Is the hamburger tomato real? It is a real experimental project, but it is not a supermarket product. Gabriella Rothberg, a 17-year-old student in the Miami area, is working with University of Miami PhD candidate Maddison Marshall on genetically engineering tomato plants to produce heme, an iron-containing molecule associated with meat flavor. No reported taste test has shown that the tomatoes actually taste like hamburgers, and no commercial seeds or fruit are available.

What Gabriella Rothberg is trying to make

Rothberg’s project, called Impossible Vines, aims to change flavor inside a whole tomato plant rather than add flavor to a processed food after harvest. The proposed result is a tomato containing heme, the iron-containing molecule Rothberg and Marshall associate with the savory character of meat.

“So you’ll bite into a tomato, and it’ll taste like a hamburger,” Rothberg told the Miami New Times. That sentence describes the project’s ambition, not a demonstrated product.

How the proposed flavor engineering works

Using Agrobacterium to transfer genetic material

The reported method uses Agrobacterium, a bacterium commonly used in plant biotechnology to transfer genetic material into plant cells. Rothberg and Marshall are attempting to introduce genetic instructions that would enable tomato plants to produce heme.

  • SUPPORTS A HEALTHY GARDEN ECOSYSTEM: Attracts beneficial pollinators like bees for natural pollination. These beefsteak tomato plants promote biodiversity in your garden, making them a sustainable choice for eco-conscious gardeners.

In principle, producing a meat-associated molecule in the plant could alter the tomato’s flavor chemistry. It would not turn tomato tissue into beef, reproduce the texture of a hamburger, or automatically create the full aroma and taste profile of a cooked patty. Whether the engineered plant makes enough heme, where it accumulates, how it affects other flavor compounds, and whether people perceive the result as hamburger-like all require testing.

Is the tomato already available?

No. Reporting in October 2026 describes the tomatoes as experimental. They have not undergone the reported taste testing needed to establish the intended flavor, have not entered commercial production, and have not been shown to provide the claimed nutritional benefits. Readers cannot currently buy the fruit, seeds, a consumer growing kit, or an approved product from this project.

What the 2026 patent does—and does not—prove

U.S. Patent No. 12,668,806 was reported as issued in June 2026; the Biscayne Bay Beacon specifies June 30. Gabriella Rothberg and her father, biotechnology entrepreneur Jonathan Rothberg, are listed as inventors, with Impossible Vines Inc. listed as the assignee.

A patent records intellectual-property rights around an invention or method. It does not certify that the tomatoes taste like hamburgers, establish that they are safe or nutritious to eat, show that the method works at commercial scale, or mean that regulators have authorized a food for sale. The patent should therefore be read as evidence that a claimed technology was granted protection—not as a product launch or taste-test result.

  • Fast Germination: Tomato seeds for planting germinate in 7–10 days when planted 1/4 inch deep. These non gmo tomato seeds perform best in full sun across USDA zones 2–11.
  • Big Fruit Size: These tomato plant seeds produce large red tomatoes, and are suitable seeds for garden plots, raised beds, and greenhouses.

Who is Gabriella Rothberg?

Rothberg was reported as 17 years old and a senior at Ransom Everglades in 2026. She is named as a co-inventor alongside her father. Marshall, a University of Miami PhD candidate, worked with Rothberg on the project. The project and patent are associated with Impossible Vines Inc.

Why Rothberg says the idea matters beyond novelty

Rothberg has described a broader goal: making nutrients such as absorbable iron more accessible in places where meat is expensive or difficult to obtain. That is a stated long-term rationale, not a demonstrated health intervention. The available reporting does not provide a nutrient analysis of the engineered tomatoes, a human study, or a clinical outcome showing improved iron status.

Any nutrition claim would require measurements of the finished fruit, including how much heme it contains, how stable it is, how the body absorbs it, and whether eating the tomato produces a meaningful benefit. Those questions remain open while the plants are experimental.

How this differs from processed plant-based meat

Question Impossible Vines concept Processed plant-based meat
Where flavor is created Inside a genetically engineered tomato plant During food formulation and processing, with ingredients combined into a meat-style product
Genetic-engineering status Experimental project; no reported commercial tomato product Depends on the specific product and ingredients; the tomato project’s patent does not apply to all alternatives
Taste evidence No reported taste test has established a hamburger flavor Commercial products generally undergo product-development and consumer testing, though results vary by brand and recipe
Availability Not commercially available; seeds and fruit are not offered Established products are sold in some markets, subject to local availability

The key distinction is biological location: the tomato concept seeks to make a whole crop produce a meat-associated molecule, while processed alternatives add or develop flavor during manufacturing. The experimental tomato currently has far less public evidence for taste, nutrition, and availability.

What would need to happen before anyone could buy it

  1. Demonstrate plant performance: confirm that engineered tomato lines reliably produce the intended molecule without unacceptable effects on growth or fruit quality.
  2. Measure composition: quantify heme and other relevant nutrients and flavor compounds in the harvested tomatoes.
  3. Conduct sensory testing: use properly designed taste evaluations to determine whether people perceive a hamburger-like flavor.
  4. Assess food safety: evaluate the engineered plant, its introduced genetic material, and any potential allergens or unintended compounds.
  5. Address regulatory requirements: obtain whatever approvals and labeling determinations apply in the markets where the tomatoes might be sold.
  6. Scale production: establish seed production, farming, quality control, and distribution before a consumer launch.

None of those steps is established as complete by the current reports, so a patent date should not be mistaken for a release date.

Bottom line for readers

The “hamburger tomato” is real as a named biotechnology project led by a teenage inventor, not as a food you can purchase. Its proposed mechanism is genetic engineering with Agrobacterium to make tomato plants produce heme. The June 2026 U.S. patent documents the invention’s intellectual-property position, while the absence of reported taste testing, nutritional analysis, and commercial production means the central promise remains unproven.
