieved if that information is available. Offline access applies only to stored records, not every product in the remote database.

MDN describes cache-first as potentially faster but capable of serving stale content, while network-first prioritizes a fresh response and can fall back to cache. Pick the policy by resource: static app files and changing product data do not need identical freshness behavior. Provide a visible offline state so users know whether a displayed record came from a live lookup or local storage.

How do you keep API use responsible?

The Open Food Facts API introduction lists limits of 15 product-read requests per minute per IP and 10 search requests per minute per IP for the specified endpoints. These are service limits, not app-speed measurements, and can change; check the current API documentation before deployment. Avoid unnecessary repeat lookups, request only the fields the interface needs, and follow the API’s guidance for bulk use rather than treating a public endpoint as an unrestricted feed.

What does “fast” need to mean?

No implementation details, device tests, or performance measurements establish that a particular PWA or OCR flow is fast. Treat speed as a target to measure, not a property guaranteed by using a PWA, a barcode lookup, or browser OCR. Measure the stages separately on intended devices: camera-to-scan response, time to receive a product record on a network, OCR completion for representative label photos, and the offline launch path. Report the device, network conditions, sample, and measurement method with any published figures.

Do not compare an OCR engine or promise a recognition rate without testing it on the languages, packaging, and devices the app supports. An option such as Tesseract.js is a JavaScript OCR project, but the cited project material does not establish its accuracy or speed for ingredient labels.

What should the finished workflow make clear?

  • A barcode lookup depends on a community record and a network connection unless the record is already stored locally.
  • A package photo can help when a record is unavailable, but extracted text must be reviewed and corrected by the user.
  • Offline app access is not the same as a fresh product lookup.
  • Unknown, stale, incomplete, and ambiguous evidence should remain visibly uncertain.
  • The app assists with checking information; the package and manufacturer remain important when the record or ingredient list is unclear.
