For a glossy coating that sets cleanly, the more important choice is using real cocoa-butter chocolate and tempering it to the manufacturer’s instructions.
Which chocolate should you choose?

These are preference-based recommendations, not the results of a controlled taste test. The cited Guittard temperatures are its working targets; chocolate brands can specify different curves, so follow the instructions for the chocolate you are using. Guittard’s tempering guide explains the method and type-specific targets.
Why tempering matters for a dipped coating
Tempering controls how cocoa butter forms crystals as melted chocolate cools. Properly tempered chocolate can set with an even sheen and a stable texture. The process requires controlled cooling and agitation; simply melting chocolate does not establish that it has been tempered. Guittard documents both seeding and tabling methods in its tempering instructions.
Use the working temperature for the chocolate type
In Guittard’s method, the working range is 88–90°F (31–32°C) for dark and 86–88°F (30–31°C) for milk and white. These figures are manufacturer technique specifications, not universal temperatures for every brand. A thermometer can help you monitor the chocolate, but the package or manufacturer’s curve should take precedence. Guittard’s guidance describes the temperature steps and methods.

Check the temper before dipping
Guittard’s tabling guide suggests dipping a scraper as a test: the chocolate should begin setting within two minutes and have a uniform sheen. Use the maker’s directions for the specific method you chose; the scraper test is part of Guittard’s guidance, not a guarantee for every chocolate or room condition.
Choose chocolate suited to dipping
For a fluid, tempered shell, couverture callets or buttons are a practical starting point. Valrhona describes couverture as having more cocoa butter than standard bars, which can make it suitable for coating. That does not mean every couverture has the same flow or handling characteristics: use the product’s own directions and expect differences among brands and formulations. Valrhona explains the distinction between couverture and standard chocolate.

Prepare the item you are dipping
For strawberries
Start with dry, room-temperature strawberries. Hotel Chocolat warns that moisture from cold fruit can cause chocolate to seize, so wash the fruit ahead of time and let it dry fully before dipping. Hold a berry by its stem where possible. Hotel Chocolat’s strawberry guide covers preparation and dipping.
For small confections
A clean dipping fork can help lower and lift truffles or other small pieces while excess chocolate drains away. For berries, holding the stem is a straightforward alternative. Keep water away from melted chocolate; even a small amount can interfere with its texture. Callebaut’s tempering overview also describes careful handling during the process.

What the comparison does not establish
The available manufacturer and preparation guidance supports differences in flavor, appearance, and working temperature. It does not establish that one type consistently sets faster, makes a thinner shell, or lasts longer across brands and recipes. Those results can depend on the chocolate, tempering, and what is being dipped.
