A baking soda rocket launches because baking soda and vinegar produce carbon dioxide inside a closed canister. The gas builds pressure until it forces the lid off; as gas rushes out, it pushes the canister in the opposite direction. The fizz creates the gas, but the pressure release creates the launch.
How baking soda and vinegar make a rocket launch
1. The reaction produces carbon dioxide
Baking soda is sodium bicarbonate, and vinegar contains acetic acid. When they mix, carbonic acid forms and then breaks down into water and carbon dioxide. The bubbles you see are evidence that gas is being produced. The Lunar and Planetary Institute activity describes this reaction in two stages.
2. The closed canister lets pressure build
In an open container, carbon dioxide escapes as it forms, so pressure does not build in the same way. In a closed film canister, gas accumulates. Pressure rises until it pushes the lid off, which becomes the gas’s release point.
3. Escaping gas pushes the canister
When the lid releases, pressurized gas rushes out through the opening. The escaping gas acts as exhaust, pushing the canister in the opposite direction—upward when the opening faces down. This pressure-driven thrust is what launches the canister; the mixture does not simply lift it by fizzing.

The Science Buddies activity also explains the launch in terms of gas pressure and exhaust. It is a small classroom demonstration, not the same fuel system or scale as a spacecraft rocket.
What affects the flight?
The canister and any paper rocket body attached to it have to move when the gas escapes. Their mass and shape affect lift-off and flight. The LPI activity suggests experimenting with added mass and rocket shape, including the body, fins and nose cone. Science Buddies suggests varying the amounts of vinegar and baking soda.

For a fair comparison, change only one factor per run. Keep the launch location and measurement method consistent, make a prediction, and record the relative flight height. A compatible film-canister cap and the procedure matter, so results from one setup should not be treated as a guaranteed height for another.
Published activity results are examples, not benchmarks
Science Buddies reports that its canister launched roughly 6 feet in a setup nearly full of vinegar, while its lowest-vinegar setup flew nearly 15 feet. The page does not state a publication year. These are the publisher’s activity results, not a general performance guarantee or an independently replicated comparison.

Materials and safe setup
The LPI classroom activity lists a plastic 35-mm film canister with a lid that fits inside the rim, baking soda, vinegar, measuring spoons, cardstock, tape and eye protection. Its example uses one teaspoon of vinegar and one-half teaspoon of baking soda. That is the activity’s specified example, not an established optimum for other containers or conditions. The activity also describes making a paper rocket body with evenly spaced fins and a nose cone.
- Wear eye protection and follow the full instructions for the activity.
- Keep the canister away from the launcher’s face, and never point it at anyone.
- The LPI activity says other children should stand at least 10 feet away.
- NASA’s SPEED IT UP educator guide says to step back after release. If the canister has not launched in about 30 seconds, ask the teacher to check it; when checking, keep the lid directed into the pan.
- Supervise children and follow the specific activity’s adult-supervised instructions.
How this differs from a volcano demonstration
The rocket and a baking-soda volcano both use a baking-soda-and-vinegar reaction to make carbon dioxide, but the rocket depends on gas accumulating in a closed canister before it escapes. The National Park Service volcano resource notes an important limit to the analogy: water is the principal gas driving most explosive volcanic eruptions, not carbon dioxide from this classroom mixture.
